FANTASY FUDGE (PEANUT BUTTER FUDGE)
This recipe is from the mother of a student, and it is the BEST peanut butter fudge I have ever had. I usually use real butter and not margarine when I cook, so I will substitute the margarine in this recipe. From what I have tasted, however, it is still delicious when made with margarine.

BEST NO COOK PEANUT BUTTER FUDGE
Hi, I think this is the easiest and best peanut butter fudge ever! It is smooth and it is kinda on the softer side, but it is wonderful. I prefer to spread it out onto a greased cookie sheet for easier cutting.

SUPER EASY PEANUT BUTTER FUDGE
This recipe is very simple, but if you do not know how to make candy then please follow instructions precisely. I have altered the instructions after a few reviews that it was crumbly. This is not the recipes fault, it is inexperience. Proper candy making is about temperatures. 4 minutes of boiling (from the time the first small bubbles form) bring this candy up to proper fudge/softball temperature as long as you are cooking over medium heat. When in doubt, use a thermometer.

Steps:
- Prepare a 9x11 glass dish by buttering the bottom.
- In heavy bottom sauce pan combine sugar and milk.
- Measure and set aside remaining ingredients.
- Cook over MEDIUM HEAT (temperature too high will cause it to reach temperature sooner and lead to overcooking) stirring occasionally till it comes to a boil then stir constantly.
- Let boil for 4 minutes EXACTLY, over cooking leads to crumbly fudge as it has moved past softball stage and into softcrack (measure from the first sight of littlest bubbles or use a thermometer - softball stage) I use a stop watch. Remove from heat.
- Stir in remaining ingredients till all melted and smooth.
- Pour into prepared dish and refrigerate until firm.

- Cut out two pieces of parchment paper. One should be big enough to line an 8” x 8” baking dish with enough overhang to lift the fudge out of the dish. The other should be just the right size to sit on top of the fudge.
- Add a tablespoon of water to the bottom of the 8” x 8” baking dish and line the pan with the larger piece of parchment paper.
- In a medium-sized microwave-safe bowl, add the unsalted butter and the creamy peanut butter. Heat in the microwave for 60 seconds and then stir. Add the vanilla extract and stir again.
- Slowly add the powdered sugar, one cup at a time, whilst stirring. Continue to stir until completely combined with no lumps or white streaks.

- Prepare an 8X8 (or 9X9) square pan with buttered foil. To do this, cut a piece of foil that is slightly larger than the pan and then spread softened butter on the foil with a spatula or by placing your hand in a plastic bag like a glove and using your fingers to spread the butter on the foil. Press the foil into the pan, butter side up. The foil should come at least most of the way up the sides.
- In a medium saucepan, bring the sugar and milk to a boil over medium heat, stirring occasionally. Boil for 2.5 minutes.
- After the 2.5 minutes, remove the mixture from heat and add the peanut butter and vanilla extract, stirring until smooth. Pour into prepared pan and let set for about 1-2 hours before slicing and serving. To slice, just remove the entire foil from the pan and fold the edges down flat. So much easier to slice and serve this way than trying to do it while it's still in the pan!
