OUTBACK STEAKHOUSE BREAD
Outback Steakhouse bread is the signature bread served at the Outback Restaurant! Served on a cutting board with whipped butter these dark molasses rolls will compliment your steak dinner! This recipe makes 12 rolls just like the restaurant!

Steps:
- In the bowl of a stand mixture, dissolve the yeast and 1 Tbsp of sugar in warm water until mixture gets foamy.
- Whisk in the honey, brown sugar, egg and molasses.
- Sift in the remaining dry ingredients and knead 10 min over low speed.
- Divide the dough into 2 equal parts. Cut each part into 6 equal pieces and form 6-7" long narrow rolls.
- Dredge each roll into some cornmeal and then transfer each roll onto a well-greased pan. Allow dough to proof until doubled in size (approx. 45 min-1 hr in a warm place.)
- Bake in a pre-heated 380°F oven for 15 minutes.

Steps:
- Place all of the ingredients in the bread machine in the order listed, and process on dough setting. The dough will be a little on the wet side and sticky but if it seems too wet, add more flour. When dough is done, let it rise for 1 hour.
- Remove from pan, punch down, and divide into 8 portions. Form portions into tubular shaped loaves about 6-8 inches long, and 2 inches wide.
- Sprinkle the entire surface of the loaves with cornmeal, and place them on 2 cookie sheets. Cover and let rise for 1 hour.
- Bake at 350 degreees for 20-25 minutes. Serve warm with whipped butter.
- Note: This recipe is best when prepared by these instructions.
- Deviate at your own risk.

Steps:
- Combine the flours, cocoa, sugar, coffee and salt in large bowl.
- Make a depression or"well" in the middle of the dry mixture.
- Pour the warm water into this"well," then add the butter, honey and yeast.
- Combine the food coloring drops with ¼ cup of water and add that to the"well.
- "Slowly mix the ingredients with a spoon, drawing the dry ingredients into the wet.
- When you can handle the dough, begin to combine it by hand, kneading the dough thoroughly for at least ten minutes, until it is very smooth and has a consistent color.
- Set the dough into a covered bowl in a warm place for an hour, to allow it to rise.
- When the dough has risen to about double in size, punch it down and divide it into 8 even portions.
- Form the portions into tubular shaped loaves about 8" long and 2" wide.
- Sprinkle the entire surface of the loaves with cornmeal and place them on a cookie sheet, or two.
- Cover the cookie sheet (s) with plastic wrap and let the dough rise once more for another hour in a warm location.
- Preheat the oven to 350° degrees F.
- Uncover the dough and bake it for 20-24 minutes in the hot oven.
- Loaves should begin to darken slightly on top when done.
- Serve warm with a sharp bread knife and butter on the side.
- If you want whipped butter, like you get at the restaurant, just use an electric mixer on high speed to whip some butter until it's fluffy.
OUTBACK STEAKHOUSE COPYCAT BREAD (GLUTEN FREE)
Close your eyes and this is pretty much the real thing! And you thought you'd never be able to eat Outback's bread again! This copy cat recipe is based off of recipe #25456 and converted to a gluten free version. I recommend eating within 1 week. I used two mini loaf pans and one regular sized loaf pan only because I don't have more minis. (you can add food coloring to get the dark color too, but I figured I'd just keep it natural and close my eyes!) Nutritional Information (including flours, etc): 123 Cal, 2.3 Fat, 1 Sat Fat, 22 Carbs, 1.8g Fiber, 7g Sugar, 3g protein. (Slightly over 2 points a slice with WW)

- Whisk together dry ingredients in a medium bowl.
- Mix together the wet ingredients in a mixer, then slowly add the dry while leaving the mix on low. Then mix on high for 4 minutes.
- Grease and flour two loaf pans (I use Crisco and sweet rice flour). Using a spatula, distribute the dough between the two pans. Loosely cover with plastic wrap and let rise in a warm moist place for 90 minutes (I put it in a slightly warmed oven with a pan of hot water underneath). Loaves should just about double in height.
- Bake at 350 degrees for 20-25 minutes.

- For the Bread - In a glass measuring cup or microwave-safe bowl, heat water, unsulphered molasses, and oil for about 1 minute on high power to warm it to temperature. Testing with a thermometer is preferred, but if testing with your finger, mixture should feel warm but not hot; set aside.
- Note regarding molasses - Blackstrap molasses may be used at your own risk; it's much more bitter and pungent than unsulphered molasses and the recipe will theoretically 'work', but bread will be more bitter and I suspect will not taste like Outback bread.
- In a large mixing bowl, add 2 cups white whole wheat flour, vital wheat gluten, yeast, sugars, cocoa powder, salt, and stir to combine. Add the wet mixture to the dry and stir. Dough will be wet, sloppy, and gloppy. Turn it out onto Silpat baking mat or floured work surface. Slowly add and knead in the remaining 1/4 cup bread flour, adding flour just until dough is soft, smooth, and pillowy; knead for about 5 to 8 minutes.
- Form a softball-sized mound of dough and place it in a large greased bowl. Flip the dough over to grease the other side and lightly rub some of the oil from the sides of the bowl over the surface of the dough with your fingertips. Cover with plasticwrap, set in a warm place, and allow dough to rise for at least 1 hour, or until doubled in size. This rise takes about 90 minutes for me, but your mileage may vary.
