3 skinless, boneless chicken breasts, cut into strips
salt and ground black pepper to taste
½ cup all-purpose flour
2 teaspoons Italian seasoning
1 teaspoon ground paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
3 eggs
1 cup bread crumbs
½ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  • Season chicken strips with salt and pepper.
  • Combine flour, Italian seasoning, paprika, garlic powder, and onion powder in a resealable plastic bag. Add chicken strips and seal the bag. Shake the bag until chicken strips are well coated with the flour mixture.
  • Beat eggs together in a small bowl. Combine bread crumbs and Parmesan cheese in another bowl.
  • Dip each chicken strip into egg until well coated, then dip in bread crumb mixture to coat. Place on the prepared baking sheet.
  • Bake in the preheated oven, flipping halfway, until golden brown and no longer pink in the center, 35 to 40 minutes.

These oven fried chicken tenders TRULY come out just like they've been fried! They are a beautiful golden brown all over and super crunchy. Make these with chicken tenderloins or cut chicken breast into tenderloin length strips! This is the parmesan flavoured version of these Truly Golden Crunchy Baked Chicken Tenders I shared last year.

1 cup panko breadcrumbs ((Note 1))
Olive oil spray
1/2 cup grated parmesan cheese (, store bought (Note 2))
1 egg
1 tbsp mayonnaise* ((I use whole egg mayonnaise))
1½ tbsp dijon mustard* ((or any other mustard of choice))
1 garlic clove (, minced*)
2 tbsp plain flour
Salt & pepper
500 g /1 lb chicken tenderloins ((or chicken breast cut into ⅔" / 1.5cm thick slices, lengthwise))
Oil spray

Steps:

  • Preheat oven to 200C/390F.
  • Spread panko breadcrumbs on a baking tray. Spray lightly with oil. Bake for 3 to 5 minutes or until LIGHT golden.
  • Scrape into a bowl. Add parmesan and mix.
  • In a separate bowl, whisk together Batter ingredients with a fork. Add chicken and mix to coat.
  • Optional: Place a rack on the baking tray (Note 3)
  • Pick up chicken with left hand and place in breadcrumbs. Use right hand to sprinkle with breadcrumbs, press to adhere. Use right hand to transfer to baking tray. Repeat with remaining chicken. Spray lightly with oil.
  • Bake for 15 minutes for small tenders, 18 minutes for large ones. No longer than 20 minutes, otherwise they will begin to lose juiciness.
  • Serve immediately with Ranch or Honey Mustard Dip if desired (Note 4).

1/2 cup milk
1 large egg
3 tablespoons lemon juice
1 teaspoon grated lemon zest
2 cloves minced garlic
Salt and pepper to taste
1 lb boneless skinless chicken breasts, cut into 2x4 in strips
3 tablespoons coconut oil
3/4 cup freshly shredded Parmesan cheese
1 cup panko breadcrumbs
2 tablespoons minced fresh parsley plus more for garnishing
Additional lemon juice, optional

Steps:

  • In a large bowl, whisk milk, egg, lemon juice, zest, garlic, and salt and pepper to taste until smooth. Place chicken strips into milk mixture and submerge fully. Allow chicken to marinate 45 minutes.
  • Preheat oven to 425F. In a shallow bowl, combine Parmesan, breadcrumbs, parsley, and salt and pepper to taste. Remove chicken strips from marinade and dredge in Parmesan mixture, coating both sides.
  • Place coconut oil on a large baking sheet and place in oven 3-4 minutes until melted and hot. Arrange breaded chicken tenders in a single layer on baking sheet. Bake at 425F 12 minutes, then flip tenders and cook on opposite side an additional 10-12 minutes until chicken registers 160F and breading is crispy and golden. Squeeze additional lemon juice on chicken if desired and sprinkle with fresh parsley. Serve hot and enjoy!

1 cup dried bread crumbs
⅓ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Crush the garlic clove and combine with 2/3 cup melted butter in a shallow baking dish. In another dish combine the bread crumbs, Parmesan cheese, parsley, salt and pepper. First dip the chicken into the butter and then coat it in the bread crumb mixture.

Okay, so sometimes being out of something turns out to be a good thing! When I went to make my traditional fried chicken tenders I realized that I was out of bread crumbs and was also out of bread to make bread crumbs. Looking around I discovered a box of parmesan/garlic crackers and crushed them up in place of the crumbs. Absolutely, positively DELICIOUS! The kids now claim this is the only way to make chicken tenders! Hope you enjoy!

1 lb chicken tenders
1 cup flour
1 teaspoon garlic powder
1 teaspoon pepper (we like to use white pepper but regular black will work fine too)
2 eggs, beaten
1/2 cup parmesan cheese, grated
3/4 cup cracker, crushed (I used Parmesan Garlic Cheez-its)
oil, for frying

Steps:

  • Combine flour with garlic powder & pepper in a bowl.
  • Crack eggs and beat till throughly combined in a seperate bowl.
  • Combine parmesan cheese and crushed crackers in a third bowl.
  • Start by coating the chicken pieces in flour, then dip in egg wash and then dip into cracker mix.
  • Set coated chicken onto a plate. When finished coating all the chicken, put the plate in the fridge for at least 30 minutes to let the coating "set-up".
  • In a large fry pan, heat 1/2" of oil to medium high heat (I don't use a thermometer but I'm guessing 350 degrees).
  • Pan fry in small batches till golden brown on all sides - depending on size of your tenders, 5-6 minutes per side.
  • Remove to a paper towel lined plate till all the chicken is done.
  • We served it with pasta and spaghetti sauce but i'm guessing it would go with about anything.
