I got this recipe from an elderly lady who submitted it to the Church Cookbook. Its a real time saver!! Alot less mess too!!

fresh peeled tomatoes

Steps:

  • 1. Scald & peel ripe tomatoes. Place in jars. Add 1 teaspoon salt to 1 quart, tighten by hand. Place on cookie sheet in oven 4 to 5 inches from bottom of oven. Turn oven to 250 degrees for 1 hour. Turn off oven & let cool in oven.
  • 2. Once in while I've had one not seal. I just put a new flat on the jar, screw down ring & put it back into the oven & do it again.

2 (28 ounce) cans peeled whole tomatoes, drained, halved, and seeded (Muir Glen, Hunt's, Contadina, or Red Pack are good)
1/2-2/3 cup extra virgin olive oil
14 large fresh basil leaves, torn
fresh rosemary
1/2 medium red onion, cut into 1/4 " dice
6 large garlic cloves, coarsely chopped
salt & freshly ground black pepper

Steps:

  • Preheat the oven to 300*F. Spread out the tomatoes in a large shallow pan (a sheet pan is ideal) and sprinkle with the other ingredients, turning to coat them with oil. Bake 2 1/4 to 2 1/2 hours, basting and turning the tomatoes several times. They're done when their color deepens to dark scarlet and they taste mellow and very rich. Don't let them brown, and don't allow the garlic to brown, it'll turn bitter.
  • Transfer the tomatoes and their oil to a glass or china bowl. Let them mellow at room temperature up to 6 hours. The flavors will ripen in this time.
  • Refrigerate the tomatoes up to 4 days, or freeze up to 3 months. Serve the tomatoes at room temperature, or tossed with hot pasta.

You simply toss all the ingredients into a large casserole dish or dutch oven just after lunch time. There's no browning involved. By about 4:00 p.m. your kitchen will greet you with wonderful slow-brasing aromas.

2 lbs boneless lean beef, cut into 1-1/2-inch cubes
1/4 cup flour
1/2 teaspoon dried thyme
1/2 teaspoon marjoram
1/2 teaspoon crumbled rosemary
1/2 teaspoon salt
1/2 teaspoon paprika
black pepper, As much as you like
1 (28 ounce) canned tomatoes, with liquid
8 large carrots, peeled and cut into thick slices
4 medium potatoes, scrubbed and cut in chunks
1 large onion, cut in chunks
1 bay leaf
1 small rutabagas or 1 small turnip, cut in chunks
fresh green beans, cut in pieces

Steps:

  • Trim any fat from meat cubes; set aside. Mix flour and seasonings together in a bag, put the meat in the bag too and shake to coat meat with the flour mixture. Place coated meat and all remaining ingredients in a 3-4 quart casserole or dutch oven and mix.
  • (TRUST ME - there will be enough liquid - do NOT add more than the canned tomatoes!).
  • Cover and bake at 275 degrees for 4 hours or until meat is very tender. This recipe makes four very LARGE servings (or smaller with leftovers) and is a great company recipe especially for those who can't cook or are pressed for time. Turn on or pre-set your oven to come on at 2:00 and you will be serving at 6:00. Serve with crusty bread or rolls, a green salad and a good bottle of wine. So easy and so delicious! Bon appetite!

  • Preheat oven to 400 degrees. Place tomatoes in a large roasting pan. With your hands, roughly tear each tomato into 1-inch strips. Add garlic and drizzle oil over top. Roast until mixture thickens and holds a trail, 70 to 80 minutes, rotating pan halfway through. Use immediately, or let cool, then refrigerate in an airtight container, up to 1 week.
