Throw an oyster in the gin! The oyster not only does the work of the olive, providing texture and salt and visual interest, but also covers for the vermouth with its liquor-a variation on the "dirty martini."

Number Of Ingredients 3

2 ounces (60 ml) gin
1 raw oyster, liquor reserved
1 strip of lemon peel

Steps:

  • Pour the gin and oyster liquor into a cocktail shaker filled with ice. Shake well and let sit for 30 seconds, or longer for a weaker drink.
  • Run the lemon peel around the rim of a martini glass. Strain the gin into the glass, then twist the peel over the glass to release a drop of lemon oil.
  • Drop in the oyster and serve.

24 raw oysters in their shells, scrubbed
1 1/2 cups Spicy Cocktail Salsa (recipe attached)
1 small red onion, finely diced
1 bunch cilantro, leaves only, chopped
1 lime, quartered
4 Fried Tortillas Chips (recipe attached), for garnish

Steps:

  • Place 4 martini glasses or wine goblets in the refrigerator.
  • Shuck the oysters. Place 6 oysters, with their juice, in each chilled glass. (Fresh, cleaned oysters can be reserved in the refrigerator for up to 6 hours.) Spoon the salsa into the glasses. Stir to combine. Sprinkle with the diced onion and cilantro and serve with squeezed lime wedges and Fried Tortilla Chips.

1/2 teaspoon lime juice
1/2 teaspoon Lea & Perrins Worcestershire Sauce
1/2 teaspoon finely chopped onion
2 drops Tabasco sauce
2 tablespoons dry white wine
1/2 cup catsup (Some chefs use tomato juice, others use both)
3 tablespoons shrimp juice (for the shrimp cocktail only)
sliced lime

Steps:

  • Put the shrimp or oysters in a tall glass, Mix the 7 ingredients, cover with the sauce and serve salt and pepper with heaps of sliced lime. This is one portion.
