Kung Pao Snow Peas image

Stir-frying retains the sweetness and crunch of these low-calorie snow peas. A blend of soy sauce, ginger, chiles and sesame oil, store-bought kung pao sauce adds heat and flavor to this dish without adding a lot of fat.

1 tablespoon peanut or grapeseed oil
1/2 large sweet onion, such as Vidalia or Maui, thickly sliced
8 ounces snow peas, ends trimmed (about 4 cups)
1/4 cup bottled all-natural kung pao, shiitake soy ginger or other low-sodium stir-fry sauce
2 tablespoons chopped unsalted roasted peanuts or cashews

Steps:

  • Heat a wok or large skillet over high heat and add the oil. Add the onions and stir-fry until just wilted, about 30 seconds. Add the snow peas and stir-fry until nearly crisp-tender, about 2 minutes more. Add the sauce and stir-fry to coat, about 1 minute.
  • Transfer to a platter or large bowl, sprinkle with the nuts and serve.

¼ teaspoon sesame oil
2 drops chili oil
¼ teaspoon packed brown sugar
2 tablespoons toasted sesame seeds

Steps:

  • Preheat the oven broiler, and move oven rack into the top position.
  • Place the snap peas onto a baking pan, drizzle with olive oil and toss to coat. Spread the snap peas out into a single layer.
  • Broil the snap peas in the preheated oven until tender, about 5 minutes.
  • Meanwhile, mix together the soy sauce, sesame oil, chili oil, brown sugar, and sesame seeds in a large bowl. When the snap peas come out of the oven, toss them immediately with the sauce.

½ teaspoon cornstarch
1 tablespoon vegetable oil

1 pound beef round steak, cut into thin strips
8 ounces snow peas

Steps:

  • In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside.
  • Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture, bring to a boil, stirring constantly. Lower heat and simmer until the sauce is thick and smooth. Serve immediately.

1 lb steak, cut into paper-thin slices (Tenderloin Tip or Round steak)
1 clove garlic, minced
1 medium onion, chopped
3 tablespoons soy sauce (imported if avail)
1 (6 ounce) package frozen pea pods
2 cups water
1/4 cup cornstarch
4 teaspoons instant beef bouillon
1/2 teaspoon sugar
3 cups rice, Hot Cooked

Steps:

  • Break cauliflower into flowerets; cut each into 1/4-inch slices.
  • Combine cauliflower, green pepper, beef, and onion in 2-qt casserole.
  • Drizzle with soy sauce; stir lightly to coat evenly.
  • Cover and microwave on high (100%) 6 minutes; stir.
  • Cover and microwave until meat is no longer pink, 3 to 5 minutes.
  • Add Frozen pea pods.
  • Cover and microwave until pea pods are thawed, 2 to 3 minutes.
  • Mix water, cornstarch, bouilion and sugar in 4-cup glass measure.
  • Stir in juices from meat.
  • Microwave uncovered on high (100%) 2 1/2 minutes; stir.
