OVEN KALUA PORK

Oven Kalua Pork image

Fire up the tiki torches -- it's time for a luau! This delicious slow-roasted pork is rubbed with sea salt and liquid smoke to recall the glorious flavors of pig cooked in a traditional Hawaiian imu. Once cooked and cooled, it can be shredded and served with poi, yams or even on a bun. You may use ordinary sea salt for this recipe if the Hawaiian variety is unavailable.

WHOLE KAHLUA PIG ROASTED IN A SAND ENCLOSED OVEN FOR A LUAU

Whole Kahlua Pig Roasted In A Sand Enclosed Oven For A Luau image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 10h30m

Yield 25 to 40 servings

Number Of Ingredients 15

Shovels, as needed
15 cubic feet Lava river rocks (lava rocks are porous) to be pre-heated
1/2 cord wood
6 to 8 sheet metal panels measuring approximately 4 feet square (these will retain the heat without being consumed by the fire)
Metal fire tongs to move rocks, panels, wood
Fire mitts to protect your hands from the heat
Safety goggles and protective gear for your body
A large bunch of ti leaves bound together to be used as a "brush" to remove ash from the rocks
A stretcher constructed with 2 (8-foot by 2- by 6-inch) pieces lumber for the wood handles, connected by 2 (2- by 6-inch by 3- to 4- feet) pieces wood, and an affixed support platform of plywood (3/4-inch by 4-feet by 3- to 4-feet)
15 feet of 4 foot high heavy gauge chicken wire temporarily affixed to the platform part of the stretcher to hold the pig closed after adding the rocks to the carcass
14 gauge wire as needed to secure the chicken wire
Wire cutters
1 entire head-on pig carcass, innards removed
Banana "stumps" to place between the pig meat and the hot coals to prevent the flesh from burning
Another large bunch of ti leaves, hard stalks snapped out, to be used like aluminum foil to steam the pig

Steps:

  • Dig a pit in the sand 2 feet deep and 6 feet in diameter. Add the river rocks and cover with enough of the wood to get the fire underway to heat the rocks. (You will add the additional wood as needed.) Start the fire (to heat the rocks to 800 degrees F). Add the metal panels on top of the fire to contain heat without smothering the fire.
  • Using assistance place the gutted pig in the supine position on the stretcher-like platform and wrap the affixed chicken wire around to mostly secure the pig, but leaving enough room to be able to put the heated lava rocks inside the body cavity.
  • Place some banana "stumps" in the body cavity of the pig to serve as a buffer between the hot coals and the pig meat to prevent the flesh from burning.
  • Protecting your face, hands, and body with proper gear and using safe equipment, remove enough of the metal panels from the fire to retrieve the heated rocks with fire safe tongs. Someone will use heavy fire mitts to hold the rocks in a pair of tongs, while the other person uses the ti leaves "brush" to dust off the ash. The rocks with the ash removed are then placed one-by-one in the cavity of the pig so it will cook from the inside out with dry heat. Place some additional banana "stumps" in the body cavity of the pig to serve as a buffer between the hot coals and the pig meat to prevent the flesh from burning. The carcass of the pig is then closed with chicken wire and additional metal wire as needed to secure the chicken wire. Remove the attachments that have been holding the chicken wire to the stretcher. Transfer the pig to sit atop the metal panels of the imu, and use the additional ti leaves like aluminum foil, placing them dull side up, shiny side down in a cross configuration to steam the exterior of the pig with the moisture from the ti leaves.
  • When the pig is cooked through, approximately eight hours, use assistance to remove it from the fire, let rest for 30 minutes, then carve it down. The cheeks of the pig should be reserved for the most honored guest.

OVEN-STYLE KALUA PORK OR PIG

Oven-Style Kalua Pork or Pig image

The mother of all invention is need. Having retired after a lifetime in Hawaii and moving to Arizona, I had to figure out how to make the foods that we were familiar with. With Kalua Pig, think of an uber moist, tender, juicy, salty, smoky pulled Pork, but WAY BETTER. This dish freezes beautifully. I normally make at least a 3-4 pound Pork Butt for us two; portion it all off as ½ cup per serving, pack & freeze.

Provided by kaneohegirlinaz

Categories     Meat

Time 4h5m

Yield 1-8 lbs.

Number Of Ingredients 4

1 -8 lb pork butt
1 -4 tablespoon course sea salt
3/4-6 tablespoon liquid smoke
banana leaf, enough to cover the meat

Steps:

  • Each Pork Butt weighs in differently. For each pound of Pork use: ½ tablespoons Salt & ¾ tablespoons Liquid smoke (I use Hawaiian Salt and the Mesquite Flavor liquid Smoke, that tastes more like the real thing).
  • Pre-heat the oven to 500?.
  • Rub the Liquid Smoke all over the meat and then sprinkle evenly with the Sea Salt .
  • Wrap the meat, Burrito style, in your leaves and then in Heavy Duty Foil.
  • Place in a baking pan/dish and cover tightly with more foil.
  • In it goes to the oven for 30 minutes, then reduce the heat to 325?.
  • Bake for an additional 3 ½ hours.
  • Allow to cool, unwrap and discard the foil and leaves (save any juices).
  • Shred the meat how you like, either by hand or using two forks, combining it with those lovely juices.
  • Serve warm, the way we do in Hawaii, with steamed White (or Brown) Rice. MMM! ONO!
  • **Cook's Note: Banana Leaves can be found in Ethnic markets in the freezer section. Of course, if you're lucky enough to find Green (not multi-colored) Ti Leaves, that would make it truer to the Imu-Cooked (underground pit-oven) Kalua Pig.

3-INGREDIENT KALUA PORK (INSTANT POT OR OVEN)

3-Ingredient Kalua Pork (Instant Pot or Oven) image

Kalua pork (also called kalua pig) is a popular Hawaiian dish you can easily make at home in the oven or with an Instant Pot (or any pressure cooker). 3 ingredients, super easy! Cook, shred, and eat with rice ^_^

Provided by Kathy YL Chan

Categories     Hawaii Recipes

Time 1h40m

Number Of Ingredients 4

3 pounds boneless pork butt, cut into 3 pieces
1 tablespoon Hawaiian sea salt (or regular sea salt)
1 tablespoon liquid smoke
1 cup water

Steps:

  • Cut the pork butt into 3 pieces:
  • Press the "saute" button on the Instant Pot. When the pot is hot, add a little oil and brown the pork pieces on all sides. Remove pork onto a plate and turn off the Instant Pot.
  • Add the water to the Instant Pot. Stir to scrape up all the brown bits (that's the good stuff!) on the bottom of the pot.
  • Add the liquid smoke and sea salt, and stir to mix.
  • Place the pork pieces back into the Instant Pot. Cover and select the 'High-Pressure." Cook for 90 minutes. Allow pressure to release naturally. This is what the Kalua Pork looks like right after it's finished cooking:
  • Remove the pork to a bowl. Pour the remaining pork drippings/juice into another bowl.
  • Shred the pork, and add back as much juice as you'd like to keep it moist and tender. Traditional way is to shred the Kalua Pork super find, but people like to keep chunkier pieces of pork. Either way is delicious.
  • Serve hot! With a bowl of rice ^_^

Make Hawaiian kalua pig, the main course at any luau, at your home from pork butt purchased at your local supermarket.

Provided by John Fischer

Categories     Entree

Time 5h45m

Yield 10

Number Of Ingredients 4

4 to 5 pound pork butt
2 1/2 tablespoons Hawaiian salt (You can substitute kosher salt, but Hawaiian sea salt is readily available online.)
2 tablespoons liquid smoke
1 banana leaf (substitute 4 to 5 whole, unpeeled bananas)

Steps:

  • Trim any excess fat from the roast.
  • Make several shallow long cuts along the roast or pierce liberally with a fork. (This allows the salt and liquid smoke to penetrate the meat.)
  • Rub with salt and liquid smoke. Wrap the roast with banana leaf or in the absence of same, place whole bananas on top of meat .
  • Cut the ribs from the ti leaves and wrap over the banana leaf. Substitute aluminum foil, if ti leaves are not available. (Ti leaves, however, can often be obtained from your local florist especially on the West Coast).
  • Tie the leaves securely with twine.
  • Roast in a 325 F to 350 F oven for about 45 minutes per pound. When the meat is done, remove the ti leaves, the banana leaf (or bananas) and shred the pork.
