1 large carrot, peeled
3 cups shredded napa cabbage, from 1 small cabbage
3 cups shredded romaine lettuce, from 1 small lettuce
1 small red bell pepper, seeded and deveined, thinly sliced
2 tablespoons fresh Thai basil leaves or fresh mint leaves, chopped** see Cook's Note
2 cups thinly sliced store-bought rotisserie chicken (about 2 small chicken breasts)
1/2 cup slivered almonds, toasted** see Cook's Note
1 tablespoon toasted white or black sesame seeds*
1/4 cup peanut or vegetable oil
2 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar*
1/2 teaspoon granulated sugar
Kosher salt and freshly ground black pepper, optional

Steps:

  • 1/2 cup chow mein noodles, for garnish
  • For the salad: Using a vegetable peeler, shave the carrot and add to a large salad bowl. Stir in the cabbage, lettuce, pepper, Thai basil, chicken, almonds, and sesame seeds.
  • For the dressing: In a small bowl, whisk together the oil, soy sauce, vinegar, and sugar until smooth. Season with salt and pepper, to taste, if using.
  • Pour the dressing over the salad and toss well. Garnish with the chow mein noodles and serve.

2 large skinless, boneless chicken breasts (about 12 ounces each), halved lengthwise
4 slices peeled fresh ginger
3 tablespoons fresh lime juice
3 tablespoons peanut oil
2 tablespoons packed light brown sugar
2 tablespoons fish sauce
1/2 teaspoon Sriracha
1/2 head napa cabbage, thinly sliced
2 carrots, grated
4 ounces snow peas, trimmed and thinly sliced on the diagonal
1/2 cup fresh mint leaves, torn
1/3 cup chopped salted peanuts

Steps:

  • Combine the chicken and ginger in a medium saucepan and cover with water by 1 inch. Bring to a boil over medium-high heat, then reduce the heat to medium and simmer until the chicken is cooked through, about 10 minutes. Drain and transfer the chicken to a cutting board.
  • Meanwhile, make the dressing: Whisk the lime juice, peanut oil, brown sugar, fish sauce and Sriracha in a small bowl; set aside.
  • Combine the cabbage, carrots, snow peas and mint in a large bowl. Add all but 2 tablespoons of the dressing and toss to coat.
  • Thinly slice the chicken. Top each serving of salad with the chicken and peanuts; drizzle with the remaining dressing.

SALAD:
2 to 4 cup(s) vegetable oil for frying
1 - egg
1/2 cup(s) milk
1/2 cup(s) all purpose flour
1/2 cup(s) corn flake crumbs
1 teaspoon(s) salt
1/4 teaspoon(s) pepper
1 - skinless chicken breast fillet
3 cup(s) chopped romaine lettuce
1 cup(s) chopped red cabbage
1 cup(s) chopped napa cabbage
1/2 - carrot, julienned or shredded
1 - green onion, chopped
1 tablespoon(s) sliced almonds
1/3 cup(s) crispy chow mein noodles
ORIENTAL DRESSING:
3 tablespoon(s) honey
1 1/2 tablespoon(s) rice wine vinegar
1/4 cup(s) mayonnaise
1 teaspoon(s) grey poupon dijon mustard
1/8 teaspoon(s) sesame oil

Steps:

  • Blend together all ingredients for dressing in a small bowl with an electric mixer. Put dressing in refrigerator to chill while you prepare the salad.
  • Preheat oil in deep fryer or deep pan over medium heat. The temp of the oil should be around 350 degrees F.
  • In a small, shallow bowl beat egg, add milk, and mix well.
  • In another bowl, combine flour with corn flake crumbs, salt and pepper.
  • Cut chicken breast into 4 or 5 long strips. Dip each strip of chicken first into egg mixture, then into the flour mixture, coating each piece completely.
  • Fry each chicken finger for 5 minutes or until coating has darkened to brown.
  • Prepare salad by tossing the chopped romaine with the chopped red cabbage, Napa cabbage, and carrots. Sprinkle green onion on top of the lettuce.
  • Toast almonds in a small skillet over medium heat for 3 to 4 minutes, or until light brown. Sprinkle toasted almonds over the salad, then add the chow mein noodles.
  • Cut the chicken into small bite-size chunks. Place the chicken onto the salad forming a pile in the middle. Serve with salad dressing on the side.
  • Makes 1 dinner-size salad.

This is a wonderful salad that I have made many times. I got this recipe from a friend at work and it is one of my favourites. The chicken should marinate at least 2 hours and I was'nt sure how I should work that into the prep time.

2 whole chicken breasts, cooked & cut into pieces
1/3 cup white wine
1/4 cup soy sauce
1/2 teaspoon ground ginger
4 -5 cups mixed salad greens
6 green onions, chopped
1 cup broccoli, cooked crisp
1/2 cup slivered or sliced almonds
1/4 cup sesame seeds, toasted
1/2 cup salad oil
1/4 cup white wine vinegar
1 tablespoon soy sauce
2 teaspoons dry mustard
2 teaspoons sugar
1 teaspoon ginger
1 dash Tabasco sauce

Steps:

  • Prepare a marinade by mixing wine, soy sauce and ginger.
  • Marinate chicken for at least 2 hours.
  • Drain well.
  • Put salad, green onions, broccoli, almonds and chicken in a large salad bowl.
  • Combine all dressing ingredients in a jar and shake well.
  • Toss salad with dressing and sprinkle sesame seeds on top.

3 tablespoons dark sesame oil
3 tablespoons rice wine vinegar
2 tablespoons sugar

3 ounces ramen noodles, reserve seasoning packet for another use
1 lb chicken, cooked and chopped
1/2 teaspoon garlic salt
1/2 teaspoon paprika
8 cups green cabbage, shredded
2 -3 cups red cabbage, shredded
2/3 cup green onion, chopped
1 cup almonds, sliced, toasted

Steps:

  • Combine oil, sesame oil, rice vinegar, sugar, soysauce and ginger in a bowl.
  • Break ramen noodles into small pieces. put in bowl with marinade and stir to evenly coat.
  • cover and refrigerate overnight.
  • Sprinkle chopped cooked chicken with garlic salt and paprika. Stir to evenly coat.
  • In very large bowl, combine marinade, noodles, coated chicken, green cabbage, red cabbage and chopped green onions. Stir until evenly mixed. Fold in sliced almonds.
  • Note: to toast nuts, spread on baking sheet and bake in 275 degree oven for 8 minutes or until brown. watch careffully.
