Steps:
- Preheat oven to 275 degrees (135 degrees C).
- Place roast in a large roasting pan and scatter chopped onions over.
- In a large bowl, combine Worcestershire sauce, liquid smoke, garlic powder, salt and pepper. Pour in beer, stir and add to roasting pan. Add water to the top of beef.
- Cover and cook in oven at 275 degrees F (135 degrees C) for 4 to 5 hours.
- When meat is cooked, shred meat with 2 forks, add barbecue sauce and mix well.

- Preheat oven to 325 degrees F (160 degrees).
- Sprinkle both sides of brisket with salt, pepper and garlic powder. Place in a large covered roasting pan.
- Cook covered with no water at 325 degrees F (160 degrees C) allowing 1 hour per pound.
- Before last hour of cooking, remove brisket and slice. Return slices to pan and add barbecue sauce mixed with water. Cover meat with sauce, cover, and cook 1 hour longer.

- sprinkle salt and pepper on the roast.
- place roast in a large zip lock bag and place in the fridge for 4 hours
- remove roast from the fridge and add another (think layer) of pepper on the fat cap.
- slice 5 small holes in roast and insert garlic cloves
- add roast to disposable tin pan and add to pellet smoker set at 250 degrees
- after 4 hours (or until roast hits 130 degrees) remove roast from pellet smoker
- wrap the beef roast in foil, wrap in towel and rest for 30+ minutes.
FALL OFF THE BONE BARBECUED BABY BACK RIBS
The ribs come clean off the bone after cooking in the oven over low heat, then a quick brush with your favorite barbecue sauce and grilled for five to six minutes. These are finger licking good and get rave reviews everytime I make them! Easy!

- Mix Brown sugar with spices and set aside. Pre-heat oven to 275 degrees. Use a 2 piece broiler pan, the lower half filled with very hot water, then layer racks of rib on the top. Ribs can be left whole in racks and layered, I have done 6 at a time, they still come out great. Rub the brown sugar mixture liberally over each rack. Then using heavy duty tin foil, cover the pan so that no heat escapes. I usually double wrap the ribs. Set in oven for 3 hours and can be up to 5 hours. Remove foil carefully and cut ribs into a manageable length to grill them. If you try to grill the rack without making it smaller, some of the ribs will fall apart and the meat will literally fall off the bones! Brush with your favorite barbecue sauce, I like homemade or Sweet Baby Ray's brand. Grill over a very hot gas or charcoal rill for 2 to 3 minutes per side. Serve with plenty of napkins. These ribs are amazing!
OVEN-BARBECUED BEEF BRISKET
This Oven-Barbecued Beef Brisket is so smokey, tender, and juicy. No one will ever guess it wasn't cooked on the grill.

- Make the rub. Mix all ingredients well in a small bowl and set aside.
- Place oven rack in upper-middle position and heat oven to 275 degrees. Rub dry rub all over brisket and poke holes all over with a fork. Place half of bacon going crosswise in a broiler safe 9 by 13-inch pan (it's best not to use glass). Put brisket fat side down on top of bacon. Lay the rest of the bacon crosswise on top of brisket, wrapping it down around the sides, and tucking any excess under. Cover pan with foil and place in oven for 4 hours.
- Take pan out of oven. Carefully flip brisket over, fat side up. Replace foil and return to oven. Turn off heat and leave brisket in oven 1 additional hour.
- Pour accumulated juices from brisket into large measuring cup or a bowl. Remove bacon from brisket and chop into pieces. Cook bacon in medium saucepan over medium heat for about 5 minutes, until fat has rendered. Add onion and cook until softened, 4-5 minutes. Take off heat and add vinegar and dark brown sugar. Return to heat and simmer until reduced to a syrupy consistency, about 5 minutes.
- Skim fat from accumulated juices and add chicken broth to make a total of 3 cups. Add to mixture in saucepan and reduce until about 3 cups in volume, 8-10 minutes. Take off heat and add ketchup. Mix well and strain if desired. (I like to strain about half the solid pieces out and leave the rest). After straining, add chipotle peppers.
- Turn oven to broil. Brush brisket with 1 cup sauce and broil until top is lightly browned and fat starts to crisp. Cut brisket against the grain into 1/4-inch slices and serve with extra sauce.

- To make the tiger sauce: In a medium bowl, whisk together mayonnaise, horseradish, lemon juice, and garlic. Season with salt and pepper to taste. Transfer to an airtight container and refrigerate until ready to serve.
- To make the beef: In small bowl, mix together salt, black pepper, oregano, garlic powder, onion powder, paprika, and chili powder. Season beef all over with spice mixture. Wrap beef in plastic wrap and place in refrigerator for at least one hour to overnight.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place beef on cool side of grill. Cover grill and position top vent over cool side of grill. Cook until center of meat registers 110°F on an instant read thermometer for rare beef, or 120°F for medium-rare.
- Transfer beef to hot side of grill and cook, turning every minute, until well seared on all sides and center of meat registers 120°F on an instant read thermometer for rare, or between 125-130°F for medium-rare. Transfer beef to a cutting board and let rest for 10 minutes.
- To serve: Cut beef into very thin slices, preferably using a meat slicer. Pile beef onto rolls and top with onion slices and tiger sauce. Serve immediately.

- Additional Items needed: Large Roasting or Sheet Pan, Heavy Duty Aluminum Foil, Butchers String, Large Brown Paper Shopping Bag.
- Tear 3 sheets of aluminum foil large enough to cover and seal meat.
- Place meat in a mixing bowl and pour the soy sauce over meat and being sure to get the soy sauce all over the meat.
- Place meat on the sheets of foil.
- Mix all the dry seasonings together and rub over the top and sides of the meat.
- Bring the first sheet of foil sides up and fold together being careful not to let the liquid run out, Then fold up the ends of the foil to seal, Make sure there are no leaks.
- Continue folding up the remaining sheets of foil one at a time.
- Carefully place the wrapped meat in the bottom of the Brown Paper Bag and fold the bag snugly and tie up with the two pieces of butchers string.
- I like to refrigerate 1-2 hours before cooking, However you can cook right away.
- When ready to cook preheat oven to 225°F.
- Place the meat package (keep it in the foil and paper bag tied)in the roasting pan or sheet pan and cook for 12 hours.
- Pull the packaged meat out and let rest for at least 10 minutes.
- Remove the paper bag and carefully (It's Hot!) open the foil and lift the meat out with a spatula (the meat should be falling apart)and place into a deep container, Retain all the juices, with 2 forks shred the meat well and pour the remaining juices over the meat and stir.
- Serve with sour cream, salsa or whatever ya like.

- Start the day before serving.
- Mix seasonings well and roll the roast in the mixture.
- Pour the liquid smoke over the roast.
- Tear 8 layers of heavy duty foil in approximately 24 inch lengths.
- Wrap the roast in each piece of foil individually, sealing layer each well.
- After using 4 lengths of foil, place roast in a large brown grocery bag and seal with masking tape.

- Heat the oil in a Dutch oven. Add the beef and cook until brown on all sides, 10 to 15 minutes.

- Combine all of the seasoning ingredients in a bowl and rub the mix into the beef. Place the brisket in a roasting pan. Slowly cook the beef for 1 hour, turn the beef and cook one hour more before covering with a tight fitting lid. Continue to cook with the lid tightly in place for 2 1/2 to 3 hours more. This will render most of the fat. Carefully pour off and discard the fat. Allow the beef to rest for 20 to 30 minutes before serving.

- Prepping the Pit. We have an abundance of oak firewood from dead trees, so I am using this wood as our heat source (No cost!). You can use charcoal if you want.
- Start Cooking. Now that the coals are ready, place your grill and meat in the pit. As you may notice, I do have a little flame on the coals, but they went out once I had it buried.
- Cover the Pit. Next, place the sheet metal over the pit and start burying it with the soil from the hole. I start by sealing up the edges first, then I cover the top.
- Smoking Stage. After the meat has cooked for your preferred time, use the shovel to remove the soil from the top of the metal. Keep the soil piled nicely to one side to be used again.
- Done Stage: Chicken. At the end of 1.5 hours of smoking, I felt the chicken was done. Please use whatever method you like to be confident your chicken is completely cooked!
- Done Stage: Brisket. Here is how the brisket looked after 2 hours of smoking: It was tender and had a great smoke flavor. Another success!
- Seasoning Recipe and Meat Prep. Rub Seasoning Recipe: 3 Tbl Chili Powder. 2 Tbl Garlic Powder. 1 Tbl Sea Salt. 1 Tbl Minced Onion (dry) 1 Tbl Cilantro. 1 Tbl Oregano.
- Final Thoughts. So far this process has worked well for chicken and brisket. I am hoping to try pork meats soon. Hopefully for the holidays, I can smoke a whole turkey underground!
