MEATBALLS & GRAVY
This is such a delicious and comforting meal. It is really very easy and I recommend making the meatballs rather than using frozen ones. I like to serve buttered noodles as a side or over mashed potatoes! Recipe is from Family Circle.

Steps:
- Heat oven to 350 degrees; place a rack on a baking sheet and coat with nonstick cooking spray.
- In large bowl, mix ground beef, egg, bread crumbs, garlic salt, 1/2 t Italian seasoning, 1/4 teaspoon of the black pepper.
- Form into 40 meatballs, about 1 level tablespoon each.
- Place on prepared rack over baking sheet.
- Bake meatballs at 350 degrees for 20 minutes.
- Meanwhile, heat olive oil in a large nonstick skillet over medium-high heat.
- Add onion and mushrooms and cook 6-7 minutes, stirring occasionally or until lightly browned.
- Sprinkle flour over the mixture, stir and cook 1 minute.
- Gradually stir in beef broth until flour is completely incorporated into the liquid.
- Bring to a simmer.
- Stir in the remaining 1/2 t Italian seasoning, 1/4 t pepper and the nutmeg.
- Add salt to taste.
- Add meatballs to the skillet and reduce heat to medium low.
- Cover and simmer for 10 minutes, stirring occasionally.
- Serve with buttered egg noodles, if desired.

OVEN MEATBALLS WITH CREAM OF MUSHROOM GRAVY
My mother used to make this, its quite affordable, and really comforting....goes exceptionally well with mashed potatoes.

Steps:
- Mix together the meatball ingredients (listed at the top) and form 2.5-3 inch meatballs. put them in an oven acceptable baking dish.
- Pour the mushroom soup into a pan, use the soup can to measure out 1/2 can of water, and 1 can of milk.
- Put the water and milk in the saucepan.
- Stir these three ingredients over medium heat, until all the lumps are out, and the gravy is smooth.
- Pour the gravy over the meatballs,
- cover the dish with aluminum foil and cook the meatballs at 350 degrees for one hour (depending on your oven, you might want to break one open to assure its done)
- Serve with mashed potatoes and steamed veggies!

ROASTED ITALIAN MEATBALLS

- Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper.
- Place the sirloin, pork, and veal in a large mixing bowl and lightly break up the meats with a fork and your fingertips. Add the bread crumbs, Pecorino, Parmesan, garlic, parsley, 2 teaspoons salt, and 1/2 teaspoon black pepper. Add the eggs, wine, and 3/4 cup water and combine lightly but thoroughly.
- Measure out 2-ounce portions of the mixture (I use a rounded 1 3/4-inch ice cream scoop) and roll each lightly into a ball. Place one inch apart on the prepared sheet pans. Brush the meatballs with the olive oil.
- Bake the meatballs for 25 to 30 minutes, until lightly browned. Pour the marinara into a large pot and bring to a simmer. Carefully add the meatballs and simmer for 10 minutes, until heated through.
- To serve with polenta, spoon a puddle of creamy Parmesan polenta on one side of each dinner plate. Spoon 1 or 2 meatballs plus a puddle of tomato sauce on the other side, allowing them to combine in the center of the plate. To serve with spaghetti, distribute among shallow pasta bowls. Spoon the meatballs and sauce onto the pasta. Sprinkle with extra Parmesan and serve hot.
- Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.
OVEN MEATBALLS AND GRAVY
Made this last night after watching Tyler's Ultimate. I just changed it up a little bit. These are so incredibly tender and moist. I served with plain white rice, vegetable and garlic bread.

Steps:
- Cube french bread and soak in milk about 10 minutes or until soft.
- Crumble meat in large bowl and add eggs, onion, garlic Italian seasoning, salt and pepper.
- Squeeze milk out of bread and crumble bread into meat mixture.
- Mix well.
- Shape into balls and roll in bread crumbs.
- In dutch oven, heat olive oil.
- Brown meatballs in batches, turning to brown all sides.
- After browning, drain off all but about 1 tbsp oil and add butter and beef broth to pot.
- Add meatballs back in.
- Cover and bake in a 350 oven for 45 minutes-1 hour.
- When meatballs are done-- remove to platter and keep warm.
- Add cornstarch to the beef broth (I pour about 1/2 cup of broth into measuring cup and add the cornstarch, then pour back into pot).
- Bring to a boil over medium heat and cook, stirring until thickened for gravy.
- Serve over meatballs.
PORK MEATBALLS AND MASH WITH ONION GRAVY
Pork meatballs with sage and onion stuffing cooked in an onion gravy served with mash and mushy peas

Steps:
- Tip mince into a bowl and mix / mash with a spoon add an egg and mix sprinkle over 1/2 a pack of sage and onion stuffing along with a bit of salt and pepper mix well with spoon then by hand until combined into a ball
- Put 1 tbsp of flour on a dinner plate and spread with a spoon to make an even layer
- Divide the ball into 4 and make 3 balls from each roll in flour and by hand and place on a second plate from 1st to 12th then put plate in fridge for 15-30mins
- Wash, peel, and cut potatoes for mash put in saucepan with water
- Start frying meatballs in a frying pan and chop 1 onion and slice 1 add onions to a casserole pot and gently fry When meatballs are sealed/ cooked add to pot
- Mix gravy and add to casserole pot to cover the meatballs and onions simmer on low 1/4 heat or place in oven for 30 mins - 1hr turn on potatoes now if cooking for an hour
- Cook mushy peas in saucepan for 5 mins Drain mash potatoes with butter and cheese then serve mash with meatballs on top followed by peas
EASY OVEN MEATBALLS
I never could get the hang of making spaghetti and meatballs without it becoming spaghetti with meat sauce. Every time I tried to cook meatballs in a frying pan they just crumbled into bits. It was embarrassing. I was so glad when my Dad showed me how to do this. This is a simple recipe for making meatballs in the oven, and a few ideas how to use them. Once baked, you can freeze the meatballs individually on a cookie sheet, then toss into freezer bags for later use. Just pull out whatever amount you'll need to feed the crew. Don't be scared about the lengthy instructions. The end bits are ideas for using the finished meatballs. And you know how I like to ramble ;-)

- Preheat oven to 375 degrees Fahrenheit.
- Combine milk, onion, eggs and salt.
- Stir in bread crumbs and let stand for 5 minutes.
- Crumble in the ground meat, and mix thoroughly with your hands.
- Threaten to touch someone with your gross meat-covered hands (optional).
- Shape into 8 dozen small meatballs 1 to 1 1/2 inches in diameter.
- Place on baking pans and bake for 20 to 30 minutes, or until done- if you're not sure, cut one in half to check.
- If you don't have enough oven space or baking pans to bake all of this at once, please put the remaining raw meat mixture in the refrigerator until you can bake it.
- Let's be careful out there.
- Of course, using lean meat is the healthiest, but if the meat you're using is particularly fatty, I have found that baking the meatballs on a rack placed over a broiler pan or other shallow pan will allow most of the fat to drip away.
- If you do this, it's best to put a little water in the bottom of the pan or the fat may start to smoke.
- I do this in the oven, not the broiler.
- If you do try broiling meatballs, let me know how it turns out, for you are braver than I.
- MEATBALLS TO DIE FOR- This is an idea my husband came up with.
- Put your already baked meatballs in a baking dish.
- The more shallow the pan, the shorter time this will need to bake.
- Now, take a can of cream of mushroom soup, and a can of cream of shrimp soup.
- Mix them together, and add about 1/2 cup milk, just enough to let you mix it smoothly.
- Pour the soup mixture over the meatballs evenly.
- Bake this at 350 for about an hour.
- You want the sauce to get real thick and rich.
- We usually serve this over rice, but it can go over noodles or mashed potatoes, or on bread or a roll for a hot sandwich.
- I have also made it in a crockpot, cooking it on low for about 8 hours.
- Cooking on high turns this to mush.
- Still tastes good, but not pretty for serving to guests.
- This dish has been taken to many potlucks and served to guests numerous times, and there has never once been any leftovers-- so I can't say how it tastes re-heated!
- OTHER IDEAS Of course, it goes without saying (but I sometimes tend to state the obvious) that these are a perfectly easy way to make spaghetti and meatballs.
- Make your sauce (or open the jar) and gently heat the meatballs with the sauce.
- Using that same sauce, or using pizza sauce, or barbecue sauce, serve the meatballs on Hoagie/Submarine/Poorboy/Grinder8Ô (Insert Appropriate Regional Term Here) Rolls, with sauce and cheese of your choice.
- Heat in a sweet and sour sauce and serve on toothpicks as hors d'oerve (horse doovers?) or over steamed rice.
- A friend of mine used to make a simple barbecue sauce by mixing a jar of currant jelly with a bottle of chili sauce.
- Warm meatballs in this mixture, or use my Bobbie-Q Sauce recipe, and serve over in sandwich rolls, or over hot cooked rice, potatoes or noodles.
- On a hors d'oerve buffet, you can serve plain hot meatballs with an assortment of sauces for dipping.
- Provide toothpicks and small plates.
