OVEN BAKED KOREAN BBQ BEEF RIBS
How to make supremely tender and delicious baked Korean BBQ beef ribs in the oven!

Steps:
- Blend the marinade ingredients in a mixer or food processor until smooth. Set aside.
- Pour the marinade over the meat and make sure it's reaching all parts of the meat. Cover the meat and transfer it to the fridge. Marinate the meat for at least 4 hrs (but ideally for 24 hrs for optimal results).
- Preheat the oven on 100 C/212 F for 20 mins. Lay down some waxed baking paper (or aluminium foil) on a baking sheet (or roasting pan). Then place the marinated rack of ribs. Splash some marinade around the ribs but discard most of sauce. Cook it for 8 hrs.
- Take the meat out and carve. Serve.

Steps:
- Whisk together the soy sauce and sugar in a bowl until the sugar has dissolved, and stir in the black pepper, garlic, green onions, sesame oil, and sesame seeds.
- Place the ribs in a large bowl, and pour the marinade over the ribs. Stir to coat the ribs with the marinade, and refrigerate for 1 hour. Stir the ribs and marinade again, and refrigerate for 1 more hour.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Remove the ribs from the marinade, discard the marinade, and grill the ribs until brown and no longer pink in the center, about 5 minutes per side. Have a spray bottle of water handy in case the ribs flare up.

- Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
- Mix brown sugar, barbecue seasoning, paprika, sea salt, pepper, and garlic powder together in a bowl.
- Coat both sides of ribs liberally with mustard and then with seasoning mixture. Place ribs onto the prepared baking sheet and cover with additional foil.

SUNNY'S HONEY BBQ OVEN SHORT RIBS

- Heat the oven to 300 degrees F.
- In a small bowl, combine the paprika, onion powder, 4 teaspoons salt, oregano, garlic powder, cumin, cayenne pepper and a few grinds of black pepper. Rub the mixture all over the ribs and allow it to sit at room temperature for 1 to 2 hours at the most.
- Place the ribs snugly in an oven dish with the fat side of each rib facing up. Cover tightly with aluminum foil and don't be afraid to top the dish with another heavy dish to ensure the seal! Cook in the oven for 2 1/2 hours, at this point the meat should be falling off the bones. Remove the ribs from the oven and raise the temperature to 425 degrees F.
- Using a pair of tongs, flip and move the beef around a bit. Drizzle the honey evenly over the top of each rib. Place the ribs back in the oven, this time leaving it uncovered and cook another 10 to 15 minutes.

- Combine marinade ingredients in a bowl.
- Pour marinade over ribs and let them marinate for at least four hours.
- After marinating, place ribs on baking dish. Reserve the marinade for later.
- Bake ribs at 325°F (160°C) for two and a half to three hours.
- Pour the leftover marinade into a saucepan, add the honey, and bring to a boil to form a glaze. Set aside.
- After two and half to three hours, remove the ribs from the oven. Pour the glaze over the ribs and broil for 5 to 10 minutes.

- Heat oil in a heavy pan. I use a cast iron one.
- I sear the ribs, two at a time to give them space to cook, for about 5 minutes per side or until well browned.
- After all the ribs have been seared, remove from pan and put aside until needed.
- Add leeks, carrots, parsnips, celery, onion, shallots and garlic to the pan and cook on low heat, stirring occasionally for 15 - 20 minutes.
- Now add the tomato paste, salt, red & black peppers to the vegetable mixture and cook for 8 - 10 minutes more.
- Next add the vinegar, sugar, rosemary, thyme, mustard, mix well and then add the beef stock.
- Preheat oven to 325 degrees.
- Return the short ribs to the pot and bring to a low simmer and cover.
- Place in a 325 oven for 2 - 2 1/2 hours or until the ribs are tender.
- Remove the ribs from pot, cover with foil to keep warm.
- Remove all vegetables from liquit and bring the liquid to a boil, cooking until reduce to 1 cup.
- Drizzle the glaze over the ribs and enjoy.
KOREAN BBQ BABY BACK RIBS
When you live-and cook-in Kentucky, you need to know your ribs. - BBQ sauce: In a saucepan, bring all ingredients to a simmer over low heat. Cook uncovered, 1-2 hours. (Note: Sauce can also be made while the ribs are baking during the first hour, Step 3.)
- Ribs: Combine dry ingredients in a mixing bowl. Place ribs on a rimmed baking sheet lined with parchment paper. Sprinkle rub all over the ribs, using more on the meaty side. Massage the rub into the meat (tip: wear non-latex gloves for easy cleanup). Cover with foil and chill in the refrigerator at least 4 hours, preferably overnight.
- Preheat oven to 250 degrees F. Remove ribs from refrigerator and wrap each rack tightly in foil. Place them in a roasting pan side by side and bake 1 hour. (Alternatively, you can smoke the ribs, uncovered, in a smoker at 220 degrees F for 1 hour.)
- Take the ribs from the oven and remove the foil. Return the ribs to roasting pan; pour any liquid in the foil over the ribs. Pour the BBQ sauce over the ribs. Loosely cover pan with foil and bake 1 hour 15 minutes to 1 hour 45 minutes, basting halfway through.
- Assembly: Remove ribs from oven and place on a cutting board. Cut into two-rib portions and serve stacked on a platter, with extra sauce from the pan on the side.
KOREAN BEEF SHORT RIBS

- Cook ribs in 2 Tbsp. dressing in Dutch oven or large deep skillet on medium-high heat 4 min. on each side or until browned on both sides. Remove ribs from pan; cover to keep warm. Add remaining dressing and carrots to pan; cook and stir on medium-high heat until lightly browned. Remove from pan.

BBQ BEEF RIBS
If you wish you can pre steam the ribs in the oven for 30 minutes and cut down the BBQ time. Put the ribs on a cookie sheet add 1 cup of beef broth, seal with tin foil and put in a 325°F oven. Thee BBQ time will now be about 30 minutes and I find the ribs are more tender. Adjust the seasoning to your liking. Serve with salads and baked on the BBQ potatoes

Steps:
- Combine all the ingredients (except ribs) in a sauce pan, bring to a boil and simmer 10 minutes, cool a bit.
- Place the slabs of ribs in a large plastic bag and pour in the sauce, turn to coat the ribs and seal the bag.
- Marinate in the fridge for at least an hour.
- Remove ribs from the marinade and reserve the marinade.
- Place ribs over medium heat and grill for 50-60 minutes turning the ribs and basting with the marinade during the last 20 minutes of cooking.
