2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
2 cups sugar
1 cup (2 sticks) unsalted butter, room temperature
1 tablespoon grated orange peel
4 large eggs
1 cup sour cream
1/2 cup whole milk
Orange Cream Cheese Frosting

Steps:

  • Preheat oven to 350°F. Butter three 9-inch-diameter cake pans. Line bottom of pans with waxed paper. Butter and flour pans; tap out excess flour. Sift first 8 ingredients into medium bowl. Using electric mixer, beat sugar, butter and orange peel in large bowl until fluffy. Beat in eggs 1 at a time. Stir flour mixture into butter mixture alternately with sour cream and milk. Divide batter among prepared pans.
  • Bake cakes until tester inserted into center comes out clean, about 25 minutes. Transfer pans to racks and cool 10 minutes. Turn cakes out onto racks and cool completely. (Can be made 1 day ahead. Store airtight at room temperature.)
  • Place 1 cake layer on platter. Spread 2/3 cup frosting over. Top with second cake layer. Spread 2/3 cup frosting over. Top with third cake layer. Cover top and sides of cake with remaining frosting. (Can be made 1 day ahead. Cover with cake dome and store at room temperature.)

Steps:

  • Blend the cream cheese, butter, orange juice, orange zest, and vanilla in a large bowl, using an electric mixer set at medium speed, until smooth.
  • Add the sugar and continue to beat until light and creamy -- about 3 more minutes.
  • Add the food coloring and gently stir until the color is uniform.
  • Chill the frosting until ready to ice the cupcakes or cake.

2 oranges
2/3 cup water
1/2 cup sugar
1 tablespoon apple cider vinegar
Cake
1 cup cake flour
1 teaspoon baking powder

1/4 teaspoon ground cloves
1/8 teaspoon salt
1/2 cup whole milk
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
1 teaspoon grated orange peel
Powdered sugar
Frosting
1 8-ounce package cream cheese, room temperature
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1/4 cup fresh orange juice
1 tablespoon grated orange peel
2 teaspoons vanilla extract
4 cups powdered sugar

Steps:

  • For glazed orange peel:
  • Using vegetable peeler, remove rind from oranges in strips. Cut rind into matchstick-size strips. Place strips in small saucepan; cover with water. Bring to boil. Drain; rinse with cold water. Drain. Combine 2/3 cup water, sugar, and vinegar in medium saucepan. Bring to simmer, stirring to dissolve sugar. Add orange strips; simmer until translucent, about 10 minutes. Drain. Cool on sheet of foil. (Can be made 1 week ahead. Cover and refrigerate.)
  • For cake:
  • Preheat oven to 375°F. Butter 15x10x1-inch jelly-roll pan. Line bottom of pan with parchment paper; butter parchment. Whisk first 6 ingredients in medium bowl to blend.
  • Heat milk in medium saucepan over medium heat to 150°F. Using electric mixer, beat sugar and eggs in large bowl until fluffy, about 4 minutes. Beat in vanilla and grated orange peel. Beat in flour mixture until just blended. Gradually beat in warm milk. Pour batter into pan.
  • Bake cake until tester inserted into center comes out clean, about 10 minutes. Spread kitchen towel on work surface; cover with parchment. Sprinkle parchment lightly with powdered sugar. Run knife around edge of pan to loosen cake. Invert hot cake onto parchment. Peel parchment off top of cake. Starting at 1 long side and using towel as aid, gently roll up cake jelly-roll style. Cool.
  • For frosting:
  • Using electric mixer, beat first 5 ingredients in large bowl until smooth. Gradually add powdered sugar, beating until smooth. Cover and chill until firm but spreadable, about 45 minutes.
  • Unroll cake; remove second sheet of parchment. Spread scant 2 cups frosting over cake; starting at 1 long side, roll up jelly-roll style. Place cake, seam side down, on platter. Starting 1 inch in from end of cake, turn knife on sharp diagonal and cut to remove one 3-inch-long triangular piece of cake. Spread 1 tablespoon frosting on cut side of cake piece. Attach frosted side of cake piece to side of cake near end. Spread remaining frosting over top and sides of cake and cake piece. Using tines of fork, draw circles on cake ends to resemble tree rings. Draw fork along length of cake to form bark design. Cover and chill overnight. (Can be made 1 day ahead. Keep chilled. Let stand 2 hours at room temperature before continuing.) Sprinkle log with glazed orange peel strips.

For the Pound Cake:
1-1/2 cups (3 sticks) unsalted butter
8 oz. (1 brick) PHILADELPHIA Cream Cheese, softened
3 cups granulated sugar
6 large egg
Juice of 1/2 navel orange (about 1/4 cup)
Zest of 1 navel orange
1 tsp. vanilla extract
3 cups cake flour
2 tsp. kosher salt
1 tsp. ground ginger
1/8 tsp. ground cloves
powdered sugar, for garnish
For the Sugared Cranberries:
1/2 cup water
1/2 cup sugar, plus more for coating
6 oz. fresh cranberries

Steps:

  • To Make the Pound Cake
  • Preheat the oven to 350 degrees F and generously mist a 10-cup Bundt pan with nonstick spray.
  • Place the butter and Philadelphia Cream Cheese in a large mixing bowl, mixing together until smooth and well-blended. Add the sugar and whip on medium-high speed until very pale and fluffy (about 5 minutes). Add the eggs, one at a time, scraping the sides and bottom of the bowl with a silicone spatula after each addition. Stir in the orange juice, zest, and vanilla. Add the flour, 1 ½ cups at a time. When all the flour has been incorporated, stir in the salt, ginger, and cloves.
  • Transfer the batter to the prepared Bundt. Bake for 70 to 80 minutes*, or until a bamboo skewer inserted in the thickest part of the cake comes out clean or with a few moist crumbs.
  • Cool in the pan for 20 minutes, then invert onto a wire rack to cool completely. Dust with powdered sugar, and fill the center of the Bundt with sugared cranberries, for garnish.
  • To Make the Sugared Cranberries:
  • Place the water and sugar in a medium pot, and place over medium-low heat. Bring to a low simmer, stirring, just until the sugar is completely dissolved. Remove from heat and cool for 15 minutes.
  • Toss the cranberries in the simple syrup, to coat.
  • Drain the cranberries, and spread in single layer on a wire rack. Allow to dry for about 8 hours, or until no longer wet but sticky to the touch. Roll in granulated sugar, to coat. Sugared cranberries can be stored in the refrigerator, in an airtight container, for up to a week.

1/3 cup milk
1/4 cup oil
3 eggs
2 (8 ounce) packages cream cheese, at room temp

Steps:

  • Cake:.
  • Sift cake mix and spices into a mixing bowl.
  • Add sour cream, milk, eggs and oil.
  • Beat at low speed until dry ingredients are incorporated.Beat at high speed for 3 minute.
  • Pour batter into appropriate sized pans. (Look at cake mix package for suggestions. I used 2 nine inch round pans).
  • Bake according to cake mix package instructions. Cool before icing.
  • Icing:.
  • Put the zest of two oranges into a mixing bowl.
  • Mix the cream cheese, zest, and 1 tbsp juice until smooth.
  • Gradually add pwd sugar until you reach desired consistency and sweetness.

2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon Chinese five-spice powder*

1 cup (2 sticks) unsalted butter, room temperature
2 cups (packed) golden brown sugar
3 large eggs, room temperature
1 15-ounce can pure pumpkin
1/3 cup whole milk
Frosting:
1 cup (2 sticks) unsalted butter, room temperature
2 8-ounce packages cream cheese, room temperature
1 tablespoon finely grated orange peel
2 cups powdered sugar, sifted

Steps:

  • For cake:

  • Whisk flour and next 4 ingredients in large bowl. Using electric mixer, beat butter in another large bowl until smooth. Beat in brown sugar. Add dry ingredients to butter mixture in 3 additions alternately with milk in 2 additions, beating to blend between additions. Divide batter between pans.
  • Bake cakes until tester inserted into center comes out clean, about 40 minutes. Cool in pans on rack 15 minutes. Run knife around cakes to loosen. Invert cakes onto racks. Remove parchment. Using tart pan bottom as aid, turn cakes over onto racks, top sides up, and cool completely. DO AHEAD: Can be made 1 day ahead. Wrap cakes in plastic and store at room temperature.
  • For frosting:
  • Using electric mixer, beat butter in large bowl until smooth. Add cream cheese and orange peel; beat until smooth. Add powdered sugar and beat on low speed until smooth.
  • Trim rounded tops from cakes. Using long serrated knife, cut each cake horizontally in half. Place 1 cake layer, cut side up, on large platter. Spoon 2/3 cup frosting atop cake in dollops; spread to edges. Repeat 2 more times with cake and frosting; top with remaining cake layer, cut side down. Spread remaining frosting over top and sides of cake (layer will be thin). DO AHEAD: Can be made 2 days ahead. Cover with cake dome; chill. Let stand at room temperature 1 hour before serving.
  • Decorate cake with walnuts and serve.

2 cups graham cracker crumbs
1 teaspoon ground cinnamon
1 teaspoon grated orange zest
1/2 cup butter, melted
FILLING:
1 package (3 ounces) orange gelatin
3 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
1 can (5 ounces) evaporated milk
1/3 cup thawed orange juice concentrate
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 envelope unflavored gelatin
2 tablespoons cold water
2 tablespoons boiling water
1 carton (8 ounces) frozen whipped topping, thawed
TOPPING:
2 cups whipped topping
1/4 cup sugar
Citrus fruits and lemon balm, optional

Steps:

  • In a large bowl, combine the cracker crumbs, cinnamon, orange zest and butter. Press onto the bottom of a greased 10-in. springform pan. Refrigerate for at least 30 minutes., Prepare orange gelatin according to package directions. Set aside 1/2 cup at room temperature. Chill remaining gelatin until slightly thickened, 40-60 minutes., In a large bowl, beat cream cheese and sugar until smooth. Beat in the milk, orange juice concentrate, lemon juice and vanilla. Beat on medium-high speed 2 minutes longer., In a small bowl, sprinkle unflavored gelatin over cold water; let stand for 2 minutes. Stir in boiling water until gelatin is completely dissolved. Stir into the room-temperature orange gelatin. Stir into cream cheese mixture, then fold in whipped topping. Pour into crust., For topping, in a large bowl, beat whipped topping and sugar. Beat in refrigerated orange gelatin (mixture will be thin). Chill for 30 minutes. Gently spoon over filling (pan will be full). Refrigerate for 8 hours or overnight. Remove sides of pan. Garnish with fruit and lemon balm if desired.

225g baking spread
225g self-raising flour
1 level tsp baking powder
100g golden caster sugar
100g brown sugar
4 large eggs
finely grated zest of 2 oranges
150g butter, softened
300g icing sugar, sifted
finely grated zest of 2 oranges
25g caster sugar
juice of 2 oranges

Steps:

  • Heat oven to 180C/160C fan/gas 4. You will need 2 x 20cm loose-bottomed sandwich tins, greased and bases lined with baking parchment. Measure all the cake ingredients into a large bowl (reserve a little orange zest for decoration) and beat with a wooden spoon or electric hand mixer until combined and smooth.
  • Divide evenly between the 2 tins. Bake for 20-25 mins or until well risen, lightly golden and shrinking away from the sides of the tins. After 5 mins, remove from the tins and leave to cool on a wire rack.
  • To make the icing, put the butter and icing sugar into a bowl and mix with an electric hand mixer until light and fluffy. Stir in the orange zest.
  • Remove the paper from the cakes. Sit 1 cake upside down on a plate. Make the glaze by putting the caster sugar and orange juice into a saucepan, stirring over a low heat until the sugar has dissolved. Boil until reduced by half, then brush half on the upside-down cake, using a pastry brush. Spread half the butter icing over the glazed cake. Sit the other cake on top, brush with the remaining glaze, then spread with the remaining butter icing. Scatter with the reserved orange zest. The cake is best eaten on the day, but will keep for up to 3 days in a cool place. It freezes well un-iced or filled.

  • Beat pudding mix, milk, zest and juice in large bowl with whisk 2 min. Stir in 1 cup COOL WHIP; spoon into crust. Spread with remaining COOL WHIP to within 2 inches of edge. Refrigerate 2 hours.

1 teaspoon cinnamon
1/2 teaspoon nutmeg

1 cup skim milk
4 egg whites
1 1/4 cups pumpkin
1 teaspoon vanilla
1 (16 ounce) package confectioners' sugar (4 cups)
4 ounces low-fat cream cheese
2 tablespoons fat free sour cream
1 -2 tablespoon orange juice
1/2 teaspoon vanilla
1 teaspoon orange extract
orange food coloring, paste orliquid

Steps:

  • Lightly coat a nonstick or stick resistant bunt cake pan with cooking spray and set aside.
  • Preheat oven to 350°F.
  • Whisk dry cake mix together with spices and soda in large mixing bowl until well combined.
  • In a smaller bowl whisk milk together with egg whites, pumpkin and vanilla until combined.
  • Pour liquid ingredients into mixing bowl and mix all ingredients together on medium speed of an electric mixer for 3-4 minutes until well blended.
  • Pour batter into pan and smooth out top.
  • Bake at 350°F for 30-35 minutes or until cake tests done.
  • Remove cake from oven and cool in pan for 15 minutes.
  • Invert cake pan on rack.
  • Remove pan from cake and finish cooling.
  • After cake has cooled completely, drizzle/pour frosting over cake and top with decorative holiday candies or sprinkles.
  • For frosing: Whisk or mix all ingredients together until well blended.
  • Add 1-2 tablespoons additional orange juice if you are planning to drizzle frosting.
  • Frosting drizzling consistency should be a little thinner than frosting you plan to spread with a knife.
