How to make supremely tender and delicious baked Korean BBQ beef ribs in the oven!

2 kg beef back ribs (, membrane removed)
3/4 cup soy sauce
6 Tbsp brown sugar
1/4 cup rice wine ((mirin))
1 red apple (or asian pear (230 g / 8.1 ounces), cored)
1 onion ((180 g / 6.3 ounces))
2 Tbsp minced garlic
2 tsp minced ginger
1/4 tsp ground black pepper

Steps:

  • Blend the marinade ingredients in a mixer or food processor until smooth. Set aside.
  • Pour the marinade over the meat and make sure it's reaching all parts of the meat. Cover the meat and transfer it to the fridge. Marinate the meat for at least 4 hrs (but ideally for 24 hrs for optimal results).
  • Preheat the oven on 100 C/212 F for 20 mins. Lay down some waxed baking paper (or aluminium foil) on a baking sheet (or roasting pan). Then place the marinated rack of ribs. Splash some marinade around the ribs but discard most of sauce. Cook it for 8 hrs.
  • Take the meat out and carve. Serve.

1 cup white sugar
1 teaspoon ground black pepper
5 cloves garlic, chopped
3 green onions, chopped
2 tablespoons Asian (toasted) sesame oil
1 teaspoon sesame seeds
2 pounds Korean-style short ribs (beef chuck flanken, cut 1/3 to 1/2 inch thick across bones)

Steps:

  • Whisk together the soy sauce and sugar in a bowl until the sugar has dissolved, and stir in the black pepper, garlic, green onions, sesame oil, and sesame seeds.
  • Place the ribs in a large bowl, and pour the marinade over the ribs. Stir to coat the ribs with the marinade, and refrigerate for 1 hour. Stir the ribs and marinade again, and refrigerate for 1 more hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove the ribs from the marinade, discard the marinade, and grill the ribs until brown and no longer pink in the center, about 5 minutes per side. Have a spray bottle of water handy in case the ribs flare up.

2 tablespoons Korean barbecue seasoning (such as Weber®), or to taste
2 tablespoons smoked paprika
2 tablespoons sea salt
2 tablespoons ground black pepper

1 (4 pound) rack pork spareribs
¼ cup mustard
¼ cup barbecue sauce, or to taste

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with aluminum foil.
  • Mix brown sugar, barbecue seasoning, paprika, sea salt, pepper, and garlic powder together in a bowl.
  • Coat both sides of ribs liberally with mustard and then with seasoning mixture. Place ribs onto the prepared baking sheet and cover with additional foil.
  • Bake in the preheated oven until meat pulls away easily from the bone, about 2 hours. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). 1/4 cup sweet paprika
1 tablespoon onion powder
Kosher salt and freshly ground black pepper
2 teaspoons dry oregano
2 teaspoons garlic powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
6 pounds short-ribs, flanken-cut (about 6 ribs bone-in, cut into 5 to 6-inch strips)
1/2 cup honey

Steps:

  • Heat the oven to 300 degrees F.
  • In a small bowl, combine the paprika, onion powder, 4 teaspoons salt, oregano, garlic powder, cumin, cayenne pepper and a few grinds of black pepper. Rub the mixture all over the ribs and allow it to sit at room temperature for 1 to 2 hours at the most.
  • Place the ribs snugly in an oven dish with the fat side of each rib facing up. Cover tightly with aluminum foil and don't be afraid to top the dish with another heavy dish to ensure the seal! Cook in the oven for 2 1/2 hours, at this point the meat should be falling off the bones. Remove the ribs from the oven and raise the temperature to 425 degrees F.
  • Using a pair of tongs, flip and move the beef around a bit. Drizzle the honey evenly over the top of each rib. Place the ribs back in the oven, this time leaving it uncovered and cook another 10 to 15 minutes.

Steps:

  • Combine marinade ingredients in a bowl.

  • Bake ribs at 325°F (160°C) for two and a half to three hours.
  • Pour the leftover marinade into a saucepan, add the honey, and bring to a boil to form a glaze. Set aside.
  • After two and half to three hours, remove the ribs from the oven. Pour the glaze over the ribs and broil for 5 to 10 minutes.
  • Cut up the ribs, sprinkle sesame seeds over, and garnish with scallions.

The basic recipe is a friends, I've just changed a few things to make them perfect for my familys taste buds. I hope you will enjoy these as much as we do.

3 1/2 tablespoons oil, sunflower
6 beef short ribs, bone in
2 leeks, use the white only, sliced
2 carrots, sweet, peeled, coarsely chopped
2 parsnips, peeled, coarsely chopped
2 celery ribs, coarsely chopped
2 onions, medium, sweet, sliced
2 shallots, french, minced
3 garlic cloves, chopped
2 tablespoons tomato paste
1 teaspoon salt, seasoned
1/2-1 teaspoon red pepper flakes
1/2 teaspoon black pepper, freshly ground
1/2 cup balsamic vinegar
1/4 cup sugar, brown
3 sprigs rosemary, fresh
1 sprig thyme, fresh
1 tablespoon mustard, dijon
4 cups beef stock

Steps:

  • Heat oil in a heavy pan. I use a cast iron one.
  • I sear the ribs, two at a time to give them space to cook, for about 5 minutes per side or until well browned.
  • After all the ribs have been seared, remove from pan and put aside until needed.
  • Add leeks, carrots, parsnips, celery, onion, shallots and garlic to the pan and cook on low heat, stirring occasionally for 15 - 20 minutes.
  • Now add the tomato paste, salt, red & black peppers to the vegetable mixture and cook for 8 - 10 minutes more.
  • Next add the vinegar, sugar, rosemary, thyme, mustard, mix well and then add the beef stock.
  • Preheat oven to 325 degrees.
  • Return the short ribs to the pot and bring to a low simmer and cover.
  • Place in a 325 oven for 2 - 2 1/2 hours or until the ribs are tender.
  • Remove the ribs from pot, cover with foil to keep warm.
  • Remove all vegetables from liquit and bring the liquid to a boil, cooking until reduce to 1 cup.
  • Drizzle the glaze over the ribs and enjoy.

Chef Edward Lee starts his baby back rib recipe with a classic dry rub, then cooks the racks low and slow in a sauce spiked with spicy gochujang, a nod to his Korean roots. (Note: Ribs need to chill overnight in the fridge, so plan ahead!)

3/4 cup ketchup
1 stick unsalted butter
1 cup brown sugar
1/4 cup soy sauce
1/4 cup worcestershire sauce
1 teaspoon freshly ground black pepper
3 cups gochujang, Korean fermented chili paste, available at Asian markets or online
1 cup cider vinegar
4 cloves garlic, minced or grated
1/4 cup kosher salt
1/4 cup brown sugar
1 tablespoon paprika, sweet or smoked
1 tablespoon garlic powder
1 tablespoon Freshly ground black pepper
2 racks baby back ribs, about 3½?4 pounds

Steps:

  • BBQ sauce: In a saucepan, bring all ingredients to a simmer over low heat. Cook uncovered, 1-2 hours. (Note: Sauce can also be made while the ribs are baking during the first hour, Step 3.)
  • Ribs: Combine dry ingredients in a mixing bowl. Place ribs on a rimmed baking sheet lined with parchment paper. Sprinkle rub all over the ribs, using more on the meaty side. Massage the rub into the meat (tip: wear non-latex gloves for easy cleanup). Cover with foil and chill in the refrigerator at least 4 hours, preferably overnight.
  • Preheat oven to 250 degrees F. Remove ribs from refrigerator and wrap each rack tightly in foil. Place them in a roasting pan side by side and bake 1 hour. (Alternatively, you can smoke the ribs, uncovered, in a smoker at 220 degrees F for 1 hour.)
  • Take the ribs from the oven and remove the foil. Return the ribs to roasting pan; pour any liquid in the foil over the ribs. Pour the BBQ sauce over the ribs. Loosely cover pan with foil and bake 1 hour 15 minutes to 1 hour 45 minutes, basting halfway through.
  • Assembly: Remove ribs from oven and place on a cutting board. Cut into two-rib portions and serve stacked on a platter, with extra sauce from the pan on the side.

1/4 cup KRAFT Original Barbecue Sauce
Zest and juice of 1 orange
2 Tbsp. honey
2 Tbsp. flour
2 Tbsp. soy sauce
3 cups hot cooked long-grain white rice

Steps:

  • Cook ribs in 2 Tbsp. dressing in Dutch oven or large deep skillet on medium-high heat 4 min. on each side or until browned on both sides. Remove ribs from pan; cover to keep warm. Add remaining dressing and carrots to pan; cook and stir on medium-high heat until lightly browned. Remove from pan.
  • Return ribs to Dutch oven; add chiles. Cook and stir on medium heat 2 min. Beat broth, barbecue sauce, orange juice, honey and flour with whisk until well blended; pour over ribs. Bring to boil; cover. Simmer on low 1-1/2 hours. Add carrots; cook 30 min. or until ribs and carrots are tender.
  • Remove ribs, carrots and chiles from sauce; discard chiles. Skim excess fat from sauce. Stir soy sauce and zest into sauce. Serve ribs, carrots and sauce over rice.
