1/2 cup peanut butter (natural, unsweetened)
2 tablespoons low sodium soy sauce (use tamari or coconut aminos for gluten free)
1 tablespoon rice vinegar
2 tablespoons brown sugar
2 teaspoons chili garlic sauce (more or less to taste)
1 tablespoon fresh lime juice
3 garlic cloves (pressed or grated)
1 tablespoon ginger root (grated)
2-4 tablespoons warm water

Steps:

  • Combine all ingredients except water. Whisk to fully combine.
  • Add water, 1 tablespoon at a time, until desired consistency is reached. I normally use 2 tablespoons for a sauce and up to four if using it for a dressing.

1 cup creamy peanut butter
1 (14-ounce) can full-fat coconut milk
2 medium cloves garlic (minced)
2/3 cup water
2 tablespoons soy sauce or Tamari*
2 tablespoons brown sugar
2 teaspoons curry powder
A pinch or two of kosher salt (to taste - optional)

Steps:

  • Set a medium saucepan over low heat. Add the peanut butter, coconut milk, garlic, and water. Cook, stirring occasionally, until the peanut butter has melted and the ingredients meld when stirred with a whisk. Be sure to keep just below a simmer - don't let the sauce boil.
  • Add the soy sauce, brown sugar, and curry powder. Stir to combine. Let simmer - just barely! - and then remove from heat.
  • Taste and add a pinch or two of salt if you wish. Serve as desired.

  • Add in the Sriracha sauce.

Peanut sauce is one of my favorite yummy things. It's great on just about anything-pasta, pork, chicken. My husband says it would make cardboard taste good! It's very versatile, easy to make and inexpensive.

1 cup creamy peanut butter, not old fashioned style or freshly ground
1 (14 ounce) can chicken broth
1/4 cup fresh lime juice
3 tablespoons brown sugar
7 teaspoons soy sauce
2 tablespoons peeled fresh ginger
1/2 teaspoon crushed red pepper flakes

Steps:

  • Place peanut butter in heavy medium saucepan.
  • Slowly add chicken broth, then all other ingredients.
  • Stir over medium heat until smooth and thick, about 6 minutes.
  • Can be stored in refrigerator 3 days until ready to use.
  • Reheat before serving.

2 tablespoons coconut cream, skimmed from the top of canned coconut milk
1 tablespoon plus 1 teaspoon Thai Red Curry Paste
1 cup chicken broth, homemade or low-sodium canned
1/4 cup unsweetened coconut milk
1/4 cup chunky peanut butter
1 tablespoon Southeast Asian fish sauce
1 tablespoon freshly squeezed lime juice, or more to taste

Steps:

  • Stir-fry the coconut cream in a small saucepan over medium heat, until the oil separates and sizzles, about 2 minutes. Add the curry paste and stir-fry until fragrant, about 2 minutes.
  • Whisk in the broth, coconut milk, peanut butter, and fish sauce. Bring to a boil over medium-high heat, reduce the heat to maintain a gentle simmer and cook, stirring, until thickened, about 10 minutes. Transfer the sauce to a serving bowl and cool to room temperature. Whisk in the lime juice just before serving.
