RED WINE MEATBALLS
My mother-in-law made this all the time and passed on the recipe to me. The wine gives it a wonderful flavour. It is nice served with rice or pasta.

Steps:
- Combine ground beef, bread crumbs, onion, cornstarch and allspice, tossing lightly with a fork until blended.
- Beat egg slightly, add cream and salt and blend.
- Add to meat mixture and mix lightly.
- Shape into 1 1/2" balls.
- Heat oil in skillet, add meat balls and brown on all sides.
- Remove meatballs and reserve.
- Add flour to drippings in skillet and blend.
- Add consumme, water, pepper and wine.
- Cook, stirring constantly until thickened and smooth.
- Add salt to taste.
- Add meatballs, cover skillet and simmer 20 minutes.
WINE MEATBALL APPETIZER
I have no idea where my mom got this recipe...but I make these every Christmas for my family. I want to pass these recipes down to my kids so I am putting them here for safe keeping. Use a small jar of Apple or Currant Jelly.

Steps:
- Mix ground beef, onion soup mix, egg and crushed crackers together. Form into small balls. Put on Baking sheed with sides. Bake at 400 degrees for 25 minutes.
- Mix ketchup, jelly and wine together and simmer in a pot. Add cooked meatballs and simmer 30 minutes at low heat -- Serve.

- Preheat a medium skillet over medium high heat.
- Combine meats, onion, parsley, salt, and pepper. Add butter and oil to pan and begin rolling small, bite-size balls, adding balls to pan as you roll them. Cook balls 10 to 12 minutes, shaking pan occasionally to brown equally on all sides. Deglaze pan with wine and allow wine to reduce by half, 1 or 2 minutes. Remove pan from heat and squeeze the juice of 1/2 lemon over the meatballs.
- Serve in a bowl.

- Drain pineapple, reserving juice.
- Place pineapple and 2 tablespoons juice in a bowl, reserving the remaining juice for glaze.
- Add the egg, bread crumbs and pepper to pineapple; mix well.
- Add sausage and beef; mix well.
- Shape into 1-in. balls; place in a greased baking pan.
- Bake, uncovered, at 450 degrees for 12-15 minutes or until no longer pink; drain.
- In a large skillet, combine glaze ingredients and reserved pineapple juice. Add meatballs.
- Bring to a boil over medium heat. Reduce heat; simmer and stir for 5-10 minutes or until heated through.

SWEET MEATBALL APPETIZER
These meatballs are everybody's favorite and I can't go more than a few weeks without someone requesting them. They are very versatile as they can be made with almost any kind of ground meat or poultry. One warning though; if you do not like sweet foods this is not the recipe for you. In fact if you plan on doubling this recipe I recommend that you decrease the amount of jelly somewhat. Also you can increase the amount of breadcrumbs by a few tablespoons it it seems that it's not holding together but don't overdo it or your meatballs will become hard.

- Combine ingredients for meat mixture and seperately in a large covered saucepan or pot bring all the sauce ingredients to a simmer. When nice and hot start forming small meatballs (they will expand somewhat) and drop gently into the sauce. Lower heat and cook for 2 hours. Serve over rice with a little sauce.
