Dulce de Leche Brownies image

These heavenly caramel-swirled brownies are the perfect wrap-up to your Cinco de Mayo celebration.

Provided by Ree Drummond

Categories     HarperCollins     Dessert     Cinco de Mayo     Brownie     Butterscotch/Caramel     Chocolate     Bake     Christmas

Yield Makes 16 brownies

Number Of Ingredients 8

Nonstick baking spray
5 (1-ounce) squares unsweetened chocolate
1 cup (2 sticks) butter, softened
2 cups sugar
4 eggs
1 1/4 cups all-purpose flour
1 tablespoon vanilla extract
1/2 (14-ounce) can dulce de leche

Steps:

  • Preheat the oven to 325°F. Generously spray an 8-inch square baking pan or an 8x10-inch baking pan with nonstick baking spray.
  • Place the chocolate in a microwave-safe bowl and nuke it in about 45-second intervals, stirring each time, until it's completely melted. Set it aside to cool for 20 minutes or so.
  • Add the butter and the sugar to the bowl of an electric mixer fitted with the paddle attachment and cream them together until they're light and fluffy.
  • Add the eggs, one at a time, beating well after each addition.
  • With the mixer on low, slowly drizzle in the chocolate until it's all combined. Add the flour and the vanilla. And mix until it's all combined, scraping the sides of the bowl halfway through.
  • Spread the batter into the greased pan.
  • Next, crack open the can of dulce de leche and place half of it in a glass bowl. Warm it in the microwave for 30 to 45 seconds, just to make it a little more stirrable.
  • Drop large dollops of dulce de leche on the surface of the batter then use a knife to slowly swirl it through the brownie batter. Don't drag the knife sideways through the batter; hold it so the thin side of the knife leads the way.
  • Bake the brownies for 45 to 50 minutes, or until the center is almost totally set.
  • Let the brownies cool in the pan for 15 minutes then use a very sharp serrated knife to cut the brownies into squares and place them on a pretty cake stand.

DULCE DE LECHE BROWNIES

A moist and gooey chocolate brownie with pockets of dulce de leche inside and caramel on top. Truly amazing! If you have enough willpower, try and leave them overnight. They are even better and more moist the next day.

Yield 16

Number Of Ingredients 12

cooking spray
¼ cup butter
1 (1 ounce) square dark chocolate, chopped
½ cup white sugar
½ cup brown sugar
½ cup all-purpose flour
6 tablespoons unsweetened cocoa powder
2 teaspoons vanilla extract
¼ teaspoon salt
2 eggs
½ cup dulce de leche
2 tablespoons caramel dessert topping, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan with cooking spray.
  • Place butter in the top of a double boiler over simmering water. Stir until melted. Add chocolate and stir until melted and combined. Remove from heat.
  • Stir white sugar, brown sugar, flour, cocoa powder, vanilla extract, and salt into the melted chocolate mixture. Stir in eggs with a spoon or spatula until just combined; try not to use more than 30 or 40 strokes.
  • Pour a little over 1/2 of the brownie batter into the prepared pan. Drop small spoonfuls of the dulce de leche evenly over the top. Gently drag a knife through the dulce de leche to create swirls. Cover with remaining brownie batter. Drizzle caramel on top in a swirling pattern.
  • Bake in the preheated oven until edges start pulling away from the sides of the pan, 25 to 30 minutes. Let the brownies cool completely before cutting them into squares.

DULCE DE LECHE

Dulce de Leche image

Categories     dessert

Time 3h5m

Yield about 1 cup

Number Of Ingredients 4

1 quart whole milk
12 ounces sugar, approximately 1 1/2 cups
1 vanilla bean, split and seeds scraped
1/2 teaspoon baking soda

Steps:

  • Combine the milk, sugar, vanilla bean and seeds in a large, 4-quart saucepan and place over medium heat. Bring to a simmer, stirring occasionally, until the sugar has dissolved. Once the sugar has dissolved, add the baking soda and stir to combine. Reduce the heat to low and cook uncovered at a bare simmer. Stir occasionally, but do not re-incorporate the foam that appears on the top of the mixture. Continue to cook for 1 hour. Remove the vanilla bean after 1 hour and continue to cook until the mixture is a dark caramel color and has reduced to about 1 cup, approximately 1 1/2 to 2 hours. Strain the mixture through a fine mesh strainer. Store in the refrigerator in a sealed container for up to a month.

EVEN SLUTTIER SLUTTY BROWNIES

Even Sluttier Slutty Brownies image

This recipe is a re-creation of the amazing and decadent Slutty Brownies from the blog What's Gaby Cooking (http://whatsgabycooking.com), which were inspired by The Londoner blog (http://www.thelondoner.me). But what makes them different--ahem--"sluttier"? I've amped up the recipe with a secret layer of caramel plus salted caramel on top. How's that for filthy!

Time 1h5m

Yield 12 brownies, 12 serving(s)

Number Of Ingredients 22

1 (18 ounce) box brownie mix, prepared and unbaked OR
10 tablespoons unsalted butter
1 1/4 cups white sugar
3/4 cup cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
2 large eggs
1/2 cup all-purpose flour
1 (15 1/2 ounce) package Oreo cookies (my pan fit 16)
1 (6 ounce) jar dulce de leche
1 teaspoon fleur de sel
1 (18 ounce) roll ready-made refrigerated chocolate chip cookie dough, OR
1/2 cup unsalted butter (at room temp)
1/4 cup brown sugar
3/4 cup white sugar
1 egg
1 1/4 teaspoons vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup semi-sweet chocolate chips

Steps:

  • Pre-heat your oven to 350 degrees.
  • Line the bottom of an 8x8 baking pan (or use a 9x13 pan if gooey centers bother you) with tin foil and then spray the foil liberally with baking spray.
  • Make the brownie layer per box instructions (without baking) OR: In a medium sauce pan, melt the butter over medium-high heat. Once melted, add the sugar and cocoa powder. Stir to combine and remove from the heat. Add the salt, vanilla and eggs to the batter and then whisk until combined. In a separate bowl, sift the flour and then slowly incorporate the flour into the batter until it's all mixed. Set the batter aside.
  • If making your own cookie dough: In a large bowl, cream together the butter and sugars with a hand mixer. Add the eggs one at a time and then the vanilla, scraping down the sides of the mixing bowl as you go. Add the flour, salt, baking soda and baking powder and mix on low until incorporated. Fold in the chocolate chips and then set aside.
  • Assemble!
  • Start by gently pressing the cookie dough into the bottom of the pan, making sure to create an even layer. (I found it helpful to use the back of a 1-cup measure cup.).
  • Then add a layer of Oreos on top of the cookie dough. Nudge them as close together as possible without overlapping.
  • Get ready for the gluttony: Remove the lid on the caramel sauce/dulce de leche and microwave for 35 seconds (until it becomes slightly warm and spreadable). Use a spoon to drizzle the caramel over the Oreos.
  • Lastly: Pour the brownie batter on top of the caramel-Oreo layer. Use a spatula to make sure it's even.
  • Bake for 30-35 minutes. Test with a knife to see if the center is done. It's OK if the knife has some brownie on it. It's easy to over-bake the cookie layer if left in the oven too long.
  • Once out of the oven, heat up the caramel again as in step 8. With a spoon, lightly drizzle the caramel over the brownies. Sprinkle with the salt.
  • *Note: Although you can scarf these right away (they'll be crumbly but delicious and gooey!), they actually get better with age. Let them rest for several hours for easier handling and serving.
  • *Note: Prep time is reduced if using boxed/ready-made mixes.
