Dairy-Free Coconut French Toast image

This is a dairy-free, rich and hearty version of French toast that is vegan. It uses coconut milk instead of eggs and milk. This recipe may be found on my blog, Olives for Dinner. If you like sweet French toast, cover in Earth Balance®, powdered sugar, and pure maple syrup. If you like a more savory French toast, cover in Earth Balance®, a touch of powdered sugar, and some nutritional yeast.

1 (13 ounce) can unsweetened coconut milk
1 cup soy milk
3 tablespoons garbanzo bean flour
1 tablespoon cornstarch
1 loaf day-old Italian bread, cut into 1 to 1 1/2-inch slices
2 tablespoons olive oil, or more as needed

Steps:

  • Empty coconut milk into a medium bowl. Whisk until well emulsified. Add soy milk, garbanzo bean flour, and cornstarch and stir until the ingredients have blended together. Empty the mixture into a glass baking dish large enough for all of the bread pieces to fit.
  • Dunk the bread in the mixture, making sure all pieces are well covered with the mixture. Cover with plastic wrap and place into the refrigerator, 8 hours to overnight.
  • Heat 2 tablespoons olive oil in a large, flat saute pan or griddle over medium heat for 2 to 3 minutes. Add slices of French toast, working in batches if needed, and cook until golden brown, about 10 minutes. Flip and cook the other side for 10 minutes more. Increase heat to medium-high and flip again; cook until nicely browned, about 5 minutes more per side.

1 (14 ounce) can light coconut milk
3 large eggs
2 tablespoons sugar
1 teaspoon ground ginger
1 tablespoon ground cinnamon
1 teaspoon kosher salt
1 loaf French bread

Steps:

  • Beat eggs in a large mixing bowl until frothy.
  • Add in all ingredients EXCEPT french bread.
  • Slice French Bread into thick slices.
  • Pour egg mixture into large baking dish.
  • Soak bread in egg mixture, flipping the slices after a few minutes to get even absorbtion.
  • Heat skillet on medium-low, and coat with cooking oil or butter.
  • Cook until golden brown on bottom.
  • Flip bread and cook until other side is golden.
  • Remove from pan and keep warm on a plate in a warm oven. Repeat until all bread is cooked.

4 large Granny Smith apples - peeled, cored, and sliced
3 tablespoons white sugar
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground cumin
1 tablespoon lemon juice, or as needed
2 cups plain soy milk
½ cup apple butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
12 (1/2 inch thick) slices soft-crust French bread

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a baking sheet with cooking spray.
  • Coat a nonstick skillet with cooking spray and heat over medium-high heat. Saute apples until softened, 5 to 7 minutes. Reduce heat to medium. Add sugar, cinnamon, nutmeg, and cumin and cook until tender, stirring occasionally, 5 to 10 minutes more. Stir in lemon juice and remove from heat.
  • Blend soy milk, apple butter, vanilla extract, cinnamon, and salt together in a blender until smooth. Pour into a shallow bowl.
  • Coat a nonstick skillet with cooking spray and heat over medium heat. Dip bread slices into soy milk batter, coating evenly. Cook in the skillet until lightly browned, 1 to 2 minutes on each side. Transfer bread to the prepared baking sheet.
  • Bake in the preheated oven until golden brown, about 4 minutes.
  • Place 2 slices of bread onto each serving plate and divide topping among servings.

For the food-allergic people in your life, egg-free, dairy-free French toast casserole! Crispy on the outside, chewy on the inside, it's nice as a brunch item. This is our version of a recipe from a Food Allergy and Anaphylaxis newsletter ( http://www.foodallergy.org/ ). The original recipe called for unflavored rice milk, 1/4 tsp vanilla extract, and milk-free, soy-free margarine, so it can be converted to a soy-free dish as well, though we haven't tried it. I think the critical thing is using bread with a nice, crisp texture; it wouldn't be as good with bread that was soft and squishy!

2 tablespoons soy margarine, melted (milk-free)
1 cup vanilla-flavored soymilk
1/3 cup light corn syrup (we use Karo light corn syrup)
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/8 cup dark molasses
1 (16 ounce) artisan bread (milk-free, egg-free) or 1 (16 ounce) French bread, cut into 1 inch cubes (milk-free, egg-free)
1/2 teaspoon cinnamon (again)

Steps:

  • Pre-heat oven to 400°F.
  • Spray a 9x13" baking dish with cooking spray (note: do _NOT_ use butter-flavor cooking spray! This contains dairy ingredients).
  • Combine melted margarine, vanilla soy milk, corn syrup, 1/2 tsp cinnamon, salt, and molasses in a large bowl.
  • Fold bread into mixture so that it absorbs liquid evenly. Place in prepared baking dish, and cover with aluminum foil.
  • Bake 15 minutes.
  • Remove foil, and bake 15 minutes more.
  • Sprinkle 1/2 tsp cinnamon over the top.
  • Top as desired - allergen-safe syrup, fruit, or powdered sugar.
