NEW ENGLAND SALMON PIE
My mom always made salmon pie on Christmas Eve. Now I bake this dish for the holidays and other get-togethers during the year. It takes little time to prepare, and with a salad on the side, it makes a satisfying meal. -Jeanne Uttley, Salem, New Hampshire

- In a bowl, combine the potatoes, onion, milk, celery seed, garlic powder, salt and pepper. Stir in salmon and parsley. Line a 9-in. pie plate with bottom pastry; trim even with edges. Spread salmon mixture into crust. , Roll out remaining pastry to fit top of pie; place over filling. Trim, seal and flute edges. Cut slits in top. Beat egg and water; brush over pastry. Bake at 350° for 40-45 minutes or until crust is golden. Refrigerate leftovers.

RICE AND SALMON PIE
From the Australian Table magazine May 2007 edition. They state - Known in its native Russia as koulibiac, this filling dish may also be made with brioche dough instead of puff pastry. This pie is great served with light sour cream, flavoured with a little dill and a squeeze of lemon. Preparation times are estimated and cooking of rice not included, chill time included in passive time.

Steps:
- Preheat oven to 210 degree celsius (or 190 degree for fan forced oven).
- Place cooked rice, flaked salmon and dill (or chives) into a large bowl.
- Line two baking trays with baking paper.
- Melt butter in frying pan on medium heat.
- Cook leek for 5 minutes, stirring until bright green and soft.
- Transfer to bowl with cooked rice, salmon and dill (or chives). Toss and season with salt and pepper.
- Cut one pastry sheet in half and place on prepared trays.
- Spoon one quarter of rice mixture down centre of each half sheet of pastry, leaving a 2cm edge.
- Place egg quarters down centre of filling and top with remaining half of rice mixture equally over each.
- Place a pastry sheet over each lot of filling, pressing pastry edges together well to seal and trim excess from edges.
- Cut three slashes into top and refrigerate for 10 minutes.
- Brush top with beaten egg and bake for 15 minutes. Reduce heat to 180 degree celsius (160 degree celsius for fan forced oven) and bake for another 20 minutes.
- Cut and serve.

Steps:
- Bring water and salt to a boil, add rice, bring to boil again, cover, reduce heat and simmer about 15 minutes, until all water is absorbed and rice is tender.
- Grease a 9 inch pie plate with 1 teaspoon margarine.
- Melt remaining margarine in a fry pan.
- Sauté celery and onion about 4 minutes until tender.
- Beat 1 egg with pepper and mix into rice.
- Press rice onto bottom and sides of prepared pie plate to form crust.
- Sprinkle half the cheese over rice.
- Spread with half the celery mixture and salmon.
- Top with remaining celery mixture and cheese.
- Beat together remaining egg, milk, nutmeg, curry powder and cinnamon.
- Pour over ingredients in pie plate.
- Bake in 375 degree oven for 30 to 35 minutes until a tester inserted in the centre comes out clean.
- Cool 5 minutes.
- Cut into 6 wedges.
- Diabetic- 1 wedge; 2 protein choices; 1 starchy choice; 1 fats and oils choice.

SALMON PIE
This is a family favourite -- even Aunt Esther loves it. And it's so easy to make. I've always had the kids help make the crust and press it into the pie pan. This is great for lunches and leftovers, too, as it reheats very well in the microwave. Adapted from a recipe in a Farm Journal cookbook.

- CRUST: Stir together the flour, salt and paprika, then cut in the butter, using a pastry blender if you have one.
- Stir in the cheese (1 cup) and chopped walnuts.
- Reserve 1 cup of the crumb mixture, and press the remaining mixture into the bottom and up the sides of a 25cm (10-inch) pie pan.
- Set crust aside.
- FILLING: Pre-heat oven to 200°C (400°F).
- Drain salmon, reserving liquid. Remove skin and bones, and break salmon into small chunks. Set aside.
- Beat eggs in a bowl, using a rotary beater. Add sour cream, mayo, onion, dill, tabasco and reserved salmon liquid. Stir in cheese and salmon chunks.
- Spoon mixture into pie shell, and sprinkle over the reserved 1 cup of crumb mixture.
- Bake for 30 minutes or until puffy. Let stand 10-15 minutes before serving.

- Trim and roughly chop the leeks and zucchini and place in a large pan on low heat with the thyme and a goodly sized splash or two of the oil.
- Cook gently for 30 minutes or until soft and lightly golden.
- Add a little salt and pepper to taste and allow to cool 5-10 minutes.
- Preheat the oven to 180 Centigrade (350 fahrenheit).
- In a separate bowl flake the salmon, crumble in the feta, grate in the zest from the lemon ,crack in the eggs and stir to combine.
- Stir them into the vegetable mixture.
- Layer the filo over the base of an ovenproof frying pan or dish (about 30 cm), overlapping the sheets and letting them hang over the sides Lightly brush teh sheets with oil as you go. Make sure that you fully cover the base and allow enough overhang to fully cover the filling when you fold it in later.
- Spoon in the filling then fold in the overlapping filo to form a lid.
- Brush the top with olive oil.
- Bake on the bottom shelf of the oven 45-50 minutes or until cooked through and golden and crisp.

Mom always made this for our birthday's since it was everyone's favorite dinner. Like Emeril, our heritage is French Canadian, and after testing both his recipe and ours, my family agrees that our recipe has more salmon flavor due to the canned salmon.

Steps:
- Wash, peel and half potatoes. Place in a 3 quart saucepan, barely cover the potatoes with water, place cover on the pan and bring to a boil. Reduce heat to low and simmer for 30 minutes.
- While the potatoes are cooking, clean the canned salmon by removing any bones and skin. Reserve 1 tablespoon of the juice from the salmon. Mince onion very fine and prepare pie plate by placing bottom crust in plate.
- When the potatoes are done, drain water from the pan, add the butter, onion, ginger and the reserved juice from the salmon. Mash well, then use electric hand mixer if preferred. Add cleaned salmon, beat well then finally add the egg beating one last time.
- Transfer filling to prepared pie plate, cover with top crust. Cut 5 or 6 vent holes in the top of the crust. If desired, pat top crust with half and half or butter. Bake in preheated 400°F oven for 50-60 minutes. Enjoy!

- FOR PIE:.
- Melt olive oil, saute the onions until tender.
- Peel potatoes and cook in salted water until tender, mash them up.
- Flake salmon with liquids, incorporate with the mashed potatoes and cooked onions.
- Add salt and pepper to taste.
- Place first pie shell in bottom of pie plate.
- Put potatoe salmon mixture.
- Place second pie shell on top, make incisions on top for steam.
- Beat egg, brush egg mixture all over pie. This will create a nice golden crust.
- Cook at 400o for 30 minutes.
- SAUCE:.
- Boil eggs in water for approximately 10 minutes. Remove shells, cut eggs in thin slices, put aside.
- Heat 2 cups of milk, reserve.
- In a heavy based saucepan, melt butter, whisk in flour and cook, stirring until the flour is foaming but not browned, about 1 minute.
- Off heat, add warm milk, whisk well, then bring to a boil, whisking constantly until the sauce thickens.
- Season with salt and pepper and nutmeg.
- Gentlly add sliced eggs, simmer slowly for 1-2 minutes.
- Slice salmon pie and serve with a generous amount of egg sauce on top.
SALMON FOLDOVER PIE
This is a super quick version of a Norwegian salmon pie that is made with canned salmon. Red salmon gives a better color, but it is a bit pricier than pink. Posted for ZWT 6.

- Preheat the oven to 375 degrees. In a large skillet, heat the butter over medium-high heat. Saute the onion and celery for 5-8 minutes, or until soft. Remove from the heat and add the dill, soup, salmon, 1 egg, and bread crumbs; mix until well combined.
- Place each pie crust on a cookie sheet that has been sprayed with nonstick cooking spray. Place half of the salmon mixture on one side of each pie crust, about 1 inch from the edge. Beat the remaining egg, then brush the edges of the pie crust with it. Fold the crust over the salmon and pinch the edges together to seal. Brush the dough with the egg and bake for 30-35 minutes, or until golden brown and the center is hot.
