OVEN ROASTED CORN WITH CHIPOTLE BUTTER
You can serve the corn however you like, but if you are up for it try making a simple flavored butter. We love this chipotle butter with cilantro, lime and chipotle peppers in adobo sauce. Chipotles in Adobo Sauce can be found in the international section of your grocery store, usually in a small can.

Steps:
- Heat the oven to 350 degrees F. Place corn husks onto the oven rack and roast for about 30 minutes or until corn is soft.
- In the meantime, make the chipotle butter. Combine softened butter, lime juice, cilantro, chipotle peppers and a generous pinch of salt. Place onto plastic wrap and roll the butter into a log. Place into the refrigerator or freezer until ready to use.
- Remove corn from the oven, peel down the husks, add a slice of chipotle butter and enjoy.
ROASTED CORN WITH FOUR-CHILE BUTTER

- Carefully roast the chile peppers over the flame of your stovetop, on a grill or under the broiler. Using tongs, flip and move them around until their skins are completely charred. Transfer the chiles to a resealable plastic bag, seal the bag and let them steam for 10 minutes. Peel, seed and dice the chiles; set aside.
- Preheat the oven to 375 degrees F.
- Put the corn on a baking sheet, brush with vegetable oil and season with salt and pepper. Roast, turning halfway through, until cooked, 10 to 12 minutes.
- Meanwhile, melt the butter in a small saucepan. Add the diced chiles, chili powder, lime zest and juice, 1 teaspoon salt and 1 teaspoon black pepper and stir. Cook on low for 2 to 3 minutes to allow the flavors to meld.
- Transfer the corn to a serving platter (or a foil pan with a cover if transporting) and pour the chili butter over the corn. To serve, garnish with the chopped cilantro.
CHILE CORN MUFFINS WITH CHIPOTLE BUTTER

- Muffins: Preheat oven to 400 degrees F. Spray 2 (24-count) mini-muffin pans with canola oil cooking spray; set aside.
- In a medium mixing bowl stir together all ingredients until blended. Using a tablespoon, spoon batter into mini-muffin tins, filling to the rim. Bake in preheated oven 15 minutes or until golden brown.
- Butter: Combine all ingredients in small bowl; beat until light and fluffy. Serve with corn muffins.
- NOTE: For standard 2 1/2-inch muffins: spoon batter into 18 to 20 muffins cups; fill 2/3 full. Bake in preheated oven 16 to 18 minutes.

- Add corn to a 6- to 8-quart pot of boiling water. Return water to boiling, then cover and remove from heat. Let stand 10 minutes. Transfer corn with tongs to paper towels to drain.
- Stir together mayonnaise and chiles in a small bowl.
- Heat skillet over moderately high heat until hot, then roast corn in 2 batches, turning occasionally with tongs, until blackened in spots, about 5 minutes per batch. Cut corn crosswise into 2-inch sections with a sharp knife and serve with mayonnaise and lime wedges.
