This is so simple and so good. Update: I have changed the sugar ingredient amount from 5 1/2 cups to 2 1/2 cups-5 cups because it is so sweet, you don't need all the amount. Enjoy!

Ingredients

3 lbs fresh pears, peeled, cored, and finely chopped
2 1/2-5 cups sugar
1 (8 ounce) can crushed pineapple in juice
1 tablespoon lemon juice

Steps:

In a 6 quart stainless steel kettle combine all ingredients.
Bring to boiling, stirring occasionally.
Simmer 40 minutes.
Spoon into sterile jars, leaving a 1/2 inch head space.
Wipe jar rims, adjust lids.
Process in boiling water for 10 minutes.
Makes 7 half pints.

8 medium pears, peeled and quartered
4 cups sugar
1 can (20 ounces) crushed pineapple, drained

Steps:

Place pears in a food processor; process until finely chopped. In a Dutch oven, combine pears and sugar; bring to a boil. Reduce heat; simmer, uncovered, 45 minutes, stirring occasionally. Stir in pineapple; cook and stir 5 minutes longer., Remove from heat. Ladle hot liquid into 6 hot half-pint jars; wipe rims. Seal and allow to cool. Refrigerate up to 2 weeks.

1 (20-ounce) can crushed pineapple with syrup
16 cups (about 6 pounds) peeled, cored, and chopped pears
10 cups sugar
1 tablespoon lemon juice

Steps:

Combine all ingredients in a large saucepan. Cook until pears are tender and mixture thickens, approximately 30 minutes. Transfer to sterilized jars and seal while still hot*. (See Disclaimer)

I love pears, so I'm always looking for new recipes using them. I found this one in an old cookbook that my Mom has. I haven't tried this yet, but it sounds interesting...bet this might be really good with biscuits or maybe pancakes. I'm not really sure why it's called Pear "Honey", cause there's not a drop of honey in it! Since I haven't made this one, I'm guessing on the prep and cook time.

3 lbs ripe pears, peeled and cored
1 cup diced pineapple or 1 cup crushed pineapple
1 grated lemon, juice and rind of
5 cups sugar

Steps:

Run the pears through a food chopper using fine blades.
Combine all ingredients.
Cook on low heat, stirring frequently, until the mixture is thick and clear.
Pack in hot jars and seal.
Process in a water bath for 10 minutes.

CLOVER HONEY

My neighbor, Dot Warman, ( she's 101 now) used to make this and give it out for gifts. This is a fun summer recipe to make with kids. You won't believe it's not the real thing! =) PS Just make sure the clover and roses have no spray or other chemicals on them.

Ingredients

10 cups white sugar
3 cups water
36 white clover blossoms
18 red clover blossoms
3 pink roses (the petals of)
1 teaspoon alum

Steps:

Pick blossoms and set aside.
In a medium pot, bring sugar and water to a boil for 6-7 minutes.
Stir in alum.
Remove from heat and add blossoms.
Let stand for 20 minutes.
Strain through a double layer of cheesecloth and bottle.
