SIZZLER'S MALIBU CHICKEN
I have looked and looked for a recipe that is as close to Sizzler's as I can get. This one does it! It is not mine, however, it belongs to Chef-In-Training at http://www.chef-in-training.com/2014/05/malibu-chicken/

Steps:
- Combine Egg Yolk and garlic and pour into plastic bag. Place chicken inside of bag, seal shut making sure no extra air is inside, and make sure the chicken gets coated with egg yoke/garlic mixture. Place in fridge and marinate chicken for 4 hours.
- In a medium bowl, mix Panko, Parmesan cheese, garlic powder, salt and pepper and dump evenly in the bottom of a 9 X 13 baking dish.
- Remove chicken from bag, place chicken in baking dish. Coat chicken with mixture and bake at 350 degrees F and depending on the size of your chicken breasts, cook for 40 minutes to one hour or until chicken is cooked through. Monitor it starting at 40 minutes.
- Place one slice of ham and one slice of swiss cheese over the top of each piece of chicken and bake additional two minutes until cheese is melted.
- Malibu Dipping Sauce - Combine Grey Poupon mustard, Mayo, yellow mustard and honey in small bowl. Stir to make sure all ingredients are evenly combined. Use to dip chicken inches Enjoy!

Steps:
- Stir egg and 1 tablespoons water together with a fork.
- Combine flour, salt and pepper and coat each chicken piece, dip into egg mixture and then coat with breadcrumbs making sure to press crumbs in firmly.
- Heat oil and butter in large skillet over medium heat.
- Brown chicken 4 to 5 minutes on each side.
- Place browned chicken on cookie sheet or oven proof platter, top each piece with a slice of ham and slice of cheese.
- Bake at 350 degrees, until cheese melts.
- For the dipping sauce combine mustard and mayonnaise.
MY CHICKEN MALIBU
This is an adaptation from a 'Sizzler' dish called Malibu Chicken. It features a lovely chicken breast topped with ham and melted swiss cheese. It is best served with a tangy honey mustard sauce and fresh steamed vegetables.

- Flatten chicken breasts to 1/4-in. thickness. Spread 1 tablespoon mustard over each; layer with ham, cheese and pineapple. Fold chicken over pineapple; secure with toothpicks. Brush bundles with remaining mustard., In a shallow bowl, combine the bread crumbs, salt and pepper. Roll bundles in bread crumb mixture; place in an 11x7-in. baking dish coated with cooking spray. - Mix together the creole mustard sauce ingredients and refrigerate.
- In a small bowl, beat egg yolks with garlic. Place chicken and egg mixture in a large Ziploc bag, squeeze out all the air and seal tightly. Refrigerate for at least 4 hours, or overnight if possible.
- Preheat oven to 400 degrees. Melt butter and pour into bottom of a 9x13 baking dish. Mix together the bread crumbs and Parmesan cheese, parsley, garlic powder, salt and pepper. Dip marinated chicken in crumb mixture. Place coated chicken in baking dish, and pour remaining egg mixture over the top.
- Bake for 15 min on each side or until chicken is no longer pink and juices run clear. Top each piece of chicken with ham and slice of Swiss cheese. Place back in the oven for about 5 min or until cheese is melted. Remove from oven and serve with Creole Mustard Sauce.
- These also make GREAT sandwiches or wraps the next day, just cut it into strips.

- Preheat your oven to 400 degrees. Line a cookie sheet with tin foil. Place an oven safe rack inside your tray on top of the cookie sheet. Set aside.
- Slice your chicken in half lengthwise giving you two thin chicken pieces.
- Whisk together the butter and 2 tablespoons of Dijon in a shallow bowl.
- Whisk together the Italian breadcrumbs and Parmesan in a separate shallow bowl.
- Dip your chicken into the butter mixture followed by the breadcrumbs. Make sure to coat evenly.
- Transfer to your prepared cookie sheet. Bake 20 to 30 minutes or until your chicken reaches an internal temperature of 165 degrees. Flip halfway through for even cooking.
- Top the chicken with a slice of ham followed by a slice of cheese. Bake an additional 3-5 minutes or until the cheese is melted.
- Combine all of the ingredients for the dipping sauce in a small bowl. Mix until combined. Serve with the chicken.

- Preheat oven 400 degrees F. In a shallow bowl or pan (pie plates work great), lightly beat eggs and milk with a fork. In another shallow bowl or pan, season flour with salt and pepper. Place panko into a 3rd shallow bowl or pan. Spray a baking sheet with cooking spray.
- Dredge chicken breast in the flour (shake off excess), then dip into egg mixture (allow excess to fall off), and lastly, coat evenly with panko breadcrumbs. Place chicken breast on the baking sheet. Repeat with the remaining chicken breasts. Lightly spray tops of chicken with cooking spray.
- Bake for about 30 minutes or until a meat thermometer shows them to be 160 degrees F internally.
- Remove baking sheet from the oven. Top each chicken breast with 3 slices of ham and place a slice of cheese on top of ham (you may need to cut cheese in half to avoid it hanging off). Return to oven and bake just until cheese is all melted (approximately 5 minutes).

- Preparation: Preheat the oven to 350 degrees and place rack into the middle position. Finely crush the pork rinds in a food processor or place them in a bag and bash them with a mallet or rolling pin. Ready a 9 x 13 inch glass baking dish or a 1/4 size sheet pan for the chicken.
- Method: Put the chicken on a plate and pat dry. Season with salt and pepper. Mix the mayonnaise, mustard and sweetener in a bowl. Add 1/4 cup of the mustard mixture to the plate with the chicken, reserving the rest of the mixture as the dipping sauce. Roll the chicken in the mixture with a fork, right there on the plate. - Bake: Bake for 30 - 40 minutes or until the chicken is cooked through. Remove the chicken from the oven and add the ham and cheese on top. Place back into the oven until the cheese has melted. Serve. (Serves 4-6 people)

- Grab 3 pie plates or similar wide, shallow dishes. Place flour in one, bread crumbs in another, and whisk egg with vegetable oil in the 3rd dish. Pat chicken dry with paper towels. One by one, dip the pieces into flour, then into the egg/oil mixture, then lastly into the Panko bread crumbs.
- Coat an oven-proof skillet with a generous amount of olive oil and place over medium heat. As you bread each piece of chicken, transfer it to the pan. Allow to cook for about 3 to 4 minutes per side, until nicely browned. Season it with a little salt and fresh ground black pepper while it cooks. You don't want to cook the chicken through at this point. Once browned, layer the chicken with a piece of ham and then top with the Swiss cheese.
- Transfer pan to the preheated oven and bake for 20 to 25 minutes, till chicken is thoroughly cooked through to the center. Serve with dipping sauce.

- In a small bowl, combine together mayonnaise and mustard. Start with 1 1/2 tablespoons mustard and add more, as desired.
