This recipe is from week 14 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Aruba is my 14th stop. Pan Bati is a bread-like side dish that is cooked like pancakes, but tastes much less sweet.

Number Of Ingredients 8

2 cups flour
1 cup cornmeal, ground fine
2 tablespoons baking powder
1 pinch salt
sugar, to taste
1 egg
1 3/4 cups milk
vanilla extract, to taste

Steps:

  • Combine all the ingredients together in a large bowl, then gradually add water until the batter is slightly thicker than pancake batter.
  • Turn on your pancake griddle, adding a little spray butter to prevent sticking.
  • Pour the batter on the griddle. When the Pan Bati is a golden color on one side, flip.
  • Remove from the griddle when the Pan Bati is firm and golden on both sides and keep warm until ready to serve.

  • Pan Bati. Pan bati (which translates to "smashed bread") is traditional Arubian food that resembles pancakes and served as a side dish.
