- Stir together apple cider and 4 tablespoons caramel ice cream topping in a 3 1/2- or 4-qt. slow cooker until smooth. Cover and cook on Low for 3 to 4 hours or on High for 1 1/2 to 2 hours.
- Mix together sugar, salt, and apple pie spice in a small shallow bowl. Pour remaining 2 tablespoons caramel topping into a small saucer.
- Dip the rims of 8 mugs or heatproof glasses into caramel topping, evenly coating the rim; then dip into spice mixture. Ladle hot cider into mugs. Add 1 1/2 fluid ounces (3 tablespoons) spiced rum to each mug and garnish with a cinnamon stick.

- Add cider to a large saucepan, set over medium-high heat and allow to simmer until reduced to 1/3 cup (keep a close eye on it during the last 10 minutes, it can burn. Keep a glass liquid measuring cup nearby to pour and measure, then return to pan as needed to reduce a little longer until it measured 1/3 cup), about 25 minutes (cook time will vary based on size of pan and burner temp, it might be less it might be more). Set aside to cool.
- Butter and line and 8-inch baking pan with two sheets of parchment paper (one going each direction) leaving a 1-inch over hang on each end, and butter paper.
- In a small bowl whisk together 2/3 cup of the cream, cinnamon, ginger, allspice, cloves, nutmeg and reduced cider. In a 3-quart heavy bottom saucepan combine sugar, remaining 1/3 cup cream, corn syrup and water.
- Cook over medium-low heat, stirring constantly until sugar dissolves, then cook mixture, stirring occasionally, until mixture reaches 234 degrees on a candy thermometer. Remove from heat and slowly whisk in cream mixture.
- Add butter and stir to melt. Return to medium-low heat and cook, stirring occasionally until mixture reaches 246 degrees on a candy thermometer.
- Remove from heat and carefully pour caramel into prepared baking dish. Allow to rest at room temperature or in refrigerator until caramel is set. Sprinkle with Maldon then cut into squares or rectangles and wrap in wax paper. Store in refrigerator up to 2 weeks, bring to room temperature before enjoying.

- Boil the apple cider in a 3- to 4-quart saucepan over high heat, stirring occasionally, until reduced to a dark, thick syrup, between ⅓-cup and ½-cup in volume. This could take anywhere from 35 to 40 minutes.
- Meanwhile, line the bottom and sides of an 8-inch square baking dish with parchment paper, leaving excess hanging over the sides. In a small bowl, stir together the fleur de sel and ground cinnamon.
- Once the apple cider has finished reducing, remove it from the heat and stir in the butter, sugars and heavy cream. Return the pot to medium-high heat with a candy thermometer attached to the side of the pan, and let boil until the thermometer reads 252 degrees F, only about 5 minutes or so.
- Immediately remove the caramel from heat, add the cinnamon-salt mixture, and stir several times with a wooden spoon. Pour the caramel into the prepared pan. Let sit until cool and firm, about 2 hours.
- Once the caramel is firm, use the parchment overhangs to lift it out of the pan and transfer to a cutting board. Using a very sharp knife (or large pizza cutter - my secret slicing weapon of choice) coated with non-stick cooking spray, cut the caramel into 1-inch squares. (You may need to re-spray the knife or pizza cutter multiple times while cutting.)
- Wrap each caramel in a 4-inch square of wax paper, twisting the sides to close. The caramels can be kept in an airtight container at room temperature for up to 2 weeks.

HOT CARAMEL APPLE CIDER
One morning when it was really cold and raining out, I was doing my Crossing Guard job at the corner I "work" at. A few yards from the corner is a small Espresso/coffee hut. After I got done and was getting ready to leave the corner, one of the girls who works at the espresso hut came up to me and asked me if I wanted either a hot chocolate or a Hot Caramel Apple Cider. I opted for the Hot Caramel Apple Cider. I was so cold and wet that I drank it hot without letting it cool off at all!! It was so good and it immediately started to warm me up. I could taste the caramel in it. A couple of days later when I got one on my own I asked what was in it and the girl who gave me my first one, told me. I think I have the right amounts of ingredients. You can add more caramel sauce and/or vanilla to suit your taste. This recipe can easily be multiplied to serve more people. I am sure you could use apple juice if you don't have apple cider on hand.

- Butter an 8"x 8" square baking pan and line in both directions with parchment paper, also butter the parchment paper.
- Bring the cider to a boil over medium high heat and allow it to reduce by 3/4. You should have 1/2 cup when you're done. This should take about 15 minutes. Reduce the heat to low, then add the cream, butter and vanilla to the reduced cider. Cook until the butter is melted, then set the mixture aside.
- Combine the sugar and corn syrup in a large, heavy Dutch oven. Heat over medium high heat until the sugar is melted and the mixture becomes a medium caramel color. Do not stir once the sugar is boiling. You can pick up the pot and swirl it around if you see dark spots in the caramel.
- Add the cider/cream mixture all at once. Keep your face away from the pan because the steam can burn. Stir to combine. Reduce heat to medium and cook until 248°-250°F, do not stir. Turn off the heat and whisk in the salt, cinnamon and ginger.
- Pour the caramel into the prepared pan and let set, uncovered, overnight at room temperature.
- Cut into 1" squares using a sharp, oiled knife. Wipe the blade between cuts with an oiled paper towel. Wrap the candies in squares of wax or parchment paper.
- Keep in an airtight container at room temperature.
