I've had this for a while and don't remember where it came from. It goes well with summer grilling (fish, etc.). Prep time does not include cooling time for the orzo.

Ingredients

1 1/2 cups orzo pasta (about 10 ounces)
1/3 cup packed chopped drained sun-dried tomato packed in oil
5 tablespoons extra virgin olive oil
1/4 cup balsamic vinegar
1/4 cup packed chopped kalamata olive
1 cup finely chopped radicchio
1/2 cup toasted pine nuts
1/2 cup chopped fresh basil
1/2 cup grated parmesan cheese
2 cloves garlic, minced

Steps:

Cook orzo in boiling salted water until just tender.
Drain well.
In a large bowl toss orzo, sun-dried tomatoes, oil, vinegar and olives.
Let stand until room temperature.
Mix chopped radiccho, pine nuts, chopped basil, Parmesan and garlic into orzo mixture.
Season to taste with salt and pepper.
(I find that the olives and tomatoes make further seasoning unnecessary, so taste first.) Serve at room temperature.

2 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, crushed
Olive oil
2 cups orzo
2 cups steamed vegetables, carrots, broccoli, squash, etc
4 cups low sodium canned chicken stock
Parmesan, grated
Salt
Pepper

Steps:

Heat oil in large sauce pan, cook onion over medium high heat for 2 minutes. Stir In garlic and cook for 30 seconds. Stir in uncooked orzo & and toss to coat and cook for 1 minute. Reduce heat to medium. Slowly stir in 1/2 cup of stock at a time. Adding the next half cup when the previous one has been absorbed. When orzo is tender stir in a drizzle of olive oil and season with salt and pepper. Toss orzo with steamed vegetables. Serve with grated Parmesan and black pepper.

1/4 cup (packed) chopped Kalamata olives or other brine-cured black olives
1 cup finely chopped radicchio (about 1 small head)
1/2 cup pine nuts, toasted
1/2 cup chopped fresh basil
1/2 cup freshly grated Parmesan cheese
2 large garlic cloves, minced

Steps:

Cook orzo in pot of boiling salted water until just tender but still firm to bite. Drain well. Transfer to large bowl. Add sun-dried tomatoes, oil, vinegar and olives and toss to blend. Let stand until cool. (Can be prepared 6 hours ahead. Cover and refrigerate. Bring to room temperature before continuing.)
Mix chopped radicchio, pine nuts, chopped basil, Parmesan and garlic into orzo mixture. Season salad to taste with salt and pepper and serve.
