LAVENDER COOKIES WITH WHITE CHOCOLATE GLAZE

Lavender Cookies with White Chocolate Glaze image

Give slice-and-bake cookies an unexpected floral twist.

Provided by Food Network Kitchen

Categories     dessert

Time 2h50m

Yield About 3 dozen cookies

Number Of Ingredients 11

3 tablespoons dried lavender
3/4 cup granulated sugar
2 sticks unsalted butter, at room temperature
1/4 cup confectioners' sugar
1/2 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
2 large egg yolks
2 cups all-purpose flour
4 ounces white chocolate, finely chopped
2 tablespoons half-and half
Assorted purple sprinkles, for topping

Steps:

  • Make the cookies: Pulse the lavender in a spice or coffee grinder until finely ground. Remove 1/4 teaspoon to a small bowl; set aside for the glaze. Add 1/4 cup granulated sugar to the remaining lavender in the spice grinder and pulse until the sugar is fine.
  • Combine the butter, lavender sugar, the remaining 1/2 cup granulated sugar, the confectioners' sugar, salt and vanilla in a large bowl and beat with a mixer on medium-high speed until fluffy, about 2 minutes. Add the egg yolks and beat, scraping down the sides of the bowl, until combined, about 1 minute. Reduce the mixer speed to low; add the flour and beat until the dough comes together, 1 to 2 minutes.
  • Divide the dough between 2 large sheets of plastic wrap and roll each into a compact 10-inch log. Wrap each log in the plastic and refrigerate until very firm, at least 2 hours and up to 1 day.
  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees. Line 2 baking sheets with parchment paper. Unwrap one log of dough and slice into 3/8-inch-thick rounds. Arrange 2 inches apart on the prepared baking sheets.
  • Bake, switching the pans halfway through, until the cookies are golden around the edges, 20 to 24 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely. Repeat with the remaining log of dough.
  • Make the glaze: Combine the white chocolate, half-and-half and the reserved 1/4 teaspoon ground lavender in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water); stir until melted, about 5 minutes. Remove the bowl from the saucepan and let sit until the glaze thickens slightly, 5 to 10 minutes. (If the glaze gets too thick to drizzle, reheat over the simmering water, stirring.) Drizzle the glaze over the cookies and top with sprinkles. Let set, about 2 hours.

GLAZED LAVENDER SUGAR COOKIES

Glazed Lavender Sugar Cookies image

Time 5h

Yield about 18 cookies

Number Of Ingredients 19

4 cups (512 grams) all-purpose flour, plus more for dusting
2 teaspoons dried culinary lavender, finely chopped or crushed in a mortar and pestle
1 teaspoon baking powder
3/4 teaspoon salt
1 cup (227 grams) unsalted butter, softened
2/3 cup (135 grams) granulated sugar
2/3 cup (80 grams) powdered sugar
Zest from half of a lemon
2 large eggs
1 teaspoon vanilla extract
3 cups (360 grams) powdered sugar
1 cup (227 grams) unsalted butter, softened
Food coloring
2 cups (240 grams) powdered sugar
2 tablespoons (40 grams) corn syrup
2 1/2 tablespoons whole milk
1/2 teaspoon vanilla extract
Pinch of kosher salt
Food coloring, optional

Steps:

  • For the cookies: In a medium bowl, combine the flour, lavender, baking powder and salt and set aside.
  • In a stand mixer fitted with a paddle attachment or in a large bowl with an electric mixer beat together the butter and both sugars until pale and fluffy, about 5 minutes. Beat in the lemon zest. Add the eggs, one at a time, beating after each, and then beat in the vanilla. Add the flour mixture to the butter mixture, mixing on low until blended.
  • Turn the dough out onto the counter and divide into 2 large discs. Wrap each in plastic wrap and refrigerate for 1 hour up to 2 days.
  • When ready to bake preheat the oven to 375 degrees F and line 2 baking sheets with parchment or a silicone mat.
  • Working with 1 dough disc at a time, roll it out on a lightly floured surface to 1/2-inch-thick. Use a 3-inch round cookie cutter to cut out circles. Transfer to the prepared baking sheets spacing 1-inch apart. Gather and re-roll the scraps and cut out more circles.
  • Bake until the cookies are just thinking about starting to turn brown, start checking at around 12 minutes. Let cool on the baking sheets for 5 minutes and then transfer to a wire rack to cool completely.
  • Meanwhile, for the buttercream: In a stand mixer fitted with a paddle attachment or in a large bowl with an electric mixer, beat together the powdered sugar and butter until smooth. Divide the buttercream amongst individual bowls (I suggest 5 or 6) and stir food coloring into each. Transfer to pastry bags fitted with tiny round or star tips.
  • For the glaze: Whisk together the powdered sugar, corn syrup, milk, vanilla, salt and a few drops of food coloring, if using, until very smooth. You're going for the consistency of a thick glue. If it's too thick-- add a couple more drops of milk and if it's too thin-- add a few spoonfuls of powdered sugar.
  • Assemble the cookies: Dip the tops of each cooled cookie into the glaze, letting any excess drip off, and then place on a wire rack to dry. After a few minutes, once they're mostly dry to the touch (completely dry isn't necessary) you can go ahead and pipe on buttercream decorations. Go the freehand route or use cookie cutters to press indentations into the glaze which can serve as an outline for your decorations.
  • Let dry and enjoy!

LEMON LAVENDER COOKIES

Lemon Lavender Cookies image

Categories     Dessert

Time 30m

Yield 4 dozens

Number Of Ingredients 10

3/4 cup sugar
2 tablespoons grated lemon zest t. juice from 1-2 lemons
2 tablespoons juice from 1-2 lemons
2 teaspoons dried lavender (optional, but then they'd just be lemon cookies)
1 3/4 cups flour
1/4 teaspoon baking powder
1/4 teaspoon salt
12 tablespoons cold unsalted butter, cut into 1/2 cubes
1 egg yolk
1/2 teaspoon vanilla extract

Steps:

  • In a food processor , process the sugar, lemon zest and lavender until the sugar looks damp and the zest and lavender are fully incorporated, about 30 seconds. Whisk together the flour, baking soda and salt, then add to the sugar mixture; pulse to combine, about 10 1-second pulses.
  • Scatter the butter pieces over and pulse until the mixture resembles fine cornmeal, about 15 1-second pulses. In a measuring cup, beat together the lemon juice, egg yolk and vanilla. With the machine running, add the juice mixture in a slow stream (should take about 10 seconds) and continue processing until the dough forms into a ball, 10 to 15 seconds longer.
  • Turn the dough and any dry bits onto a clean work surface and gently gather into a ball. Working quickly, roll the dough into a cylinder about 12 inches; long and 1½" in diameter. Center the dough on a piece of parchment or plastic wrap and wrap tightly, twisting the ends together to seal. Chill the dough until firm and cold, about 45 minutes in the freezer or 2 hours in the refrigerator.
  • Preheat the oven to 375°F Line baking sheets with parchment paper or spray them with nonstick cooking spray. Seriously. Even if you think your pans are non-stick pans, and even if you're out of parchment paper and don't feel like running to the store in the middle of all this. Line the sheets with parchment paper! Otherwise your delicate cookies will stick to the pan and crumble when you try to remove them.
  • Remove the dough log from its wrapper and use a sharp knife to slice the dough into 3/8 inch; thick rounds. Place the rounds on the prepared baking sheets, spacing them 1 inch; apart. Bake until the centers of the cookies just begin to color and the edges are golden brown, about 10-12 minutes (the original recipe says 14-16 minutes, but 10 minutes was perfect for me, rotating the baking sheet halfway through the baking time. Cool on sheets about 5 minutes, then transfer the cookies to a wire rack to cool completely.

LAVENDER SHORTBREAD

Lavender Shortbread image

Provided by Food Network

Categories     dessert

Time 50m

Yield 15 bars

Number Of Ingredients 6

8 tablespoons (1 stick) cool unsalted butter, cut into pieces
1/4 cup plus 2 tablespoons sugar
1 cup all-purpose flour
1/4 cup cornstarch
1/4 teaspoon salt
2 tablespoons dried or fresh lavender flowers

Steps:

  • Heat the oven to 350 degrees F.
  • Cream the butter until soft in a mixer fitted with a paddle attachment. Add 1/4 cup sugar and mix until incorporated. Stir together the flour, cornstarch, and salt in a medium bowl. Add the dry ingredients to the butter mixture and mix at low speed just until the ingredients are almost incorporated, then add the lavender, and mix until the dough starts to come together. Flour a work surface, turn the dough onto it, and knead it 5 to 10 times, to bring the dough together and smooth it out.
  • Reflour the work surface. With a rolling pin, roll the dough out to a little less than 1/4-inch thick to fit an 8 by 8-inch square baking pan lined with parchment. To transfer to the pan, roll the dough up onto the rolling pin, lift it up, and unroll into the pan. (Or, press the dough thoroughly into the pan with your fingers.) Prick the shortbread all over with a fork, or use a pique-vite (dough docker) if you've got one, to prevent any buckling or shrinking. Sprinkle the surface evenly with 1 tablespoon of the remaining sugar.
  • Bake for 15 minutes. After 15 minutes, deflate the dough by knocking the pan once against the oven rack then rotate the pan to ensure even cooking and a flat surface. Bake 10 to 15 minutes more, until golden all over and very lightly browned. As soon as it comes out of the oven, sprinkle the surface evenly with the remaining tablespoon of sugar. Let cool about 5 minutes. Using a very sharp knife, cut into 3 rows by 5 rows making about 1 1/2-inch by 3-inch bars. Let cool completely in the pan. Remove from the pan and store in an airtight container for up to 1 week.

LAVENDER TEA COOKIES

Lavender Tea Cookies image

A British friend made these for me when I visited her in 1999 and I've been making them every since. They are very buttery and spread like crazy while baking, but you can almost hear the bees buzzing on the lavender when you try one. I kept the recipe to myself for quite a while and only shared it with another friend when she remarked how good they were. Now, they are a standard in HER home and a perennial favourite at her church's bake sale! Very good when served with a cuppa hot tea, especially Earl Grey. And please don't be tempted to add salt or vanilla extract; this is just a plain buttery lavender cookie.

  • Put the sugar mixture and butter in the work bowl of a standing mixer that is outfitted with the paddle attachment. Beat at low speed until smooth -- about 2 minutes. Add the flour and beat until combined. Mixing is complete when there are no visible lumps of butter in the dough. Form the dough into a rough disk, wrap it in plastic, and chill for 30 minutes in the refrigerator.
  • Roll the dough into a 1/4-inch thick circle. Cut out cookie shapes with a round, 2-inch diameter cutter. Use a flat spatula to transfer the rounds to a parchment-lined baking sheet. Chill for 30 minutes. Meanwhile, preheat the oven to 300°F.
  • Bake on the middle rack of the preheated oven just until the sides of the cookies begin to color — 25-30 minutes. Let cool completely on the baking sheet.

FRENCH LAVENDER RECIPES - THE SPRUCE EATS
Use fresh or dried buds but beware: The essence gets stronger and more concentrated as it dries. Use a very light touch or risk infusing the entire dish with bitterness or an oddly soapy flavor. When cooking with dried lavender, use only 1/3 of the amount if the recipe calls for fresh buds. Example: 1 1/2 teaspoons fresh = 1/2 teaspoon dried.
