ASIAN PEAR MOJITO
From the website Drink it! This is supposed to be a copycat of P.F. Chang's. I multiplied this recipe by 16 and made it in a large plastic pitcher. I brought it to a party and just added the club soda to each glass when we got there. It was very well received!

Steps:
- Muddle (mash) the lime, sugar and mint leaves together.
- Add the Sour Apple Pucker, Limon Rum, & Pineapple Juice and shake with ice.
- Pour into a tall glass (highball or collins) top off with the club soda. Enjoy.

Mix this classic cocktail for a party using fresh mint, white rum, sugar, zesty lime and cooling soda water. Play with the quantities to suit your taste.

Steps:
- Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
- Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

- Place the jerk beef in water and change the water every so often so you remove the excess salt. It totally depends where you buy the beef and how much salt it has. I repeated the process 3 times, every 15 minutes this last time.
- Cut the meat in small pieces. If you have a meat mortar, you can smash it to break it apart which is the most traditional way.
