Pop this meatless casserole into the oven in 10 minutes with help from Bisquick® mix.

2 cans (4.5 oz each) Old El Paso™ chopped green chiles, drained
2 large tomatoes, seeded, chopped (2 cups)
2 cups shredded Cheddar cheese (8 oz)
1 cup Original Bisquick™ mix
1/2 cup sour cream
3 eggs
Salsa, if desired

Steps:

  • Heat oven to 375°F. Spray 2-quart casserole or 8-inch square pan with cooking spray. Sprinkle chiles and tomatoes evenly in casserole.
  • In medium bowl, beat remaining ingredients except salsa with wire whisk until blended. Pour over chiles and tomatoes.
  • Bake uncovered 35 to 40 minutes or until knife inserted in center comes out clean. Serve with salsa.

1 pound ground beef
3 tablespoons chili powder
1 teaspoon garlic powder
One 32-ounce block processed cheese, such as Velveeta, cubed
One 16-ounce jar salsa
Tortilla chips, for serving

Steps:

  • Brown the beef in a large skillet over medium-high heat, 10 to 15 minutes. Add the chili powder and garlic powder and stir to combine. Add 1/4 cup water and let simmer until evaporated.
  • Transfer the beef to a slow cooker. Stir in the cheese and salsa. Cover and let cook on high until melted, about 1 hour.
  • Serve with tortilla chips.

One 1-pound package refrigerated hot breakfast sausage
1 onion, diced
One 2-pound block processed cheese, such as Velveeta
One 10-ounce can diced tomatoes and green chiles
2 cans chopped green chiles
1 jalapeno, diced
Chips, for serving

Steps:

  • Brown the sausage and onion in a large nonstick skillet, breaking the sausage up as you go. Once browned, drain off some of the fat.
  • Chop the cheese block into cubes and add along with the diced tomatoes and green chiles and chopped green chiles, juice and all.
  • Cook over a low heat until it all starts coming together. Then stir in the diced jalapeno. Serve with chips.

4 (4 ounce) cans chopped green chilies
1 1/2 cups cooked chicken, shredded
2 cups grated sharp white cheddar cheese, about 8 ounces
2 cups grated monterey jack cheese, about 8 ounces
8 eggs
1 cup milk
1/2 teaspoon ground cumin

Steps:

  • Preheat oven to 350 degrees. Butter a 9x13 baking dish. Spread the chiles in the dish. Scatter the chicken over the chiles. Cover with the cheeses.
  • Beat the eggs and milk together. Beat in the cumin. Pour this mixture over the cheese. Bake 30-40 minutes, until lightly browned on top.
  • Allow to rest 10 minutes, then cut into squares and serve.

1 1/2 tablespoons olive oil, preferably extra-virgin
1 large red onion, sliced
6 to 8 ounces full-flavored mushrooms such as shiitakes, oysters or practically any wild variety, stemmed (discard woody stems or chop them finely) and sliced (you'll have about 2 generous cups)
2 to 3 canned chipotle chiles, removed from the canning sauce, seeded and thinly sliced
Salt
12 corn tortillas, the fresher the better (store-bought are okay, though homemade will really shine here)
8 ounces mozzarella, preferably whole milk (but not "fresh" mozzarella which will not melt) or Mexican quesillo cheese, shredded
A generous 1/2 teaspoon chopped fresh thyme or 1 generous teaspoon chopped fresh epazote leaves
A little fresh ground black pepper

Steps:

  • Heat the oven to 350 degrees. In a large skillet (preferably non-stick), heat the oil over medium-high. Add the sliced onion and cook, stirring frequently, until softening and beginning to brown, about 5 minutes. Add the mushrooms and stir nearly constantly until they have softened and any juice they release has evaporated, about 5 minutes longer. Stir in the sliced chile, then taste and season with salt, usually about 1/4 teaspoon. Transfer the mixture to a 9- or 10-inch shallow baking dish, Mexican cazuela or pie plate. Very lightly dampen a clean kitchen towel. Check the tortillas to make sure none are stuck together. Wrap them in the towel, then in foil, sealing the edges tightly. Place in the oven and set the timer for 7 minutes. When the timer goes off, stir the shredded cheese into the warm mushroom mixture. Set in the oven alongside the tortillas and bake until the cheese is just melted, about 5 more minutes. Sprinkle with the thyme or epazote and black pepper and serve without a moment's hesitation, accompanied by the warm tortillas.

Mom's Chile Con Queso (Cheese With Peppers) image

This is a very mild dish. For adult taste, it really needs to be perked up with cayenne pepper or Tabasco chipotle sauce. As written, it's how my Mom made it. However, it seemed too thick to me. I'm not sure she didn't use Velveeta. I used Kraft 2% sharp cheddar, and the texture was not what I hoped.

1 (6 ounce) can water
1 (4 ounce) can green chilies, chopped

Steps:

  • Grate cheese or cut it up in smallish cubes.
  • Mix together everything except cheese.
  • Cook mixture in top of double boiler for 25 minutes. If you don't have a double boiler, use a heavy saucepan, keep heat on low and stir.
  • Add cheese. Cook, stirring constantly, until cheese melts.
  • Keep hot if using as an appetizer.

This is a true chile con queso that can be eaten with tostadas or in a warm corn tortilla. This is not like the Americanized version of chili con queso that we have become used to that is a cheese dip, which I also love. This is the way my grandma used to make it. The great thing about this recipe is you can play with it and adjust it to your personal taste. If you like it cheesier add more cheese. You can't mess this up unless you burn it.

2 tablespoons vegetable oil
½ onion, diced
1 tomato, diced
10 large roasted green chile peppers, seeded and chopped
½ cup shredded queso asadero (white Mexican cheese)
¼ cup shredded Monterey Jack cheese

Steps:

  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion and tomato; cook and stir until the onion has softened and turned translucent, about 5 minutes. 1 medium onion, chopped
1 to 2 garlic cloves, minced
1 can (4 ounces) chopped green chilies

1 cup whole milk
2-1/2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
Tortilla chips
Chopped tomato and sliced jalapeno pepper, optional

Steps:

  • In a saucepan, heat butter over medium-high heat; saute onion and garlic until tender. Add chilies; cook and stir 5 minutes. In a small bowl, mix cornstarch and milk until smooth; stir into onion mixture. Bring to a boil; cook and stir until thickened, 1-2 minutes., Reduce heat to low; gradually stir in cheeses, adding in small amounts and allowing cheese to melt between additions. Serve warm with chips. If desired, top with tomato and jalapeno.

1 lb processed cheese (Velveeta works well)
3/4 teaspoon granulated garlic
4 1/2 ounces canned diced green chilies, drained
3/4 ounce canned diced jalapeno, drained
3/4 ounce fresh diced green pepper
2 3/4 ounces canned diced red peppers, drained

Steps:

  • Cut processed cheese into pieces no more than 1 inch thick.
  • Spread cheese pieces evenly in the bottom of a microwavable dish large enough for all ingredients.
  • Spread all remaining ingredients evenly over the top of the processed cheese.
  • Cover with a microwavable plastic lid and microwave on high for 2 minutes.
  • Stir.
  • Repeat the microwaving process and stirring process until melted and heated to a temperature of 150°F.
  • Serve with your favorite tortilla chips.

  • While the water is coming to a boil, preheat a large skillet over medium-high heat and brown the hamburger. When the hamburger is almost finished, but still a little pink, throw in the garlic, jalapeño, and onions and finish cooking until the burger is browned and the onion is translucent. Drain the grease from the skillet and mix in the cumin, coriander and chili powder and pepper. Take off the heat or turn heat down low.
