PERUVIAN BEEF SALTADO

1 tablespoon vegetable oil
1 to 1 1/2 pounds flank steak, sliced into 1 1/2-inch wide strips
Kosher salt and freshly ground black pepper
1 large red onion, quartered and thinly sliced
1 large tomato, coarsely chopped
1 garlic clove, finely minced
1 teaspoon soy sauce
1 tablespoon red wine vinegar

Steps:

  • Heat the oil in a large wok or skillet over medium-high heat. Add the steak, season with salt and pepper, and stir-fry until the meat is browned on all sides, about 8 to 10 minutes.
  • Using tongs, transfer the steak to a plate and set aside. To the drippings in the pan, add the onion, tomato, and garlic; season with salt, and pepper. Cook and stir it until the onions are soft and the tomatoes start to break down, about 2 to 4 minutes. Return the beef to the pan, add the soy sauce and red wine vinegar. Cook for 1 minute, season with salt and pepper, to taste, and serve.

12 ounces rib-eye steak
Salt and freshly ground black pepper
Garlic, to taste
1/8 cup vegetable oil, plus more for deep-frying
Handful precooked French fries
1/4 medium red onion, thinly sliced
1/4 medium tomato, sliced
3 to 4 teaspoons vinegar
1 teaspoon soy sauce
1 to 2 ounces beer
2 to 3 pinches chopped parsley leaves
Steamed white rice, for serving

Steps:

  • Cut the steak in long pieces 1/4 by 1 1/2 to 2 inches. Season the steak with salt, pepper and garlic, to taste.
  • In a deep-fryer or heavy-bottomed pot, heat enough oil to come halfway up the sides of the pot, to 350 degrees F. Add the fries and fry until golden. Remove them to paper towels to drain.
  • Add 1/8 cup of vegetable oil to a medium skillet over medium heat. Once the oil is hot add the rib-eye. After the meat has browned add the onions and cook until they soften. Add the tomato, vinegar and the soy sauce. Pour in the beer and simmer until the vegetables are cooked through. Remove the beef mixture to a serving plate and top with the fries. Garnish with parsley and serve with white rice.

2 cups water
1 teaspoon salt
1 cup long-grain white rice
1/2 cup frozen corn kernels, thawed
Oil, for frying
1 1/2 pounds russet potatoes, scrubbed (unpeeled), cut into 1/2-inch thick rounds, then cut crosswise into 1/2-inch strips
2 1/2 tablespoons olive oil
1 1/2 pounds beef tenderloin steaks, cut crosswise into 1/4-inch thick strips
1 red onion, cut through stem end into 8 wedges, peeled
3 tomatoes, each cut into 8 wedges
3 tablespoons minced aji Amarillo chile (Peruvian yellow pepper) from jar or minced seeded red jalapeno chiles
1/2 cup chopped fresh cilantro
2 tablespoons soy sauce
1 tablespoon vinegar

Steps:

  • Traditional Peruvian style stir-fry of sauted beef tenderloin, onions, tomatoes, cilantro, soy sauce, garlic with fried potatoes and rice.
  • Boil the broth in a small saucepan until reduced to 1 cup, about 8 minutes. Set aside.
  • Bring 2 cups water and 1 teaspoon salt to a boil. Add rice. Cover, then reduce heat and cook about 15 minutes.
  • Mix in the corn. Cover and let stand 5 minutes, then fluff the rice with a fork.
  • Meanwhile, heat enough oil in a large, deep nonstick skillet to reach the depth of 1/8 inch. Add potatoes and fry until tender, about 10 minutes. Drain on paper towels.
  • Heat the 2 1/2 tablespoons olive oil in a large skillet over high heat. Add the beef and saute until brown, 1 to 2 minutes.
  • Using slotted spoon, transfer the beef to a plate. Add the onion wedges to the same skillet and cook until beginning to soften turning with tongs, about 2 minutes per side. Add the tomatoes, chile, cilantro, soy sauce, vinegar, and the reserved reduced broth and cook 2 minutes to soften the tomatoes. Add the beef and potatoes; toss to heat through.
  • Spoon beef-potato mixture into shallow soup bowls. Serve rice mixture alongside.

GRILLED LOMO SALTADO

1 skirt steak
2 medium red onions, cut in 1/2 lengthwise
1 clove garlic
1/4 teaspoon salt
4 teaspoons rice vinegar
4 teaspoons soy sauce
4 tablespoons canola oil
1 teaspoon ground cumin
3/4 teaspoon ground black pepper
1 medium Yukon gold potato, peeled and cut into wedges
1/2 teaspoon paprika
2 medium heirloom tomatoes, cut into wedges
1/4 cup chopped cilantro leaves

Steps:

  • Have grill pre-greased and preheated to medium-high.
  • Place steak in 1 bowl and onions in another. Using a knife, make a paste by combining garlic and 1/4 teaspoon salt. Whisk together garlic paste, rice vinegar, soy sauce, 2 tablespoons of canola oil, cumin, and ground black pepper. Divide marinade between steak and onions. Refrigerate for 1/2 hour.
  • Before grilling, allow steak and onions to come to room temperature. Place steak on grill and cook about 4 minutes per side for medium-rare. Discard marinade. When done, let steak rest before slicing.
  • Place onions face down on grill and cook until slightly soft, about 6 minutes per side. When done, cut onions into wedges.
  • Sprinkle paprika over potatoes and toss with remaining canola oil. Place on grill and cook until soft inside, about 6 minutes per side. Season with salt when done.
  • In a large bowl combine steak and juices, onions, potatoes, tomatoes, cilantro, and reserved marinade. Toss gently and re-season with salt and pepper if needed. Serve warm.

PERUVIAN TOASTED SWEETCORN, AVOCADO & QUINOA SALAD



Peruvian toasted sweetcorn, avocado & quinoa salad image

75g uncooked quinoa
140g frozen sweetcorn
1 tbsp extra-virgin olive oil
75g cherry tomatoes , quartered
1 small pack coriander , leaves roughly chopped
2 spring onions , trimmed and finely sliced
finely grated zest and juice 1 lime
1/2 long red chilli , finely chopped (deseeded if you don't like it too hot)
1 ripe but firm avocado
25g mixed nuts , such as brazils, almonds, hazelnuts, pecans and walnuts

Steps:

  • Half fill a medium pan with water and bring to the boil. Rinse the quinoa in a fine sieve then add to the water, stir well and simmer for about 12 mins or until just tender.
  • While the quinoa is cooking, put the sweetcorn in a dry frying pan and place over a medium-high heat. Cook for 5-6 mins, turning every now and then until lightly toasted. Set aside.
  • Rinse the cooked quinoa in a sieve under cold water, then press hard with a ladle or serving spoon to remove as much of the excess water as possible.
  • Tip the quinoa into a bowl and toss with the olive oil, sweetcorn, tomatoes, coriander, spring onions, lime zest and chilli. Season well with black pepper.
  • Halve and stone the avocado. Scoop out the flesh with a large metal spoon and cut into slices. Toss with the lime juice. Add the avocado and nuts to the salad and toss gently together before serving.

  • Wash and prep all of your produce, then chop according to the recipe instructions. Try to cut the Mushroom, Tomato, and Red Onion pieces evenly, so they all cook through at the same time.
  • Heat your Wok (or large sauté pan) over high heat, then add in 1 tbsp of Grapeseed Oil. Once the Oil has heated, add the Garlic to the wok and sauté for 10 or so seconds, then add in the sliced Mushrooms, dry spices, and a good pinch salt & pepper. Mix well, then pour the Tamari & Red Wine into the wok as well. Sauté for 2-3 minutes, until the Mushrooms start to cook down and simmer.
  • Add the sliced Red Onions and stir well; cook for 2 minutes, then add the Ají Panca to the wok and mix until well-combined. Finally, carefully add the sliced Tomatoes to the wok and gently sauté for 45-60 seconds, just until the Tomatoes become well-heated and absorb some of the sauce. Turn the heat off (so the Tomatoes do not overcook) and transfer to serving dishes.
  • Top with fresh Parsley and serve alongside French Fries and White Rice. Leftovers will keep in the fridge for up to 5 days.
