BROWN SUGAR GLAZED CARROTS

Steps:
- Preheat oven to 220C/425F (standard) or 200C/400F (fan).
- Cut carrot on the diagonal into 4cm / 1.75" lengths. Halve thicker end so they are all roughly the same width.
- Toss in a bowl with sugar, butter, garlic, oil, salt and pepper. Pour onto tray, spread out.
- Roast 15 minutes. Toss, then roast a further 10 minutes until soft and caramelised on the edges with plenty of glaze left on the tray.
- Toss carrots in the glaze, sprinkle with parsley if using. Serve warm.

Steps:
- Preheat the oven to 400 F and line a rimmed baking sheet with parchment paper or a silicone mat.
- Add the butter, brown sugar, garlic, balsamic vinegar, and thyme to a small saucepan over medium heat, melting the butter and stirring until all ingredients are combined.
- Spread the carrots onto the baking sheet in a single layer and pour the brown sugar sauce evenly over the carrots, then toss to coat.
- Bake in the preheated oven for 20 to 25 minutes until the carrots are tender crisp.
- Optionally garnish the carrots with fresh thyme and serve.

- Heat the oven to 180/gas mark 4.
- Cook the carrots in boiling water for 10-15 minutes until they are starting to soften, but still have some bite. Drain and pat dry.
- Spread the carrots out in a roasting tin. Drizzle with the oil and vinegar, then sprinkle with sugar. Season well with sea salt and black pepper, then roast for about 45 minutes, turning occasionally until the sugar has caramelised and the carrots are soft and tender.
SUGAR-GLAZED ROASTED CARROTS
This is from Cook's Country, America's Test Kitchen, Feb/March 2006. Don't use baby carrots in this. They won't roast properly. I liked decreasing the sugar about one-third.

Steps:
- Put oven rack in the middle position. Preheat to 475 degrees. Heat rimmed baking sheet for 10 minutes.
- Toss carrots, melted butter, sugar, salt and pepper until thoroughly combined. Remove pan from oven. Please carrots in single layer on it. Roast until they're beginning to brown, about 15 minutes.
- Remove pan from oven, toss carrots to redistribute and keep roasting until tender and deep amber in color, with some very darkened spots (but not all over)--about 3 minutes.
OVEN GLAZED CARROTS
These are nice and convenient to make when roasting a chicken or pot roast in the oven. I usually make it with baby carrots but sliced carrots may also be used instead of strips. Seasoning is very simple, which I'll often change depending on the meal.

- Cut carrots into strips 1/4 inch thick and about 1 1/2 inches long.
- Place in a buttered casserole dish and sprinkle with salt and pepper.
- Dot with brown sugar and butter.
- Cover.
- Bake at 350 degrees for 1 1/2 hours.
