Time 30m

Yield 4 to 6 servings

Number Of Ingredients 21

8 ounces homemade white corn tortilla chips, fried or baked, recipes follow
1 1/2 cups refried beans, warmed, recipe follows
2 poblano chiles, roasted, peeled, seeded, and diced
2 to 4 canned, pickled jalapeno chiles, stemmed and thinly sliced crosswise
1 cup finely shredded Monterey Jack cheese (about 4 ounce)
1/2 cup sour cream
Vegetable oil for frying
12 (6-inch) corn tortillas (preferably white)
Fine salt
Twelve 6-inch corn tortillas (preferably white)
1 tablespoon vegetable oil
Fine salt
One 15 1/2-ounce can pinto beans, drained and rinsed
3 tablespoons extra-virgin olive oil
1/2 medium onion, chopped
4 cloves garlic, minced
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 cup chicken broth, homemade or low-sodium canned
Kosher salt and freshly ground black pepper, to taste
1 tablespoon chopped fresh coriander leaves (cilantro) (optional)

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread half the chips out in a large shallow casserole dish or on an ovenproof platter. Top with half the beans, in small spoonfuls, and scatter with half the chiles. Repeat with the remaining chips, beans, and chiles. Sprinkle the top of the nachos with the cheese. Bake until heated through and the cheese melts, about 3 to 5 minutes. Top the nachos with dollops of the sour cream and serve.
  • Pour the oil into a large heavy-bottomed pot to a depth of about 2 inches. Place a deep-frying thermometer in the pot. Heat the oil over medium heat to 360 degrees F.
  • Meanwhile, stack the tortillas, and cut the pile into sixths to make chips.
  • Raise the heat to high. Working in batches, fry the chips, turning them with a skimmer or slotted spoon, until golden brown, about 2 minutes. Using a slotted spoon, transfer the chips to a paper towel-lined pan to drain. (Return the oil to the proper temperature between batches.) Cool and season with salt. Serve.
  • Preheat the oven to 350 degrees F.
  • Brush both sides of the tortillas with the oil. Stack the tortillas and cut the pile into sixths to make chips. Spread the chips out in a single layer on two large baking sheets and season with salt. Bake until golden brown and crisp, rotating the baking sheets once, about 12 to 15 minutes. Serve.
  • In a small bowl, mash two-thirds of the beans with a fork or potato masher. Reserve the whole beans separately.
  • In a medium skillet, heat the oil over medium-high heat and add the onion. Cook until lightly browned, about 3 to 4 minutes. Add the garlic and cook, stirring for 1 to 2 minutes more. Add the spices and cook until fragrant, about 1 minute more. Add the mashed beans and half the broth and cook, stirring frequently until thickened, about 5 minutes. Add the whole beans and the remaining broth and simmer about 4 to 5 minutes more until thickened but not pasty. Season with the salt and pepper, and stir in the fresh coriander, if desired. Serve.

  • Prepare sauce: Place sour cream, lime juice and salt in a small bowl. Stir together before transferring into a squeeze bottle. Refrigerate until use.
  • Cook the beef: Place a medium-sized skillet on stovetop on medium-high heat. Add the beef, breaking it up as it cooks. When the beef loses its pink colour, stir in the taco seasoning and cook for an additional minute. Transfer to a paper towel-lined strainer to remove excess fat.
  • Assemble the nachos: To create a collar around the inside of a 10-inch spring-form pan, cut a length of parchment paper that wraps right around the inside and rises two inches above the top. Sprinkle a handful of the chips into the pan, spreading them out evenly. Add a handful of meat, followed by a small handful of the vegetables. End by sprinkling with 1 cup of the Monterey Jack cheese. Repeat this process three more times, alternating which cheese you use. Crush any remaining chips and sprinkle on the top, along with any remaining meat and veggies.

  • Lightly coat both sides of each tortilla with cooking spray. Stack the tortillas and cut them into six wedges. Spread out the triangles on a sheet tray. Sprinkle evenly with 1/4 teaspoon salt. Bake until crisp and light golden brown, about 25 minutes. Toss the tortillas halfway through.
  • Heat the oil in a large nonstick skillet over high heat. Add the turkey and cook, breaking apart with a wooden spoon, until browned and cooked through, about 5 minutes. Add the butternut squash, salsa verde, 1/2 cup water and the remaining 1/4 teaspoon salt. Reduce to a simmer over medium-low heat and cook, stirring periodically, until the sauce is thick, not watery, and the squash tender, about 10 minutes. Fold in the pumpkin seeds.

  • Make the seasoned beef: Crumble the beef into a large saucepan, then place over medium-high heat. Once the beef starts sizzling, continue cooking, stirring to break it up into small crumbles, until browned and almost all its moisture has evaporated, about 8 minutes. Continue cooking until the beef starts sizzling and frying in its own fat, about 2 minutes more. Sprinkle the chili powder, flour, oregano and cumin over the beef and cook, stirring often, until fragrant and well combined with the beef, 1 to 2 minutes.
  • Pour in the broth and stir to scrape up any bits on the bottom of the pan. Reduce the heat to medium and simmer, stirring occasionally, until almost all the moisture has evaporated and the beef is coated in a thick sauce, about 12 minutes. Remove the pan from the heat and season with salt and pepper.
  • Heat the oven to 425 degrees. Line a large rimmed baking sheet with foil, then spread the chips out in an even layer. Using a Microplane, rain down the zest of ½ the lime over the chips (reserve the lime), then season with more salt. Spoon the seasoned beef evenly over the chips, then top with spoonfuls of the pico de gallo. Sprinkle both cheeses evenly over the chips, followed by the onions and chile. Transfer to the oven and bake until the cheese is fully melted and the chips at the edges are lightly toasted, about 10 minutes.
  • Meanwhile, zest the rest of the lime into a bowl, then juice the lime and add it to the zest. Spoon the sour cream into the bowl and stir to combine with the lime zest and juice (this should make the sour cream the drizzling consistency of crema).
