- Place the oven rack in the center of the oven. Preheat the oven to 400 F (204 C).
- In a small bowl, mix together the olive oil, red wine vinegar, oregano, garlic powder, paprika, salt, and pepper to make the marinade.
- Lightly oil a large baking sheet. (I use a two-thirds size baking sheet, which is the size you'll need if you're including the optional potatoes. A half size baking sheet will work if you skip the potatoes.) Arrange the brats and vegetables in a single layer on the baking sheet (if you're making a sheet pan meal, add the potatoes, if you're making bratwurst subs, omit the potatoes). Pour the marinade over the brats and veggies. Toss the bratwurst and vegetables so that they're evenly coated in the vinaigrette.
- Bake for 20 minutes*, then remove from the oven, flip the bratwurst over and stir the vegetables. Return the baking sheet to the oven and roast for an additional 20 - 25 minutes (or until the bratwurst have reached an internal temperature of 160 F on an instant read meat thermometer and the bratwurst and vegetables have browned edges).

- Pierce the sausages with a sharp knife. Add the beer to a saucepan over medium-high heat and add the sausages and garlic. You may need to add some water to the pan (just enough to cover the sausages).
