OVEN ROASTED SEA BASS

Oven Roasted Sea Bass image

Provided by Cooking Maniac

Time 40m

Number Of Ingredients 6

2 tablespoon jerk seasoning
2 tablespoon butter
4 sprigs thyme
1 garlic clove (chopped)
1 lemon (sliced thin)
1 sea bass (whole)

Steps:

  • Gut, scale and rinse the fish throughly. Pat dry with paper towels. Heat the oven to 350F. Cut one large pieces of foil that is big enough to wrap each whole fish. In each piece lay the fish. Coat wit olive oil on both sides. On the inside of the fish rub the Jerk seasoning inside. Sprinkle with sea salt and freshly ground black pepper on both sides. Stuff lemon slices in the fish. Sprinkle the garlic on top. Place the butter and thyme on top. Fold and crimp the foil to make a pocket. Lay on a baking sheet and place in center of oven. Bake for 30-40 minutes depending on the size of fish. The skin will feel soft but the meat will be firm.
  • Note: If you would like to make the skin crispier, unwrap the fish after it has cooked through and set under broiler. Keep checking because the broiler can burn the fish easily. Also this might make the fish stick to the foil a bit and the tail might burn. So don't walk away.

You can try this with other types of fish but my version used a Chilean sea bass. The original recipe came from SparkRecipes and this is my simplified version of it. Enjoy!

Baked Seabass with Homemade Garlic Butter and Herb Bread Crumb Topping image

Provided by Dave Lieberman

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 8

5-ounce sourdough bread or other leftover bread
1 tablespoon butter, plus 1/2 stick unsalted butter
4 (6-ounce) sea bass fillets
Salt and freshly ground black pepper
1 lemon, zested and juiced
Few sprigs thyme, leaves removed
3 cloves garlic, smashed
1 cup fresh parsley leaves

Steps:

  • Preheat oven to 350 degrees F.
  • Pulse the bread in a food processor to get slightly coarse bread crumbs.
  • Coat a casserole dish just large enough to hold the fillets with 1 tablespoon butter. Place the fillets in the dish and season with salt, pepper, lemon zest and juice, and thyme leaves.
  • Melt the remaining 1/2 stick of butter in a large skillet with the smashed garlic. As soon as the butter starts to bubble, turn off the heat and let the garlic infuse the warm butter.
  • Remove the garlic chunks from the butter. Add the bread crumbs and lightly toss until all the butter has been absorbed. Turn the heat off, stir in the parsley and season, to taste, with salt and pepper.
  • Spread a layer of bread crumb mixture over the top of each fillet and bake for 12 to 15 minutes until bread crumbs are golden brown and fish is cooked through.

Oven-Roasted Sea Bass With Green Tahini & Pomegranate Recipe Recipe - (4.8/5) image

Provided by ltrodrigu

Number Of Ingredients 15

For the Sea Bass:
4 sea bass fillets, pin bones removed
Coarse sea salt
Freshly ground black pepper
4 tablespoons olive oil
2 tablespoons coarsely chopped flat-leaf parsley
Zest of 1 lemon, plus 4 lemon wedges, for serving
2/3 cup pomegranate seeds (from about half a pomegranate)
For the Green Tahini Sauce:
2/3 cup tahini
2/3 cup water
5 tablespoons fresh lemon juice
2 cloves garlic, crushed
1/2 teaspoon salt
1/2 cup tightly-packed flat-leaf parsley

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper. Generously season fish with salt and pepper, then lay it, skin-side down, on baking sheet. Drizzle fillets with oil, place in oven and bake until firm and skin bounces back when poked with a finger, 6-7 minutes. Meanwhile, make green tahini sauce: Process all ingredients, except parsley, in a food processor or blender until smooth. If too thick, add more water, 1 tablespoon at a time, and process until desired consistency is reached. Add parsley and process 2 seconds more. Taste and adjust seasoning if needed. Place 1 fillet and 1 lemon wedge on each plate and spoon ½ of tahini sauce generously over top of fillets. (Leftover sauce can be stored in a covered container in the refrigerator for up to 2 days.) Garnish with parsley, lemon zest and pomegranate seeds.
