I tried these cookie bars at a friend's house and immediately wanted the recipe. These bars are so rich and decadent, but they really couldn't be any easier to make.

30 chocolate sandwich cookies (such as Oreo®), crushed
1 (14 ounce) can sweetened condensed milk
1 cup semisweet chocolate chips
¾ cup all-purpose flour
¼ cup butter, softened
1 teaspoon vanilla extract
1 cup sweetened flaked coconut
2 tablespoons powdered sugar, or more as needed

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease an 8x8-inch baking pan.
  • Mix cookies, sweetened condensed milk, chocolate chips, flour, butter, and vanilla together in a large bowl. Fold in coconut. Press mixture into the prepared baking pan.
  • Bake in the preheated oven until lightly browned, 25 to 30 minutes. Dust with powdered sugar.

Chocolate Oreo Cookie Traybake.. Seriously What Could Be Better than some Oreo Cookie Bars?!

275 g Plain Flour
1 tsp Bicarbonate of Soda
1/2 tsp Salt
1 tbsp Cornflour
115 g Unsalted Butter/Stork
55 g Granulated Sugar
135 g Light Brown Sugar
1 Medium Egg
1/2 tsp Vanilla Extract
300 g Cadbury's Oreo Chocolate ((chopped))
8-10 Oreos ((chopped))

Steps:

  • Preheat your oven to 190C/170C Fan and line a 9x9inch Square Tin with parchment paper, and leave to the side for now.
  • Whisk/Mix the Plain Flour, Bicarbonate, Salt and Cornflour together so its evenly distributed - leave to the side.
  • In a larger bowl, melt the butter. Add in the two sugars, and whisk for about 2 minutes so the sugar starts to dissolve and the mixture is smooth. Add in the Egg and the Vanilla, and whisk again briefly till smooth. (I used an electric whisk)
  • Add in the Dry Ingredients and chopped up Cadburys Oreo Bar and mix with a spatula till a thick cookie dough is formed.
  • Press the mixture into the bottom of the tin and press in the chopped Oreos onto of the traybake. Bake the traybake in the oven for 20-25 minutes, until the top of the cookie bake looks 'dry'!
  • Leave the cookie bake to cool for about 10 minutes, then leave to cool fully on a wire rack. Cut the bake into 4×4 for decent sizes, or 5×5 for smaller ones! Enjoy!

1 1/4 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter (, softened)
1/2 cup light brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup white chocolate chips
6 Oreo cookies (, chopped)

Steps:

  • Preheat oven to 350°F. Grease an 8x8'' baking pan (or line with parchment paper).
  • Add flour, cocoa powder, baking soda and salt to a small bowl and stir to combine.
  • To a large mixing bowl add butter, brown sugar and granulated sugar. Beat with electric mixers (or in your stand mixer) until well creamed together, about 3 minutes. Add egg and vanilla and mix well.
  • Add dry ingredients and mix just until incorporated. Stir in Oreos and white chocolate chips. Press dough into pan.
  • Bake for about 18-25 minutes or until a toothpick inserted in the center comes out clean.

1 1/2 cups Oreo cookies, crushed
5 tablespoons unsalted butter, melted
5 tablespoons unsalted butter, at room temperature
1/3 cup packed brown sugar
3 tablespoons granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
3/4 cup all-purpose gold medal flour
3/4 cup mini chocolate chip
10 ounces cream cheese, at room temperature
1/4 cup granulated sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1/4 cup Oreo cookies, crushed

Steps:

  • 1. Preheat the oven to 325°F Line an 8-inch square baking pan with parchment paper allowing a little overhang. Spray with cooking spray and set aside.
  • 2. In a medium bowl, mix the Oreo crumbs and melted butter together until thoroughly combined. Press the mixture into the bottom of the prepared pan. Bake in preheated oven for 6-7 minutes. Remove pan to a cooling rack. Leave the oven on.
  • 3. While the crust is cooling, prepare the cookie dough. In the bowl of a stand mixer, beat the butter, brown sugar, granulated sugar, salt and vanilla until smooth and combined, about 1 minute. Slowly mix in the flour and mix until just incorporated. Mix in the mini chocolate chips. Set aside.
  • 4. In the bowl of a stand mixer, cream the cream cheese and sugar together until smooth. Mix in the egg and vanilla just until incorporated. Mix in the crushed Oreos. Pour the Oreo cheesecake batter into the prepared crust.
  • 5. Use your hands to form clumps of cookie dough. Flatten the clumps of dough in the palm of your hands to flatten them out. Distribute the cookie dough evenly on top of the cheesecake batter. You will cover most of the cheesecake batter. It doesn't matter if it isn't perfect.
  • 6. Bake for about 30-35 minutes, until the cookie dough top feels dry and firm and the pan is set. You can give it a little shake to see if it is set. Move bars to a cooling rack and allow to cool completely.
  • 7. Lift the cooled bars out by the overhang; cut into squares and store in the refrigerator. Serve cold or at room temperature.

These are so easy - a little bit of chocolate heaven. I have been making these for over 10 years and have been asked more for this recipe than any other. They are named for a woman that gave a friend the recipe - we never knew Wanda but we love her for sharing this one. One reviewer has suggested I rename these "Chocolate Insanity Bars." :) * Some have had trouble with them being gooey - my advice is to use national brand name condensed milk, not store brand, as it tends to be thicker. Also, keep them refrigerated or in a cooler. Enjoy!

16 ounces Oreo cookies
3/4 cup margarine, melted
14 ounces sweetened condensed milk (Borden, Carnation)
12 ounces mini chocolate chips, divided

Steps:

  • Preheat oven to 350 degrees.
  • Place cookies in large bowl and crush into small pieces with a small mallet, or place them in a zip bag and crush with a rolling pin, then place in large bowl. Stop when pieces are smaller than a dime but not yet crumbs.
  • Pour melted margarine over cookies in bowl and mix until all cookie pieces are well coated. Press in bottom of ungreased 9x13 baking pan.
  • Place sweetened condensed milk and 1 cup of the mini chocolate chips in a microwave safe bowl and heat until melted together (30 seconds at a time with stirring in between until smooth). Pour over cookie crust. Sprinkle remaining chocolate chips over top.
  • Bake 10 minutes.
  • Cool in refrigerator at least 2 hours before cutting.
