Categories     dinner, lunch

Time 20m

Number Of Ingredients 17

½ cup mayonnaise
½ teaspoon white vinegar
¼ teaspoon lemon juice
½ teaspoon Dijon mustard
¼ teaspoon Worcestershire sauce
2 tablespoons dill pickle relish
2 teaspoons fresh dill, chopped
⅜ teaspoons black pepper, divided
⅛ teaspoon kosher salt
1 pound cod (cut into four 4-ounce pieces)
4 ounces panko breadcrumbs (or other fine breadcrumbs)
2 teaspoons celery salt
½ teaspoon paprika
¼ teaspoon cayenne
½ cup flour
1 egg
½ cup vegetable oil

Steps:

  • Make the tartar sauce by combining mayonnaise, vinegar, lemon juice, Dijon mustard, Worcestershire sauce, relish, chopped fresh dill, ⅛ teaspoon black pepper, and salt in a bowl. Mix thoroughly and refrigerate until ready to serve.
  • To make the breading, combine panko breadcrumbs, celery salt, paprika, cayenne, and ¼ teaspoon black pepper.
  • Crack an egg into a bowl and beat.
  • Set up a breading station with four bowls in this order: bowl holding cod, bowl holding flour, bowl holding beaten egg, and bowl of breading.
  • Working with one piece of cod at a time, dredge the cod in flour, then coat the cod in egg, and finally thoroughly coat the cod in the seasoned breadcrumbs. Repeat until all of the cod is breaded.
  • Heat a 10 or 12-inch nonstick pan on medium heat and add the vegetable oil. Once the oil begins to shimmer, add the cod spaced evenly in the pan. Pan fry for 5 minutes. Rotate each piece of cod 180 degrees ½ way through to evenly brown the top.
  • After 5 minutes flip the cod, and set heat to medium-low. Pan fry for another 5 minutes, once again rotating the cod ½ way through to evenly brown the bottom.
  • Serve immediately with a side of tartar sauce.

CRISPY PAN FRIED FISH

Crispy Pan Fried Fish image

Recipe video above. 3 key tips to ensure your pan fried fish comes out beautifully golden and crispy every time: pat the fish dry, press flour on well but shake excess off well, and heat the pan first before adding the oil or use a heavy duty non stick pan. With a good fish, well seasoned and crispy skin, I don't need a sauce....but I've added a couple in the notes just in case! :)

Provided by Nagi

Categories     Main

Time 8m

Number Of Ingredients 7

2 thin fish fillets, around 150g/5 oz each, 1 cm / 2/5" thick, skin on or off ((Note 1))
Salt and pepper
1/4 cup / 35g flour ((plain/all purpose, wholemeal))
1 tsp paprika (, optional (Note 2))
2 - 3 tbsp oil, enough to mostly thinly cover base ((I use vegetable or canola))
Lemon wedges
Finely chopped parsley or dill (, for garnish, optional)

Steps:

  • Use scrunched up paper towels to pat the fish dry on both sides. This is especially important if you are using thawed frozen fish.
  • Season the fish well on both sides with salt and pepper (key!).
  • Mix the flour and paprika on a plate.
  • Coat fish on both sides with flour, pressing down firmly so it adheres, but shake well to remove excess. (Note 2)
  • Heat a heavy based skillet (normal or non stick) over medium high heat until you see wisps of smoke. Add oil and swirl to coat the pan - it will heat within seconds.
  • Add fish - it should sizzle straight away. Shake the pan lightly to move the fish. Cook for 2 minutes until golden and crisp, pressing down gently, then flip. Cook the other side for 2 minutes until crisp then remove.
  • If it's browning too quickly, just remove pan from the stove briefly. If it's stuck, don't move - it will release naturally once golden.
  • Serve fish immediately with lemon wedges and garnished with dill or parsley, if using. It starts to lose crispiness after 5 minutes.

PAN-FRIED FISH ALMONDINE

Pan-Fried Fish Almondine image

This is a simple and versatile recipe. It lends well to any type of white fish, such as: perch, tilapia, whitefish, halibut, etc. It might even work well with salmon, but I haven't tried that yet. I love the crusty, delicious almond coating. If you can't find Panko breadcrumbs, you could try regular bread crumbs. I like to serve this alongside wild rice and a nice salad for a simple and pretty healthy meal.

Categories     European

Time 20m

Yield 4 serving(s)

Number Of Ingredients 10

1 cup panko breadcrumbs
1/2 lemon, zest of, finely grated
1/2 cup almonds, sliced
4 (8 ounce) fish fillets
salt and pepper, to taste
2 large eggs
3/4 cup water
1/2 cup flour
1/2 cup butter
2 tablespoons parsley, chopped (optional)

Steps:

  • First make the almondine breading by placing Panko breadcrumbs, lemon zest, and sliced almonds into a food processor.
  • Pulse until it reaches a fine consistency. *The breading adheres to the fish better this way.*.
  • If applicable, debone the fish and remove the skin.
  • Salt and pepper the fish, to taste.
  • In a small bowl, mix eggs and water together to make an egg wash.
  • Place flour in a shallow pan.
  • Place the almondine breading in another shallow pan.
  • Dredge each fish fillet through the flour, dusting off any excess, dip in egg wash; place in breading, coating both sides of fish. If you aren't going to fry these right away, store them in the refrigerator at this point.
  • Preheat saute pan using medium heat.
  • Add the butter and melt, being careful not to burn.
  • Place fish in hot butter and cook on each side until golden brown, about 3 minutes on each side, which is an average time. Depending on how thick your fish is, you may need to either shorten or lengthen the time.
  • Optional: Sprinkle chopped parsley on top of the fish before serving.

PAN-FRIED COD WITH CHAMP

Pan-fried cod with champ image

Champ, a traditional Irish accompaniment of potato and spring onion, adds real warmth to this simple cod dish

Provided by John Torode

Categories     Dinner, Main course

Time 45m

Number Of Ingredients 7

500g large potato , peeled and quartered
4 spring onions
2x pieces of cod , skin on
2 tbsp olive oil
142ml carton double cream
200ml milk
knob butter

Steps:

  • Cook the potatoes in a pan of boiling water until tender, about 10-15 mins. Meanwhile, chop the spring onions, separating the green part from the white.
  • Lay the cod on a piece of kitchen paper to remove any excess moisture. Heat a frying pan to a high heat, add the oil, then the fish, skin side down. Don't move the pan or even shake it as this will tear the skin. Cook for 4-5 mins until the edges start to colour. Turn the fish over and cook for a further 3-4 mins.
  • Bring the cream and milk to the boil in a pan with the butter, then add the chopped white part of the onions, simmer for a few minutes, then season, if you want to. Mash the potatoes and mix in the hot cream and milk and half the chopped green part of the spring onions. Sprinkle the rest over the mash. Serve with the fish, pouring over any pan juices.

2 tablespoon Canola oil
3 tablespoons butter
1 tablespoons capers, drained

PAN-FRIED FISHCAKES

Pan-Fried Fishcakes image

Fishcakes, like cakes of beef, would be nice served with a salad of beets and some horseradish or herb crème fraîche. Or with slaw and a spoonful of aïoli or other mayonnaise. Green beans and tomato vinaigrette?

Provided by Cal Peternell

Categories     HarperCollins     Dinner     Fish     Jalapeño     Lime     Cod     Celery     Breadcrumbs

Yield Makes 12 fishcakes

Number Of Ingredients 14

Cooking oil, olive or vegetable
1 yellow onion, diced
1 carrot, finely diced
1 celery stalk, finely diced
Salt
1 lime
1 pound cod fillet, or other mild white fish
Freshly ground black pepper
1/3 cup heavy cream
1/4 cup chopped cilantro leaves and stems
1 jalapeño, seeded and finely diced (or less or more)
3 1/2 cups fresh bread crumbs
4 eggs
1 cup all-purpose flour

Steps:

  • Heat a skillet to high and add 1/4 cup cooking oil, then the onion, carrot, celery, and 1/2 teaspoon salt. Stir until it gets going, then turn to medium and cook, stirring occasionally, until the vegetables are soft and browned very lightly, if at all, about 20 minutes. Use a lid or a splash of water if it's coloring too much before getting soft. Turn the mirepoix out onto a plate and set it aside to cool completely. Grate 1/2 teaspoon zest from the lime and set it aside.
  • Chop the cod into 1/4-inch dice, place it in a medium bowl, and season it with 3/4 teaspoon salt and some grindings of black pepper. In the bowl of a food processor, combine a quarter of the fish with the cream and pulse until smooth, scraping down the sides as needed. Add the fish purée back to the bowl of chopped fish along with the cooled vegetable mixture, cilantro, jalapeño, lime zest, 1 1/2 cups bread crumbs, and 2 of the eggs. Stir with your hands and squeeze through your fingers to mix everything really well, then heat a skillet to medium, add a teaspoon of oil and fry a little piece for tasting. Adjust as needed and when you have the seasoning right, begin breading: Beat the remaining 2 eggs in a wide, shallow bowl, put the flour in another bowl, and the remaining 2 cups bread crumbs in a third. Have a baking sheet ready to receive the breaded cakes. Pat the fish mixture down in the bowl, smooth the top, divide it in half, then separate each half into 3 parts to make sixths. Scoop up half of one of the sixths, form it into a ball with your hands, flatten it into a patty, and place it in the flour. Turn the patty to coat, shake off the excess, and then place it in the eggs. Turn it to coat completely, let excess egg drip off, and then place it in the crumbs. Coat it completely with crumbs, set it on the baking sheet, and repeat with the remaining mixture until you have 12 fishcakes. Refrigerate them for 20 minutes to 6 hours before cooking.
  • When you're ready, heat a skillet to medium-high and heat the oven to warm for holding one batch of fishcakes as you fry the rest. Add 1/4 inch of oil to the skillet and then as many fishcakes as will fit in a single layer. Fry, adjusting the heat as needed, until one side of the cakes is golden brown, about 4 minutes. Turn and brown the other side. Peek into one of the cakes to be sure it's cooked through and then keep the batch warm in the oven while you fry the rest. Right before serving, squeeze lime juice over the fishcakes.

PAN-FRIED COD

Pan-Fried Cod image

Cod is a mild fish that pairs well with a variety of other ingredients. When battered and pan-fried, cod becomes crispy on the outside and moist and flaky on the inside.

Time 20m

Yield 4

Number Of Ingredients 8

2 eggs
1/4 cup milk
1 cup flour
1 teaspoon paprika
1/4 teaspoon black pepper
1 teaspoon chopped fresh parsley, optional
3 tablespoons vegetable oil
4 cod fillets (about 6-ounces each)

Steps:

  • Whisk together the eggs and milk in a shallow dish. In another shallow dish, combine the flour, paprika, black pepper, and parsley (if using). Heat the oil in a large skillet over medium-high heat. Dip the cod into the milk mixture, letting any excess drip off. Then lightly dredge it in the seasoned flour mixture, shaking any excess flour off. Add the cod to the hot skillet (in batches as needed so as not to crowd the fish) and cook about 2 minutes per side or until the fish flakes easily with a fork. Remove from the pan and let drain on paper toweling. Season the fish lightly with salt then serve while hot.

PAN-FRIED FISH FILLETS WITH A LIGHT BATTER

Pan-fried fish fillets with a light batter image

Succulent pan-fried fish fillets take a lot of beating when you are looking for a quick and easy family supper. These pan-fried fish fillets are coated in my special light batter, which is so much healthier than the usual beer batter normally used to coat fried fish. Once you've tried my easy way of frying fish, I'm sure you're going to love it. PS - it's gluten-free too!

Provided by Veronica

Categories     Main Course

Time 22m

Number Of Ingredients 6

4 fish fillets (approximately 4oz or 110 grams each)
1 large egg
6 tablespoons / 60 grams cornflour (you may need extra depending on the size of the egg)
1 teaspoon fish spice (add extra to your own taste)
½ teaspoon salt (optional)
sunflower oil (for frying)

Steps:

  • Place the fish between 2 layers of kitchen towel and press lightly to remove any moisture.
  • Place the remaining ingredients in a mixing bowl and whisk with a balloon whisk to remove any lumps. The consistency should be that of thick cream. Add extra cornflour a teaspoon at a time until the desired consistency is reached.
  • Heat the oil in a heavy-based frying pan until it starts to shimmer. You will nee sufficient oil to coat the bottom of the pan to a depth of about ⅛". Test that it is hot enough by dropping a few drops of batter into the oil. They should start to turn brown within 40 seconds.
  • Dip the fish fillets in the batter and let any excess batter run off back into the bowl.
  • Carefully lay the fish into the frying pan. If the oil is hot enough, you should hear a gentle sizzle.
  • Fry for 3 to 4 minutes per side. Thicker pieces of fish will take longer than thinner pieces.
  • Once the first side has browned, turn the fish carefully with a spatula and fry the other side for the same length of time.
  • Remove the fish from the frying pan and place it on paper towels to absorb any excess oil.
  • Garnish with chopped parsley and serve immediately.

Add 2 fish fillets and cook over moderate heat, turning once, until golden and crispy outside and white throughout, about 6 minutes. Transfer the fish to plates. LEARN HOW TO PAN-FRY FISH FILLETS - THE SPRUCE EATS

From thespruceeats.com
  • How to Pan-Fry Fish Fillets. Pan-frying fish is one of the most delicious ways to cook any non-fatty fish. The coating protects the flesh from direct heat and helps keep the fish moist, while also providing a browned and crispy or crunchy crust.
  • Start With Fresh or Freshly Frozen Fish Fillets. Whether you catch and fillet your own fish or buy them from a fishmonger or at a fish counter, always cook with only the highest quality, impeccably handled fish.
  • Set Up Breading/Coating Station. The most complete and thorough way to coat fish (or anything for pan-frying) includes three steps: flour, egg, and a coating of bread crumbs, cracker crumbs, cornmeal, or panko
  • Flour Fish Fillets. Note: You can greatly reduce the need to rinse off your hands in the middle of this process if you use one hand for "wet" aspects of the breading process and the other for "dry" aspects.
  • Dip Fish Fillet In Egg. Dip the fish fillet in the egg mixture, turning it as necessary to coat it completely. Lift the fish fillet out of the egg and let any excess egg drip off of it.
  • Lay Fish In Crumbs. Lay the fish in the plate of crumbs or whatever final coating you're using. Use a dry hand to cover the fish with crumbs or pat it down and then turn it over to coat the other side.
  • Cook and Serve Fillets. Heat a large heavy pan over high heat. Once the pan is hot, reduce the heat to a medium hot temperature and add enough vegetable oil to coat the bottom of the pan thoroughly.
  • Browned and Crispy Fish. Cook the fillets until browned on one side, about 3 minutes. Flip them over and cook them until they've browned on the second side and the fish is opaque and flaky in the center, about 3 more minutes.

HOW TO PAN-FRY FISH FILLETS WITH PANKO BREAD CRUMBS
Transfer the fillets to the sheet pan in the warming oven. Allow time for the skillet to return to 380 to 400 degrees Fahrenheit and repeat the frying process. Add a little more oil, if necessary. Serve while fresh and hot with your choice of side dishes. Fried fish is best straight out of the pan, but keeping the fillets warm in the oven helps.
