GRILLED HAM, EGG AND CHEESE BREAKFAST SANDWICHES FOR A CROWD



Grilled Ham, Egg and Cheese Breakfast Sandwiches for a Crowd image

Why stay stuck in the kitchen when you can grill breakfast for a crowd instead? Not only are these pull-apart sandwiches easier to make outdoors, they are deliciously gooey and satisfying. Trust us: When you flip one side of the sandwich over onto itself, there will be lots of oohs and ahhs.

Number Of Ingredients 8

10 large eggs
4 scallions, finely chopped
Kosher salt
One 12-pack pull-apart dinner rolls
2 tablespoons unsalted butter, at room temperature
6 slices American cheese
4 slices deli ham, finely chopped
Hot sauce, such as Tabasco, for serving

Steps:

  • Preheat a grill to medium heat.
  • Place two 2-foot pieces of nonstick aluminum foil next to each other so the long sides are just touching. Pinch the edges together and then fold them over several times to seal and form one large piece of foil. Line a rimmed baking sheet with the foil and set aside.
  • Crack the eggs into a large bowl and whisk well. Add the scallions, 1 teaspoon salt and 2 tablespoons water and whisk to combine.
  • Split the whole pack of attached dinner rolls in half horizontally using a serrated knife. Set aside.
  • Put the prepared baking sheet on the grill and add 1 tablespoon of the butter. Cover the grill and let the butter melt, about 3 minutes. Spread the butter all over the baking sheet using a pastry brush and then pour on the egg mixture. Place the attached roll halves cut-side down and side by side on top of the eggs and cover the grill. Cook until the eggs are completely set, about 10 minutes.
  • Meanwhile, butter another baking sheet with the remaining 1 tablespoon butter. Using heatproof mitts, top the rolls with this baking sheet and invert the whole thing onto the grill. Remove the top baking sheet and peel back the foil. Top half the eggs with the cheese and the other half with the ham. Cover the grill and cook until the cheese is melted, about 5 minutes. Using a large metal hamburger spatula, flip the bottom half of the rolls onto the other half, so the rolls are top-side up. Serve with hot sauce.

This gooey and crunchy grilled cheese is perfect for feeding a crowd and easier to whip up then a whole loaf's worth of individual sandwiches.

1 loaf unsliced white bread or brioche loaf (about 1 pound 5 ounces)
1/4 cup mayonnaise
1/3 pound sliced sharp Cheddar
1/3 pound sliced Monterey jack cheese
1/3 pound sliced low moisture part-skim mozzarella

Steps:

  • Put 1 baking sheet on the center rack of the oven and preheat to 350 degrees F.
  • Slice 1/4-inch of the crust off the top and bottom of the loaf of bread. Split the loaf evenly in half, horizontally. Cut a piece of parchment paper large enough to accommodate both halves of bread and put both the top and the bottom on the parchment, cut-side up so the inside of the loaf is visible.
  • Scoop about a 1/4-inch of the soft middle of the loaf out. Spread the mayonnaise evenly on the crustless top of each half, then flip them over so the mayonnaise-side is face down on the parchment.
  • Evenly distribute the 3 cheeses between the 2 bread halves. Use the parchment to transfer your grilled cheese to the preheated baking sheet, using a spatula if the bread is sticking, then remove and discard the parchment. Bake until the crust is golden brown and crunchy and the cheese is melted, about 18 minutes. Remove from the oven and immediately sandwich the 2 halves with the cheese in the middle. Let rest about 10 minutes. Slice and serve while hot.

1 lb mild cheddar cheese, shredded (we like sharp cheddar)

Steps:

  • Position oven racks to the upper-middle and lower-middle position; heat oven to 475°.
  • Brush each side of the bread slices lightly with the melted butter and spread them out in a single layer over two baking sheets.
  • Toast the bread in the oven to a light golden brown, 10-15 minutes, rotating the baking sheets from top to bottom halfway through the baking time.
  • Assemble eight sandwiches, each filled with 1/2 cup of the shredded cheese, making sure that the more toasted-looking sides of the bread are facing outward.
  • Lay the sandwiches on a baking sheet and press lightly on each of them.
  • Cover the baking sheet tightly with foil and bake until the cheese is thoroughly melted, 5-10 minutes.
  • Make ahead--the bread can be toasted, wrapped tightly with plastic wrap, and kept at room temperature for up to 24 hours in advance.

Everyone loves a grilled cheese, but when making sandwiches for a crowd, who wants to stand over the stove making them one by one? Not me! My hack of baking them on a sheet pan in the oven means the sandwiches will be ready at the same time, and I can enjoy hanging out with my friends and family while the oven does all the work.

Number Of Ingredients 15

12 slices assorted bread, such as Texas Toast, pumpernickel, and sourdough
1 stick (8 tablespoons) salted butter, at room temperature
12 slices assorted cheese, such as American cheese, Cheddar and Muenster cheese
1 cup Kardea's Pimento Cheese, recipe follows
Toppings, such as sliced roasted red peppers, pickles, sliced ham, sliced turkey, sliced tomatoes, fresh basil, sliced red onion and/or pulled pork
8 ounces extra-sharp yellow Cheddar, shredded (about 2 cups)
8 ounces cream cheese, at room temperature
4 ounces white Cheddar, shredded, preferably Vermont Cheddar (about 1 cup)
4 ounces diced pimentos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Arrange a rack in the bottom of the oven, place a large rimmed baking sheet on the rack and preheat to 450 degrees F.
  • Spread one side of 6 slices of bread with 4 tablespoons of the butter and place, buttered sides down, on a second large rimmed baking sheet.
  • Top each buttered bread slice with 1 slice of cheese or some of Kardea's Pimento Cheese and your desired toppings. Top with another slice of cheese and the remaining 6 bread slices. Spread the tops of the bread slices with the remaining 4 tablespoons of the butter.
  • Carefully remove the hot baking sheet from the oven, and place it on top of the uncooked sandwiches, rimmed edges up. Press down on the sandwiches.
  • Place the stacked baking sheets in the oven on the bottom rack. Bake until the cheese is melted and the bread is golden brown and crispy, 10 to 12 minutes. Serve immediately.
  • Add the yellow Cheddar, cream cheese, white Cheddar, pimentos and mayonnaise to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika, salt and pepper and mix until thoroughly combined.

It went over well. The recipe is for 1 sandwich, but I'm going to bet all the wonderful chefs on Recipezaar know how to make more at one time.

2 slices American cheese
2 slices bread

Steps:

  • Preheat oven to 450°F.
  • Lightly butter one side of each slice of bread.
  • Place on a cookie sheet butter side down.
  • Place your favorite brand of American sliced cheese (or any other kind you prefer).
  • Place other piece of bread on top, butter side up.
  • Bake for approximately 6 minutes.
  • Take out of oven and flip.
  • Bake additional 2-3 minutes until done.

6 tablespoons mayonnaise
12 slices soft white sandwich bread
3 cups coarsely grated cheese (such as Monterey Jack, cheddar, mozzarella, or a mix; about 12 ounces)
Kosher salt, freshly ground black pepper
Special equipment:
2 (13x18") rimmed baking sheets

Steps:

  • Position rimmed baking sheet on a rack in middle of oven and preheat to 450°F. Spread about 1 1/2 tsp. mayonnaise on one side of each slice of bread. Arrange 6 slices, mayo side down, on second inverted rimmed baking sheet. Mound 1/2 cup cheese in the center of each slice, season with salt and pepper, and top each with remaining bread slices, mayo side up.
  • Using oven mitts, carefully remove preheated baking sheet from oven and place, rimmed side up, on top of sandwiches, then, holding both rimmed baking sheets together, return to oven. Bake until bread is browned and cheese is melted, about 15 minutes. Carefully remove baking sheets from oven and transfer sandwiches to a cutting board. Cut into pieces and serve.

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Butter one side of 9 slices of bread, and place butter-side down on a baking sheet. Arrange cheese on each slice of bread. Spread butter on 9 remaining slices of bread, and place them buttered-side up on top of the cheese.
  • Bake in preheated oven for 6 to 8 minutes. Flip the sandwiches, and bake an additional 6 to 8 minutes, or until golden brown.

15 thin slices American cheese

Steps:

  • Place a sheet pan in the oven on the middle rack and preheat oven to 450°F.
  • Arrange 5 slices of bread on a cutting board. Spread tops with a thin layer of mayo.
