2 2 1/2-pound whole salmon fillets
2 1/2 cups white wine
2 tablespoons Pernod
1 large fennel bulb, trimmed, cored and sliced very thin (reserve feathery greens)
Salt and freshly ground pepper to taste
12 cups stemmed watercress, blanched briefly, refreshed in cold water and drained
3 tablespoons lemon juice

Steps:

  • Preheat the oven to 350 degrees. Run your fingers down each salmon fillet to locate the pin bones and pull them out with tweezers or needle-nose pliers. Put the fillets in 2 large roasting pans. Pour half of the wine and half of the Pernod around the salmon in each pan. Scatter half of the sliced fennel over each fillet. Roast until salmon is just cooked through, about 30 minutes, basting from time to time.
  • Using 2 long spatulas, carefully transfer the fillets to platters. Season with salt and pepper. Toss the watercress with the lemon juice, and season with salt and pepper. Arrange the watercress around the salmon. Chop the fennel greens, and sprinkle them over the top.

Salt and freshly ground black pepper
2 tablespoons vegetable oil
3 cups sliced red bliss potatoes
2 cups diced plum tomatoes
3/4 cup sliced carrots*
3/4 cup sliced celery*
3/4 cup sliced fennel*
3/4 cup sliced onions*
1 tablespoon saffron
1 tablespoon tomato paste
1 quart shrimp or lobster stock
Variety of fresh herbs, for seasoning

Steps:

  • Preheat oven to 375 degrees F.
  • Pat the salmon fillets dry with towels and season with salt and pepper. Heat oil in a large oven-safe saute pan. Add fish to pan, flesh side down, and sear on both sides until golden. Remove from the pan and set aside.
  • Add potatoes and all the vegetables, saffron, and tomato paste to the pan and saute until vegetables are translucent. Add the stock and stir well to combine. Add a small handful of fresh herbs, and then place the salmon fillets back in the pan on top of the vegetables.
  • Cover and place the pan in the oven for 15 minutes, or until the potatoes are tender and the fish is cooked to your desired degree of doneness.

4 bulbs fennel, cut into wedge
3 tablespoons sugar
1 cup apple cider
1 cup chicken stock
2 sprigs thyme
Salt and freshly cracked black pepper
1/4 cup chopped parsley leaves
1 cup apple cider
1 teaspoon cayenne pepper
3 tablespoons brown sugar
Grapeseed oil, to sear
4 (8-ounce) boneless and skinless salmon fillets
Salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Braised Fennel:
  • In a large Dutch oven over medium-high heat, add the butter. Add the fennel and sugar and cook for 3 to 4 minutes until the fennel caramelizes. Add the cider, stock and thyme. Cook until the fennel is tender and liquid is reduced, about 10 minutes Season the fennel with salt and pepper, to taste. Add the parsley and mix well. Remove from the heat and cover.
  • Glaze:
  • In a small saucepan, add the cider, cayenne and brown sugar and cook over medium heat until 1/2 cup of liquid remains. Set aside.
  • Salmon:
  • In a large saute pan over medium-high heat, add the oil. Season the salmon fillets with salt and pepper, to taste, and sear for 4 minutes in the hot oil. Remove from the pan and put, seared side up, on a quarter sheet tray with a rack. Spoon the glaze over the top of each fillet and bake until cooked through, about 4 minutes. Remove from the oven to a serving platter and serve with the braised fennel alongside.

1 fresh atlantic salmon fillet
1 large fennel bulb
1 large onion
1 lemon
2 garlic cloves
salt & pepper
2 tablespoons olive oil

Steps:

  • Thinly slice both the onion and the fennel bulb, mince garlic, zest and juice the lemon.
  • Pour about 1-2 tbs of lemon juice and zest over both sides of the fillet, season both sides with salt & pepper.
  • Sauté the fennel, onion, and garlic in olive oil until tender and transparent, season with salt & pepper.
  • Let onion and fennel mix cool and spread evenly over the top of the salmon.
  • Wrap with tinfoil and bake in oven at 350 degrees for 30-25 minutes.

2 medium fennel bulbs
2 tbsp chopped flat-leaf parsley
zest and juice 1 lemon
175g cherry tomato
1 tbsp olive oil
2 salmon fillets , about 175g each
few black olives (optional)

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Trim the fronds from the fennel and set aside. Cut the fennel bulbs in half, then cut each half into 3 wedges. Cook in boiling salted water for 10 mins, then drain well. Chop the fennel fronds roughly, then mix with the parsley and lemon zest.
  • Spread the drained fennel over a shallow ovenproof dish, then add the tomatoes. Drizzle with olive oil, then bake for 10 mins. Nestle the salmon among the veg, sprinkle with lemon juice, then bake 15 mins more until the fish is just cooked. Scatter over the parsley and serve.

1/4 cup chicken broth or 1/4 cup vegetable broth
1 tablespoon chicken or 1 tablespoon vegetable broth
1 large fennel bulb, sliced thin save 1 TBS chopped green tops to use for garnish
2 tablespoons fresh squeezed lemon juice
salt
fresh cracked black pepper

Steps:

  • Season salmon with a little salt and white pepper. Set aside.
  • Heat 1 TBS broth in 10-12 inch stainless steel skillet. Healthy Sauté fennel bulb in broth over medium heat for 1 minute stirring constantly.
  • Add ½ cup broth, lemon juice, pinch salt and pepper, and place salmon on top.
  • Reduce heat to low and cover. Cook for about 5 minutes.
  • Do not over cook fennel, or it will lose its flavor.
  • Sprinkle with chopped green fennel tops. Adjust seasoning to taste and serve.

3 tablespoons butter
2/3 cup simmering chicken stock
4 tablespoons unseasoned bread crumbs

Steps:

  • Preheat oven to 375 degrees. Butter a baking dish.
  • Remove the stems and fronds from the fennel, quarter the bulbs and slice them one-half-inch thick. Arrange the slices in a baking dish and season with salt and pepper. Dot with one tablespoon of the butter.
  • Pour the simmering chicken stock around the fennel, cover with a lid or foil and place in the oven to bake about 40 minutes, until tender. Uncover the fennel, increase oven temperature to 425 degrees and bake 10 minutes longer, until lightly browned and most of the liquid has evaporated.
  • While the fennel is baking, brown the bread crumbs in remaining butter in a skillet and set aside. Just before serving the fennel sprinkle with the bread crumbs.

2 small baking potatoes (about 350g/12oz), thinly sliced
1 large fennel bulb , sliced into thin wedges, fronds reserved
2 boneless, skinless salmon fillets
2 tbsp olive tapenade
½ lemon , cut into wedges

Steps:

  • Heat oven to 200C/180C fan/ gas 6. Toss the potatoes and fennel with 1 tbsp olive oil and arrange on a baking tray or in a roasting dish. Season and roast on the top shelf for 15 mins.
  • Turn the veg, then top with the salmon. Season and roast for another 15 mins. Meanwhile, mix 1 tbsp olive oil with the tapenade to loosen it.
  • Once roasted, drizzle the salmon and vegetables with the tapenade. Sprinkle over the fennel fronds and serve with lemon wedges.

2 pounds skinless, boneless chicken thighs

1 tablespoon chopped fresh thyme
1 dried chile de arbol pepper
½ cup white wine
1 (28 ounce) can whole peeled tomatoes in puree

2 tablespoons chopped fennel greens
2 tablespoons chopped fresh flat-leaf parsley
1 teaspoon lemon zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a large, heavy cast-iron skillet or Dutch oven over medium-high heat. Season chicken thighs with salt and black pepper. Brown chicken in the hot oil, about 5 minutes per side. Meat will still be pink inside. Transfer chicken into a bowl, leaving drippings in skillet.
  • Turn heat down to medium; cook fennel, onion, and fennel seeds in the hot oil, stirring occasionally, until onion and fennel begin to caramelize, about 10 minutes.
