  • Whisk together all ingredients. Refrigerate, covered, until serving.

Love macaroni salad, and love orzo....this is a combination of the two. This is a variation of what was found in a local newspaper, the Gulf Breeze News.

SALAD:
1 c orzo pasta, uncooked
1 c corn
12 cherry tomatoes, quartered
3 green onions, sliced
15 oz can black beans, drained and rinsed
DRESSING:
1/4 c buttermilk (low fat ok)
3 Tbsp fresh cilantro, chopped and divided
3 Tbsp fresh lime juice
2 Tbsp sour cream (light ok)
2 Tbsp mayonnaise
1 tsp chili powder
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp ground red pepper
2 clove garlic, minced
GARNISH:
1 avocado, peeled and pitted, cut into 8 slices
1 Tbsp fresh parsley, chopped

Steps:

  • 1. Cook orzo according to package directions, omitting salt and fat. Drain and rinse; drain well.
  • 2. Place orzo, corn, and next 3 ingredients (through beans) in a large bowl; toss.
  • 3. Combine buttermilk, 2 tablespoons cilantro, and next 8 ingredients (through garlic) in a small bowl, stirring well with a whisk.
  • 4. Drizzle over orzo mixture; toss. Top with avocado; garnish with remaining cilantro and parsley.

1/2 teaspoon dried chipotle powder
1/2 teaspoon coarse salt
1 teaspoon ground pepper
1/2 cup low-fat buttermilk
3 tablespoons light mayonnaise
2 scallions, whites minced and greens thinly slice, separated
1 garlic clove, crushed
1 head romaine lettuce, trimmed and chopped (about 1 1/4 lbs)
1 pint cherry tomatoes, quartered
1 (10 ounce) package frozen corn kernels, thawed and patted dry
2 ounces monterey jack pepper cheese, cubed

Steps:

  • Whisk together buttermilk, mayonnaise, scallion whites and garlic; Combine chile powder, salt and pepper and add to mixture.
  • Add romaine, tomatoes, corn, cheese, and scallion greens to the bowl (if you are adding meat, you would add it here).
  • Toss to combine and serve immediately.
  • Tip: To neatly cut up a head of romaine, halve it through the core, and make a few evenly spaced cuts lengthwise, leaving core intact. Chop crosswise into bite-size pieces.

1 (16 ounce) package macaroni
5 medium plum tomatoes
3 small zucchini
2 medium yellow straight neck squash
1/2 cup mayonnaise
1 1/2 teaspoons dried basil leaves
1 tablespoon lemon juice
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup buttermilk

Steps:

  • Cook and cool macaroni. Cut tomatoes into chunks. Cut zucchini lenghwise in half. Cut each diagonally into thin slices. Dice yellow squash.
  • In large bowl, mix mayonnaise, basil, lemon juice, salt, pepper and buttermilk. Add macaroni, tomato chunks, zucchini and squash with mixture. Gently stir until coated.
  • Can be served at room temperature or cooled. If salad is too dry, stir in additional buttermilk, just until moistened.
