FRIED BUFFALO WINGS WITH BLUE CHEESE DIP

- Make the dip: Pulse the sour cream, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
- Make the wings: Heat 1 inch of vegetable oil in a large deep skillet over high heat until a deep-fry thermometer registers 375 degrees F. Set a rack on a rimmed baking sheet.
- Mix the flour and paprika in a shallow dish. Dredge the wings in the flour mixture to coat, tapping off the excess. Fry the wings in batches, turning as needed, until cooked through and deep golden brown, about 15 minutes. (Return the oil to 375 degrees F between batches.) Remove with tongs and transfer to the rack to drain.
- Meanwhile, combine the hot sauce, butter and honey in a medium pot over medium heat until the butter melts. Continue to cook, stirring, until the sauce thickens slightly, about 10 minutes. Reserve one-quarter of the sauce for serving. Add the cooked wings to the pot and toss with the remaining sauce. Serve with the blue cheese dip and reserved sauce.

- In a medium bowl, whisk together the mayonnaise, 1/4 cup blue cheese, half and half, sour cream, lemon juice, Worcestershire, and salt, until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use now or store in the refrigerator for up to 3 days.

SIMPLE BLUE CHEESE DIP FOR THE BLUE CHEESE LOVER
My grandmom used to serve this tangy yummy dip with celery. It makes a huge difference to use a high quality, strong blue cheese - if you use the cheap supermarket stuff this can be on the mild (I'd say bland) side. I like to use the strongest Spanish blue I can find. If you let it sit a couple of days in the fridge the blue flavor will intensify; you can also get stronger flavor by increasing the ratio of blue cheese to cottage cheese. Good with crackers or crudites; my husband uses it as a sandwich spread (try making one with turkey and tart apple slices); my toddler loves it straight out of a bowl (ever notice there's an "odd" in toddler?). You can use lower fat versions of the cottage cheese or milk without compromising taste, I think.

Steps:
- Remove rind from the cheese.
- In a medium size deep bowl (I use a 4 cup pyrex measuring cup) break the cheese into pieces.
- Add milk and cottage cheese.
- Blend with a hand blender until smooth (you can blend in a real blender too, but it's more annoying and harder to clean up).
- If consistency is too dense, add more milk and blend again.
- If it's too runny, add more cheese- the proportions are not rigid.
BLUE CHEESE DIP
Found in the Williams Sonoma catalog. I wanted to place it here for safe keeping until I get a chance to try it. It sounds very good. Serve with potato chips or cut up veggies. Cook time is the chill time. The prep time is a guess.

- Beat cream cheese on medium speed of an electric mixer until soft and creamy, about 2 minutes.
- Reduce speed to low and add the sour cream and beat until well combined.
- Add the blue cheese and beat until lumps are gone.
- Stir in chives and pepper.
- Refrigerate for at least 30 minutes. Will keep for 1 week.

- Puree 1 1/2 cups sour cream, 3/4 cup mayonnaise and 1/2 pound blue cheese. Add chopped chives, a dash of Worcestershire sauce, and celery salt and pepper to taste.

PALMER HOUSE BLUE CHEESE DRESSING/CHIP DIP
This is the blue cheese dressing they made at a greek restaurant I used to work for. The chef there told me it was from the Palmer House in Chicago. It is really good on a lettuce wedge, for dipping ruffle chips, and for buffalo wings. You can use light mayo and sour cream but it's better with plain.

BLUE CHEESE DRESSING AND DIP
Found this in a magazine years ago and it is the best blue cheese dressing I have ever had. Made as is it is very thick which I like as a salad dressing but it is also perfect as a dip for veggies, pretzels etc. You can add more milk or water to make it thinner.

- Fry bacon until crispy. Transfer to a paper towel lined plate. Let drain for 10-15 minutes. Finely chop and set aside.
- Place yogurt, softened cream cheese and 1/2 jar of dressing into a food processor. Pulse 10 times and transfer contents to a medium bowl. Stir in remaining blue cheese, 1/2 cup of the cheddar cheese, 1/2 of the bacon, and 1/2 of the green onion. Season with salt, onion powder, and granulated garlic. Taste for salt content and adjust as needed. Cover bowl and place into the refrigerator. Reserve remaining bacon, cheddar cheese, and green onions in separate baggies or containers in the fridge. Let dip cool for 2 hours before serving.
- To assemble. Transfer dip to a serving bowl. Top with remaining cheese, bacon, and onions. Serve with potato chips, vegetables or crackers. This dip works really well with hot wings too.
- For extended freshness during service, fill a resealable plastic bag with ice. Seal bag and place into a bowl larger than your bowl of dip. Set bowl on top of bagged ice and it will remain cool for a longer time. Restock ice as needed.
