Steps:
- Butter or spray a 9 x 13-inch casserole dish with cooking spray.
- Cut the brioche into 1-inch cubes and place the cubed bread into the prepared pan.
- In a large bowl whisk the eggs until well beaten. Add in the milk, melted butter, vanilla, cinnamon, salt and light brown sugar. Vigorously whisk all ingredients together until completely combined.
- Pour the egg mixture evenly over the brioche cubes. You can gently stir any areas that seem to be a bit dry, but do not overmix. Cover with plastic wrap and refrigerate for at least 4 hours or overnight (up to 12 hours).
- Prepare the topping: In a large bowl, stir together the flour, brown sugar, cinnamon and salt. Use a pastry blender or 2 forks to cut the butter into the dry ingredients until small clumps are formed. Gently stir in the oats. Place the topping into a sealed container and refrigerate until you're ready to bake.
- When you're ready to bake, preheat the oven to 350 degrees F. Remove plastic wrap from the casserole dish and evenly sprinkle on the refrigerated topping.
- Bake for 50-60 minutes or until the top of the casserole is golden brown and the french toast is firm.
- Serve warm with Challenge butter and maple syrup.

Steps:
- Preheat the oven to 250 degrees F.
- In a large shallow bowl, whisk together the eggs, half-and-half, orange zest, vanilla, honey, and salt. Slice the challah in 3/4-inch thick slices. Soak as many slices in the egg mixture as possible for 5 minutes, turning once.
- Heat 1 tablespoon butter and 1 tablespoon oil in a very large saute pan over medium heat. Add the soaked bread and cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep it warm in the oven. Fry the remaining soaked bread slices, adding butter and oil as needed, until it's all cooked. Serve hot with maple syrup, raspberry preserves, and/or confectioners' sugar.

Steps:
- Combine the brown sugar, cinnamon, cardamom and nutmeg in a small bowl and mix to combine. Set aside. In a large bowl, add the milk, ricotta, vanilla, salt, eggs and lemon zest. Whisk to combine and set aside. Pour the melted butter in a 9-by-13-inch casserole dish. Dip each slice of bread lightly in the egg mixture and shingle the bread in the casserole dish, sprinkling a large pinch of the sugar mixture on each layer. Pour the remaining egg mixture on top of the bread and then pour the remaining sugar mixture on top. Cover with aluminum foil and refrigerate for at least 6 hours and up to overnight.
- Preheat the oven to 375 degrees F. Bake the casserole for 30 minutes. Uncover and bake until the custard is set and the bread is golden brown, an additional 15 minutes.
- Meanwhile, add the blueberries and lemon juice to a small saucepot. Cook over medium heat until the berries burst and thicken and the sauce begins to bubble, about 15 minutes.
- When ready to serve, spoon the blueberries over the center of the casserole and sprinkle with powdered sugar.
OVERNIGHT FRENCH TOAST
If you have a crowd for breakfast, overnight French toast is a winning idea. Instead of standing over the stove, cooking slice after slice, it bakes in the oven and emerges puffed and golden and ready for a big glug of maple syrup. Try making it with a stale loaf that you forgot to eat amid all the other holiday goodies. A fat brioche, fruit-filled panettone or a braided challah all work well. Stay away from croissants, though: Their chewy interiors are best enjoyed fresh.

Steps:
- Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Nestle the raisins evenly between the slices of bread but not on top.
- In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight.
- Heat oven to 350 degrees. Remove the plastic wrap. Sprinkle the pecans evenly over the top. Bake until puffed, golden and set in the center, 50 to 60 minutes. While baking, if the top begins to get too dark, tent with foil. Let stand 10 minutes. Dust with confectioners' sugar and serve with maple syrup.

Steps:
- Lightly oil a 9x13 baking pan.
- Arrange the challah bread pieces evenly across the baking pan. I like to arrange it so you can see a mixture of the glossy tops of the challah bread and the cut sides of the bread.
- In a large bowl, beat together the eggs, milk, brown sugar, vanilla, cinnamon, nutmeg, cardamom and salt.
- Gently pour the egg mixture over the challah bread pieces, covering all the pieces. The tops of some of the bread cubes might not be fully covered in the egg mixture immediately. But those bread cubes should be soaked through after you let the casserole sit for a bit.
- Cover and refrigerate. Allow the French toast casserole to sit for at least 2 hours, but it can soak overnight.
- When you are ready to bake it, preheat the oven to 350°F / 176°C. Make sure all the challah bread cubes have been soaked with the egg mixture. If any of the bread cubes are still not soaked, gently push them down a bit into the casserole.
- In a small bowl, mix together the granulated sugar and cinnamon. Pour the melted butter evenly across the surface of the French toast casserole. Evenly sprinkle the cinnamon sugar mixture across the top.
- Bake in the oven for about 50-60 minutes. To check if the French toast casserole is done, you can insert a knife in the middle and see if the casserole is set. If the casserole is browning too quickly, place it in a lower rack in the oven, or cover it with aluminum foil.
- Allow the casserole to sit for 5-10 minutes before serving.
- To serve, I like to drizzle maple syrup across the entire casserole. Alternatively, you could also sprinkle powdered sugar across the top.
