LEFTOVER OATMEAL BREAD

Leftover Oatmeal Bread image

Provided by Alton Brown

Time 2h45m

Yield 1 loaf

Number Of Ingredients 10

1 package active dry yeast
11 ounces bread flour, plus extra for kneading
1/4 cup toasted uncooked old fashioned rolled oats, plus 1 tablespoon, divided
1 teaspoon kosher salt
12 ounces leftover, cooked old fashioned rolled oats, at room temperature
1/4 cup warm water
2 tablespoons agave syrup
1 tablespoon olive oil, plus extra for bowl and pan
1 large egg yolk
1 tablespoon water

Steps:

  • Combine the yeast, bread flour, 1/4 cup toasted, uncooked oats, and the salt in a small mixing bowl and set aside.
  • Combine the leftover cooked oatmeal, warm water, agave syrup, and 1 tablespoon of oil in a large mixing bowl. Add the dry mixture to the cooked oatmeal mixture in 3 installments and mix thoroughly with a wooden spoon after each addition.
  • Turn the dough onto a lightly floured surface, and knead by hand for 10 minutes, incorporating more flour, if needed. Dough will be sticky. Put the dough in a lightly oiled bowl or container. Cover with plastic wrap and set in a warm place to rise until the dough has doubled in size, about 1 hour.
  • Punch down the dough, shape it into a loaf, and put it into a lightly oiled 9 by 5-inch loaf pan. Cover with plastic wrap and refrigerate overnight.
  • Heat the oven to 350 degrees F.
  • Combine the egg yolk and water in a small bowl. Lightly brush the top of the loaf with egg wash and sprinkle with remaining 1 tablespoon toasted, uncooked oats. Bake until the bread reaches an internal temperature registers 210 degrees F on an instant-read thermometer, about 55 minutes to 1 hour. Remove the loaf from the pan to a cooling rack for 30 minutes before slicing and serving.

APPLE OATMEAL BREAKFAST BREAD

Apple Oatmeal Breakfast Bread image

Many people know that a bowl of oatmeal is a healthy way to start the day. There's a lot of nutrition packed into that bowl of goodness, including whole-grain oats, spicy cinnamon and usually fruit and nuts on top. I set out to create a quick bread that had all the nourishment of a bowl of oatmeal -- but that would be easy to slice and take with you.

Provided by Serena Ball

Categories     main-dish

Time 2h25m

Yield 12 servings

Number Of Ingredients 18

3 tablespoons uncooked oats
1 tablespoon unsalted butter, melted
1 teaspoon brown sugar
1/4 teaspoon ground cinnamon
Nonstick cooking spray
1 cup (3.2 ounces) uncooked oats
1 cup (4.2 ounces) whole-wheat pastry flour or all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup honey
1/3 cup vegetable oil
1 teaspoon pure vanilla extract
3 large eggs
1/3 cup brown sugar
2 cups (9.7 ounces) shredded, unpeeled apples (about 2 large)
1/3 cup chopped walnuts

Steps:

  • For the crumble topping: Combine the oats, butter, brown sugar and cinnamon in a small bowl; set aside.
  • For the bread: Preheat the oven to 350 degrees F. Cut out an 8-by-4-inch rectangle of parchment paper and put in the bottom of a 9-by-5-inch loaf pan. Spray the pan and paper with cooking spray.
  • Put the oats in a blender and blend to a flour-like consistency. Combine the oat flour, wheat flour, cinnamon, baking powder, baking soda and salt in a large bowl.
  • Combine the honey, oil, vanilla and eggs in a medium bowl; add the sugar, stirring until combined. Add the apples and stir until well combined. Add the flour mixture and stir just until combined. Gently stir in the walnuts.
  • Pour the batter into the prepared loaf pan and sprinkle with the crumble topping. Bake until a wooden pick inserted in the center comes out clean, about 1 hour. Cool in the pan on a wire rack 10 minutes, then remove from the pan to the rack and cool completely.

OATMEAL BREAD

Oatmeal Bread image

Like the other oatmeal bread recipe I posted, I haven't tried this one yet. Prep times and servings were guesstimated.

Provided by Burgundy Damsel

Categories     Yeast Breads

Time 2h35m

Yield 2 loaves, 8 serving(s)

Number Of Ingredients 9

1 cup cold water
1 cup milk
2 tablespoons honey
2 tablespoons butter
1 1/2 teaspoons salt
1 (1/4 ounce) package dry yeast, dissolved in 1/4 cup warm water
2 cups whole wheat flour
1 cup quick-cooking rolled oats
4 cups bread flour

Steps:

  • In a wide saucepan, combine the water, milk, honey, butter and salt. Place over medium heat and stir until the butter is melted. Transfer to a large mixing bowl to cool.
  • When the mixture is barely warm to the touch, stir in the dissolved yeast. Add the whole wheat flour and beat with a wooden spoon until smooth. Stir in the oats.
  • Gradually blend in the bread flour until the dough becomes too difficult to stir. Turn out onto a floured surface and knead in as much of the remaining flour as necessary to form a cohesive dough. Continue kneading in bread flour until the dough is soft, yet no longer sticks to the work surface.
  • Transfer to a greased bowl and cover with a clean kitchen towel. Allow the dough to rise until double in bulk.
  • Generously grease two 9x5 inch loaf pans. Punch the dough down, then turn it out onto a floured surface. Shape it into 2 loaves and place them in the prepared pans. Cover and set aside to rise. When double in bulk, bake in a preheated 375* oven for 35 to 45 minutes, or until the loaves sound hollow when you tap the tops. Cool on a rack for 5 minutes, then turn out. Complete cooling on the rack.

  • To make the overnight soaker: In a mixing bowl, combine the oats and water. Stir thoroughly, cover, and let sit overnight (8 to 12 hours) at room temperature.
  • To make the dough: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. In a large bowl or the bowl of your stand mixer, combine the overnight soaker with the remaining dough ingredients. Mix and knead to make a soft, elastic dough; if the dough seems dry, knead in an additional 1 to 2 tablespoons (14g to 28g) water. If you're using a stand mixer with dough hook, the mixing/kneading process will take about 3 minutes on low speed followed by 5 to 6 minutes on medium speed.
  • Transfer the dough to a lightly greased bowl and cover it with plastic wrap or a reusable cover. Let the dough rise for 1 hour.
  • Uncover the bowl and, using a bowl scraper or spatula, run the scraper or spatula down the inside far wall of the bowl. Bring the dough up from the bottom of the bowl, and fold it over on top of itself. Turn the bowl 90° and repeat; repeat twice more (for a total of four times), turning the bowl 90° each time. This process, which helps develop the dough, is called a fold. Re-cover the bowl, and let the dough rise for another hour.
