3/4 cup long-grain white rice
1 package (10 ounces) frozen peas, thawed
1 pork tenderloin (about 1 pound), cut into 1 1/2-inch chunks
1 navel orange, cut into chunks
Coarse salt and ground pepper
4 teaspoons vegetable oil
1/4 cup honey
1/4 cup spicy brown mustard

Steps:

  • Preheat oven to 200 degrees; place a baking sheet in oven. Prepare rice according to package instructions. Stir in peas, and heat briefly to warm through.
  • Alternately thread pork and orange chunks onto eight 6-inch skewers; season with salt and pepper. Heat grill pan to medium; brush with 2 teaspoons oil. Cook half the skewers until pork is opaque throughout, 4 to 6 minutes per side; transfer to oven to keep warm. Brush grill pan with 2 teaspoons oil; cook remaining skewers.
  • In a small bowl, whisk together honey and mustard; season with salt and pepper. Reserve half of sauce for dipping.
  • Working in 2 batches, return skewers to grill pan, and heat over high, brushing with sauce, until glazed, about 2 minutes. Serve with rice and reserved sauce.

GREEK-STYLE PORK KABOBS

3/4 cup olive oil (or use vegetable oil)
4 tablespoons fresh lemon juice
1 1/2 tablespoons Worcestershire sauce

2 teaspoons dried red pepper flakes (or to taste)
1 teaspoon black pepper

Steps:

  • In a bowl mix the first 9 ingredients until well blended.
  • Add in the pork cubes and place into a large resealable bag; seal and refrigerate for 8-24 hours turning the bag occasionally to coat pork cubes evenly with the marinade.
  • Remove the pork cubes from the bag and thread on skewers.
  • Season the pork cubes with seasoned salt and black pepper.
  • Grill over medium-high heat turning occasionally for about 5 minutes or until the pork is cooked to desired doneness.

2 1/2 lb pork tenderloin (trimmed and cut into 1 1/2" pieces)
1 Tbsp Italian seasoning
1 1/2 tsp sea salt
1/2 tsp garlic powder
1/2 tsp black pepper
2 Tbsp olive oil
1 large red onion (cut into 1" pieces)
1 Tbsp fresh parsley to garnish (optional)

Steps:

  • In a large mixing bowl (or ziploc bag), combine chopped pork, 1 Tbsp Italian seasoning, 1 1/2 tsp salt, 1/2 tsp garlic powder, 1/2 tsp black pepper and stir until well combined. Separate onion pieces and add them to the bowl. Add 2 Tbsp olive oil and toss to combine. Cover and marinate in the refrigerator for at least 4 hours and preferably overnight.
  • Thread the kabobs onto metal skewers*, alternating between meat and onion. For even browning, the meat and onions should be just touching on the skewers and not crowded together. Let your skewers stay at room temperature for 30 minutes before placing on the grill.
  • Preheat your grill to Medium/high heat (400˚F). Add skewers in a single layer and grill for 8-10 minutes total. Meat skewers turn like a triangle so we cook about 3 minutes per side on all 3 sides. Grill until cooked through and meat reaches at least 145˚F internal temperature. Rest skewers 3 minutes before serving.

800g pork tenderloin or pork neck (boneless), cut in 2cm chunks (28 ounces)
100ml good-quality olive oil (1/3 of a cup and 1 tbsp)
juice of 1/2 lemon
1 tbsp vinegar
1 tbsp dried oregano
1 tsp honey
salt and freshly ground pepper
8 wooden skewers
1 cucumber
2 cloves of garlic
1/4 of a cup olive oil
500g of yogurt (18 ounces)
1-2 tbsps of red wine vinegar
1-2 tbsps chopped dill (optional)
salt and freshly ground pepper to taste
8 pita breads
2 red onions, sliced
1 tomato sliced

Steps:

  • To prepare the pork souvlaki (skewers), cut the pork into 2 cm pieces and place them in a large bowl, along with all the marinade ingredients. Use your hands to mix really well, cover with plastic wrap and put in the fridge for 20 minutes.
  • In the meantime prepare the tzatziki sauce for the pork souvlaki. Pour into a food processor the olive oil and 2 cloves of garlic; blend until the garlic is diluted (don't leave any large pieces of garlic). Into a large bowl, grate the cucumber, season with salt and pepper and leave it aside for 10 minutes. Wrap the grated cucumber into a towel and squeeze, in order to get rid of most of the water. Into a bowl, add the cucumber, the blended garlic and oil, the yogurt, 1-2 tbsps of chopped dill, 1-2 of red wine vinegar, salt and pepper and mix. Tore in the fridge and serve cold.
  • Cut the wooden skewers to fit your griddle pan and soak them in water for 10 minutes. (This will prevent them from burning.) Thread the pieces of pork, comfortably, on the skewers.
  • Preheat a grill or griddle pan on a high heat. Cook the pork skewers for about 10 minutes, turning occasionally, until nicely coloured and cooked through.
  • While your pork is cooking, prepare the pita breads. Preheat the oven to 250C. Use a cooking brush to oil the pita breads on both sides and season with salt and oregano. Place a large oven tray (upside down) at the bottom of the oven and place the pita breads on top of the tray. Bake for 1-2 minutes.
  • To serve the pork souvlaki (skewers), slice 2 red onions and place on a platter; top with the pork skewers, drizzle with some extra virgin olive oil and a good squeeze of lemon juice. Serve while still warm with some pita breads and tzatziki sauce or wrap them up like a sandwich, adding some tzatziki, sliced onions and tomatoes. Enjoy!

1 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon fresh ground pepper

  • Sprinkle the salt, thyme and pepper on the pork chops.
  • Let sit on counter top for 30 minutes.
  • Place oil in large cast iron skillet (or heavy stainless steel skillet) and heat until medium hot.
  • Place chops in the pan, placing them so they don't touch each other.
  • Cook each side slowly (lower heat if necessary) until nice and golden brown on each side.
  • This will take about 4 minutes per side.
  • Cover the pan with a tight fitting lid.
  • Turn off the heat, and let the chops sit for about 8- 10 minutes, depending on thickness of chops.
  • After removing chops, you can de-glaze the pan with a little water, wine or broth and a touch of butter and serve as a sauce.

16 (6-inch) wooden skewers, soaked in cold water for 30 minutes

1/2 cup fresh lime juice

1 fresh Thai red chile, finely diced
2 teaspoons sugar
1 shallot, finely diced

Steps:

  • Whisk together the soy sauce, oyster sauce, cilantro, garlic, sugar, and black pepper in a bowl.
  • Skewer 2 pieces of pork onto 2 skewers so that the meat lies flat. Place the pork skewers in a large baking dish. Pour the marinade over and turn to coat the pork. Cover and refrigerate for at least 1 hour and up to 4 hours.

  • Make barbecue sauce:
  • Stir together all sauce ingredients in a 1- to 1 1/2-quart heavy saucepan and briskly simmer, uncovered, stirring occasionally, until thickened and reduced to about 1/2 cup, about 3 minutes. Transfer sauce to a medium bowl and cool to room temperature.
  • Prepare and grill pork kebabs:
  • Put tenderloin on a cutting board. Starting about 5 inches from narrow end of tenderloin and holding a large sharp knife at a 30-degree angle to cutting board, cut a thin slice (1/8 to 1/4 inch thick) from tenderloin, slicing diagonally toward narrow end and cutting through to cutting board. Continue to cut thin slices from tenderloin following same diagonal, starting each consecutive slice closer to wide end. (You will have about 12 slices. Cut any slices more than 2 inches wide in half lengthwise.)
  • Thread 2 skewers, 1 at a time and 1/2 to 1 inch apart, lengthwise through each slice of pork and transfer to a tray lined with plastic wrap.
  • If using a charcoal grill, open vents on bottom of grill, then light charcoal. Charcoal fire is hot when you can hold your hand 5 inches above rack for 1 to 2 seconds. If using a gas grill, preheat burners on high, covered, 10 minutes.
  • Sprinkle pork slices with salt and brush both sides with barbecue sauce, then grill on oiled grill rack, uncovered, turning over once, until just cooked through, 2 to 3 minutes total. Discard any leftover sauce.

4 tbsp light muscovado sugar
60ml cider vinegar
1 tsp fish sauce
½ small pineapple , peeled, cored and cut into chunks (or use ready prepped fresh pineapple, drained well)
1 green pepper , deseeded and cut into squares (optional)
4 spring onions , trimmed and cut into 4 equal lengths
small bunch coriander , chopped (optional)
cooked rice or pitta, to serve

Steps:

  • Cut the pork into cubes. Heat the sugar and vinegar in a pan over a low heat until the sugar melts. Add the fish sauce and cool. Tip in the pork and mix well so that all the cubes are covered in sauce.
  • Heat the barbecue. If you are using coals, wait until they turn white. If you are indoors, heat a griddle pan. Thread the pork and pineapple onto skewers, alternating pieces with the pepper and spring onion.
  • Barbecue or griddle the skewers for 3-4 mins each side (you may need to cook them for longer if griddling). Sprinkle with coriander, if you like, then serve with rice or slide into pitta breads.

1/2 cup plus 2 tablespoons Asian fish sauce

6 tablespoons chopped cilantro stems
7 (4-to 5-inch) fresh red chiles, chopped, including seeds
12 garlic cloves, chopped (about 6 tablespoons)
Equipment: about 60 (8-inch) wooden skewers, soaked in water 1 hour

Steps:

  • Brine pork belly:
  • Bring brine ingredients to a boil in a 6-quart pot, then simmer, uncovered, 20 minutes. 3Cool brine to room temperature, then chill until cold, about 3 hours, and up to 3 days.
  • Cover pork belly with brine in a large heavy roasting pan, then chill 24 hours.
  • Remove pork belly from brine, discarding brine, and rinse under cold water. Pat pork belly dry. Wash and dry roasting pan.
  • Braise pork belly:
  • Preheat oven to 225°F with rack in middle.
  • Straddle roasting pan across 2 burners and heat oil over medium-high heat until it shimmers, then cook onion, garlic, and shallots, stirring occasionally, until golden, about 5 minutes. Add stock and bring to a boil, scraping up brown bits. Add pork belly and remove from heat.
  • Cover roasting pan tightly with foil and braise in oven until pork belly is very tender, 3 1/2 to 4 1/2 hours.
  • Remove pork belly (reserve braising liquid for another use) and cool to room temperature.
  • Wrap tightly in several layers of plastic wrap and chill, pressed between 2 baking sheets with a weight (such as four 28-ounces cans) on top, 12 to 24 hours.
  • Make chile sauce:
  • Purée all sauce ingredients with 1 1/2 teaspoons salt in a blender.
  • Skewer pork belly:
  • Bring pork belly to room temperature, about 30 minutes. Cut lengthwise into 1-inch strips, then cut each strip crosswise into 1/3-inch-wide pieces. Thread each piece onto a skewer and brush with some of chile sauce.
  • Prepare grill:
  • If using a charcoal grill, open vents on bottom and light a large chimney starter full of charcoal (preferably hardwood), then dump coals out across bottom rack, leaving a space free of coals on one side of grill equal to size of pork belly, where it can be moved in case of flare-ups. When charcoal turns grayish white, the grill will be at its hottest and will then begin to cool off. Grill is ready when you can hold your hand 5 inches above grill rack directly over coals for just 3 to 4 seconds (medium-hot). If using a gas grill, preheat all burners on high 10 minutes, then adjust heat to medium-high.
  • Grill pork belly:
  • Oil grill rack, then grill pork belly, turning occasionally and basting with chile sauce once more, until well browned on all sides, 3 to 4 minutes total. Brush with more chile sauce.
