1 package (3 ounces) ramen noodles
3/4 cup shredded cabbage
3/4 cup shredded romaine
2 tablespoons sliced green onion
2 teaspoons slivered almonds, toasted
2 teaspoons sesame seeds, toasted
1 tablespoon rice vinegar
1-1/2 teaspoons sugar
1-1/2 teaspoons canola oil
1 teaspoon water
1/2 teaspoon sesame oil
1/4 teaspoon reduced-sodium soy sauce
Dash salt
Dash pepper

Steps:

  • Split ramen noodles in half (save the seasoning and half of the noodles for another use). Break apart remaining noodles; place in a bowl. Add the cabbage, romaine, onion, almonds and sesame seeds. , For dressing, in a jar with a tight-fitting lid, combine the vinegar, sugar, canola oil, water, sesame oil, soy sauce, salt and pepper; shake well. Add dressing to salad and toss to coat. Serve immediately.

Almond cookies like these are thought to resemble coins, making them particularly popular as a symbol of good fortune during the Chinese New Year. Traditional recipes are made with lard and flavored with almond extract. We used butter and almond flour in these to boost the nutty flavor and create a crumbly texture similar to pecan sandies. Enjoy them year-round, particularly with a cup of tea or coffee.

1 cup all-purpose flour (see Cook's Note)
1/3 cup almond flour (or almond meal)
1/2 teaspoon baking soda
1/4 teaspoon fine sea salt
1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup granulated sugar
1/4 teaspoon almond extract
2 large egg yolks, at room temperature
15 whole blanched almonds

Steps:

  • Sift the all-purpose flour, almond flour, baking soda and salt together into a large bowl. Whisk any bits of almond flour left in the sifter into the sifted flour mixture.
  • Combine the butter and sugar together in the bowl of a stand mixer fitted with a paddle attachment. Beat on medium-high speed until light and fluffy, about 4 minutes. Add the almond extract and 1 egg yolk and beat until the mixture is smooth and combined, about 2 minutes. Scrape down the sides and the bottom of the bowl with a rubber spatula. Reduce the speed to medium low, add the flour mixture and beat until no streaks of flour remain, about 2 minutes.
  • Wrap the dough in plastic and refrigerate for 1 hour.
  • When ready to bake, position a rack in the center of the oven and preheat to 350 degrees F. Line a baking sheet with parchment.
  • Whisk together the remaining egg yolk and 1 tablespoon of water in a small bowl. Set aside.
  • Scoop the dough by tablespoons (you can use a 1/2-ounce ice cream scoop) and place 2 inches apart on the prepared baking sheet. Roll each scoop into a ball and return it to the baking sheet. Flatten each with your palm into a 2-inch round. Gently press an almond onto each and brush with the egg wash.
  • Bake, rotating the baking sheet halfway through, until the cookies are golden brown on the edges, 16 to 18 minutes. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely, about 10 minutes.
  • Store the cookies in a tightly sealed container at room temperature for up to 5 days.

3 tablespoons toasted sesame seeds
1 cup toasted almond
1 (3 ounce) package chicken-flavored ramen noodles, reserve seasoning packet for dressing
1/4 cup oil
3 tablespoons white vinegar
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon pepper
seasoning (reserved packet)

Steps:

  • Crumble ramen noodles and combine with green onions, coleslaw mix, sesame seeds and almonds.
  • Mix dressing ingredients (oil, vinegar, sugar, salt, pepper and Ramen Noodle flavor packet) in separate bowl.
  • Pour dressing over salad mixture.

1/4 head cabbage, shredded
1/4 lb snow peas, cut on the diagonal into matchsticks
2 carrots, cut into matchsticks
1/4 fennel bulb, sliced as thinly as possible
1/3 1/3 cup ponzu sauce, mitsukan brand preferred
1 tablespoon sesame seeds
1/2 teaspoon dark or toasted sesame oil
salt

Steps:

  • 1. Slice the snow peas on the diagonal into thin matchstick-sized pieces.
  • 2. For carrots, you can purchase matchstick carrots, or slice them yourself (make sure to use a very sharp chef's knife).
  • 3. I cut the cabbage into four wedges. We will only use 1 of the wedges. Then, I shred the cabbage as thinly as possible. To do this, use a vegetable peeler and go along the corner, or use a box grater with large holes or use a sharp knife to shred by hand.
  • 4. Now for the fennel, cut the white bulb from the green top. Cut the bulb into quarters and slice one of the quarters as thin as possible using a knife, a vegetable peeler or a mandoline. Save all the leftover fennel for another recipe.
  • 5. The dressing ingredients are simple: ponzu, toasted sesame oil, sesame seeds and salt. Add 1/4 cup of ponzu to a bowl, then add the sesame oil and seeds. Season with a big pinch of salt and whisk with fork.
  • 6. Pour the dressing over the snow peas, carrots, cabbage and fennel.
  • 7. Toss to combine and taste. You can add more ponzu and salt if needed and serve immediately..

16 ounces Coleslaw
2 (3 ounce) packages oriental-flavor instant ramen noodles, reserve flavor packets for dressing (the Top Ramen brand is vegan)
4 ounces sunflower seeds
2 ounces slivered almonds
1 bunch green onion, sliced
1/3 cup sugar
3/4 cup oil
1/4 cup vinegar

Steps:

  • I have had this with the noodles cooked and with them raw. Raw noodles gives the slaw more crunch, but I prefer them cooked. You can still have crunch with the seeds and nuts.
  • Either way, mix together the slaw ingredients in a large container. Whisk together the dressing ingredients and pour over the slaw mixture. Toss together. Cover and refrigerate for an hour.
  • If you're impatient you can eat it right away. Keeps for a few days, but it's never around long enough in my house to really find out it's shelf life.

1/2 head green cabbage, shredded
10 red radishes, ends cut, diced
4 green onions, thin sliced including tops
1 cup cold water
2 tablespoons white vinegar
1/2 cup almonds (sliced or slivered)
1/2 teaspoon celery seed
1 tablespoon lime juice
2 tablespoons tomato ketchup
1 tablespoon brown sugar
1 tablespoon lime zest
1/2 cup ponzu sauce

Steps:

  • Add shredded cabbage, diced radishes and sliced green onions in a serving bowl.
  • Add water and vinegar. Stir to mix. Set Aside.
  • Mix Dressing in a small bowl.
  • Drain vegetables in a colander and return to serving bowl.
  • Sprinkle celery seed and lime juice over the vegetables.
  • Add the dressing and gently toss to mix.
  • Cover and refrigerate 30 minutes before serving.
  • Note: Cold Water and White Vinegar will crisp the cabbage and radishes.
  • The slaw does not get soggy.

1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 lime, juiced
2 tablespoons sesame oil
1/2 cup peanut butter
1 head Napa cabbage, sliced thin
1 red bell pepper, julienne fine
1 yellow bell pepper, julienne fine
2 serrano chiles, minced fine
1 large carrot, grated fine with a peeler
3 green onions, cut on the bias, all of white part and half of the green
2 tablespoons chiffonade cilantro
2 tablespoons chiffonade mint
1/2 teaspoon ground black pepper

Steps:

  • In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter. In a large bowl, combine all other ingredients and then toss with dressing. You can save some of the dressing to dress noodles that can be added to this dish along with stir fried pork to make an entire meal.

I always like to have a few salads at my BBQ to balance out the heavier stuff. Cole slaw is one of the classics, and I love it, but I like to make it my own by mixing in a few Asian flavors. I use the pre-shredded coleslaw mix that comes in bags at the supermarket or for red and green shredded cabbage packaged separately. And then I dress it up with some other fresh ingredients to make an outstanding and different kind of slaw.

1 bunch (6 large) scallions, trimmed and thinly sliced
2 (16-ounce) bags coleslaw mix or 1 (16-ounce) bag each of shredded green and shredded red cabbage
1 small red onion, thinly sliced
1/4 cup soy sauce
1/4 cup lemon juice
1/4 cup vegetable oil
2 tablespoons grated fresh ginger (from about a 1-inch piece)
2 tablespoons white vinegar
2 tablespoons dark brown sugar
2 teaspoons Asian sesame oil
2 teaspoons sesame seeds, optional
1 teaspoon salt
20 grinds black pepper

Steps:

  • Rough up the scallion slices a little with your fingers so all the little layers of the scallion whites separate. Toss the coleslaw mix or both kinds of cabbage, the red onion and scallions together in a large bowl until everything is thoroughly mixed. You can make the slaw up to this point up to a day in advance as long as you keep it refrigerated. Before serving, simply bring the slaw back to room temperature, make the dressing and toss.
  • Stir the remaining ingredients together in a small bowl until blended, then pour over the vegetables. Serve within 1 hour of dressing or the cabbage will get wilty and sad.
