- In a large resealable plastic bag, combine the broth, soy sauce and 1/2 teaspoon ginger; add chicken. Seal bag and turn to coat; refrigerate for 2 hours, turning occasionally., Drain pineapple, reserving 1/2 cup juice; set aside 1/4 cup pineapple (refrigerate remaining pineapple and juice for another use). - Preheat oven to 325 degrees F (165 degrees C).
- Melt butter in a saucepan over medium heat; stir ketchup and brown sugar into melted butter, stirring to dissolve brown sugar. Whisk cornstarch into vinegar until smooth; pour into pan. - Preheat the oven 400 degrees. Line a baking sheet with parchment paper.
- Lay the pineapple on its side and slice off the top and the bottom. Stand the pineapple upright and trim off the rind. Try to get as much of the 'eyes' off as possible. Slice the pineapple in half, then into quarters. Lay a quarter on the cutting board and slice out the tough core. Repeat with all the quarters.
- Slice each wedge in half and place on the prepared baking sheet. Brush each wedge with half the melted butter or coconut oil and sprinkle evenly with 2 tablespoons of sugar. Roast for 15 minutes.
- Flip the pineapple wedges and brush with the remaining butter or oil and roast for another 15 minutes.

- Whisk together ingredients for the marinade. Reserve 1 cup for later use.
- Add cut chicken pieces remaining marinade to a gallon-sized zip-top bag. Refrigerate for up to two hours. (or prep this part the night before)
- Preheat oven to 450° Fahrenheit.
- Covering a baking sheet with aluminum foil and add a oven-safe baking rack. Sprits rack with non-stick cooking spray.
- Cute onion, peppers, and pineapple into bite-sized pieces, around 1½ inches.

- After Kabobs have baked for 25 minutes remove from oven. Turn oven to broil setting. Baste kabobs with reduced marinade and return to oven for 5 minutes. Watch carefully as you only want to caramelize the marinade a bit not scorch the kabobs.
- After 5 minutes or when you see the color of browning you like, remove kabobs from the oven, and let rest for 5 minutes.
- Serve over rice or with a big green salad!

- To make the green seasoning, combine all the green seasoning ingredients into a food processor and process into a smooth paste
- Wash and dry chicken drumsticks, then season with a teaspoon of salt and all of the green seasoning. Cover and let marinate for at least 30 minutes but over night is best
- Next make the BBQ sauce: In a small sauce pan combine all of the BBQ sauce ingredients. Cook on medium heat, continuously stirring until a thick sauce forms. Should take approximately 10 mins
- If marinating chicken over night, remove from the refrigerator 30 minutes before baking and allow the chicken to come up to room temperature
- Preheat oven to 375°F
- Add marinated chicken to a baking dish large enough for all of the chicken. Use two baking dishes if necessary
- Brush chicken with 1/2 of the homemade pineapple BBQ sauce and reserve the other half for later
- Cover with aluminum foil and bake for 1 hour
- Remove the foil and increase the heat to 450°F and bake chicken for 30 minutes
- Then turn chicken drumsticks over and brush with remaining BBQ sauce

- Bake for an additional 20 minutes, then using a turkey baster baste with pan juices, cook for an additional 10 minutes then remove from the oven

- In a medium bowl, whisk together pineapple juice, soy sauce, honey, chicken broth, ginger, garlic, and sriracha. Pour the marinade over the chicken, seal bag, and toss to coat. Cover remaining sauce in bowl with plastic wrap and refrigerate. Place bag of chicken in refrigerator and let marinate for 25 minutes ( and up to 8 hours).
- Preheat oven to 425 degrees. Line a baking sheet with parchment paper or foil, and coat with olive oil. Set aside.
- Remove the chicken from the bag. Place the chicken wings on the prepared baking pan and bake for 15 minutes. Pour the reserved marinade from the bag into a bowl and set aside.
