Steps:
- Heat oven to 375*.
- In a large bowl add beans, chiles with juice, liquid smoke and garlic. Mix together well. Stir in cilantro. Place mixture in ungreased shallow 9 inch glass pan. Top with the cheese.Cover with foil.
- Bake at 375* for 15 to minutes or until mixture is thoroughly heated.
- Serve with tortilla chips.
- Note: May add more chiles for a more spicier dip. May microwave on high (with out the tin foil) to 3 to 5 minutes. May garnish with tomatoes and green peppers if you desire.

Steps:
- Place the beans, sour cream, chil powder and cumin in a food processor or blender; process until smooth.
- Spread the mixture over the bottom of a 9-inch glass pie pan.
- Top with the cheese, followed by the scallions, olives and jalapenos.
- Serve at room temperature or hot.
- If using a microwave oven, heat on high (100 percent power) for 5 to 6 minutes or until the edges are bubbly and the cheese is melted.
- If using a conventional oven, bake at 400 degrees for 20 minutes.
- Serve with reduced fat tortilla chips.

Steps:
- Fry the chopped onion in olive oil until soft. Add soft brown sugar, wine vinegar and Cajun seasoning. Cook for 1 min then add the mixed beans and chopped tomatoes with garlic. Simmer for 10-15 mins until the sauce has thickened then season.
- Scatter handful grated cheddar onto tortilla chips. Microwave on High for 1 min until cheese has melted. Serve alongside the dip (top with some chopped avocado if you like). Make ahead and reheat dip before guests arrive.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix cream cheese, sour cream, refried beans, and taco seasoning in a bowl. Fold jalapeno pepper into the dip; spread into a 9x13-inch baking dish.
- Bake in preheated oven for 30 minutes. Top with shredded cheese and continue cooking until the cheese has melted, about 5 more minutes.

PAM'S MEXICAN BEAN DIP
Steps:
- Brown hamburger meat and drain off grease. Add can of refried beans into frying pan and 1 cup of salsa. Stir until completely mixed together and heated completely.
- Put meat mixture in a heatproof serving dish. Top with the rest of the salsa. Add 4 cheese Mexican cheese to top of dish. Put dish in oven under broiler just until cheese melts. Watch closely.
- When recipe has cooled down some, cover with sour cream and decorate by sprinkling grated cheese on top and a spoonfull of salsa in middle of dish. Serve with Frito scoops.

This recipe was given to me by my siser over 15 years ago, and I have many requests for it. When layered in a glass dish, it's very colorful for holiday parties. For a more casual get together with a festive look, such as a BBQ, layer it in a 10" iron skillet, and tie a bandana around the handle.

- Chop the black olives and cut green onion-set aside.
