1 package active dry yeast (2 1/4 teaspoons)
1/4 cup hot water
1/4 cup plus 1 teaspoon granulated sugar
1/2 cup whole milk
1/4 cup olive oil
1 tablespoon grated orange zest plus 1/4 cup freshly squeezed orange juice
3 1/2 cups all-purpose flour, plus more if needed and for flouring
1 teaspoon kosher salt
Vegetable oil, for the bowl
Nonstick cooking spray, for the baking dish
3 tablespoons salted butter, softened
1 cup firmly packed light brown sugar
1 1/2 tablespoons ground cinnamon
2 cups confectioners' sugar
3 tablespoons freshly squeezed orange juice

Steps:

  • For the dough: In a small bowl, combine the yeast, hot water and 1 teaspoon of the sugar, whisking to mix. Set aside for 10 minutes, allowing the yeast to dissolve and fully activate. It should bubble around the edges and almost double in size. Meanwhile, in a medium bowl, whisk together the milk, oil, orange zest and juice and remaining 1/4 cup sugar and set aside.
  • Using an electric mixer fitted with the paddle attachment, combine the flour and salt. Add the yeast mixture and orange juice mixture and beat until the dough forms a ball, 2 to 3 minutes. Switch out the paddle for the dough hook and knead the dough until fairly smooth, 4 to 5 minutes. If the dough is too sticky, add more flour 1 tablespoon at a time.
  • Lightly coat a large bowl with vegetable oil and add the dough. Cover the bowl with plastic wrap and allow the dough to rise until it doubles in size, about 1 hour at room temperature.
  • Spray a 9-by-13-inch baking dish with cooking spray.
  • For the filling: On a lightly floured surface, roll the dough into a large rectangle about 1/4 inch thick and slightly bigger than the baking dish. Spread the butter over the dough, leaving a 1/4-inch border on all sides. Sprinkle the dough with the brown sugar, then the cinnamon. Starting with one longer edge, roll the dough into a cylinder and pinch the ends together to seal completely. Cut into 12 rolls and place in the prepared baking dish. Cover the dish with plastic wrap and allow the rolls to rise until they double in size, about 30 minutes at room temperature.
  • Preheat the oven to 350 degrees F.
  • Remove the plastic wrap from the rolls and bake, uncovered, until light brown, 25 to 30 minutes.
  • For the glaze: Meanwhile, in a medium bowl, whisk together the confectioners' sugar and orange juice until smooth. While the rolls are still warm, drizzle them with the glaze and serve.

1/4 cup warm water
1 cup potato-cooking water
1/2 cup mashed potato
1/2 cup sugar plus 2/3 cup sugar
1 1/2 teaspoons salt

4 to 4 1/2 cups flour
1 tablespoon ground cinnamon
1 cup sifted powdered sugar
1 teaspoon shredded orange peel
1/2 teaspoon vanilla
Fresh orange juice (about 1 to 2 tablespoons)
1 cup sifted powdered sugar
3/4 teaspoon almond extract
Milk (about 1 to 2 tablespoons)

Steps:

  • Stir the yeast into the warm water in a large mixing bowl and let stand a few minutes to dissolve. Add the potato water, mashed potato, 1/2 cup sugar, salt, butter and egg and beat well. Add 2 cups of the flour and beat until smooth. Add enough of the remaining flour to make a manageable dough, then turn out onto a lightly floured surface and knead for 1 minute or 2. Cover with plastic wrap to prevent drying out. Let rest 10 minutes. Resume kneading for about 8 to 10 minutes until the dough is smooth and elastic. Sprinkle on a little more flour as necessary to keep dough from being too sticky. Place in a large greased bowl, cover and let rest until double in bulk.
  • Punch dough down. On a floured surface, roll dough into a 14-by-8-inch rectangle. Spread dough with 1/2 cup softened butter. Mix 2/3 cup sugar with 1 tablespoon ground cinnamon in a small bowl. Sprinkle over butter. Roll up from long sides like a jelly roll. Cut into 12 equal pieces. Arrange, cut sides up, in a greased 9-by-13-inch pan. Cover pan loosely with plastic wrap and let rise until doubled in bulk approximately 30 to 40 minutes. Bake at 350 degrees for 30 to 40 minutes or until done. Remove from oven and cool on wire racks. Drizzle with both icings 1 at a time.
  • Combine all ingredients to icing of drizzling consistency.

Posted in response to a request for Orange Cinnamon Rolls, similar to the Pillsbury refrigerated rolls. Recipe is from Betty Crocker's "Breads" cookbook, published in 1974. The first time I try a recipe, I like to write the date beside it. I see that I first made these on May 30, 1977 and my comment was: "VG" ("very good")... (Cooking time includes 2 hrs for letting the dough rise.)

  • Cover; let rise in warm place until double, about 1 to 1 1/2 hours (dough is ready if an indentation remains when dough is touched).
  • Punch dough down and, on a lightly floured surface, roll into a rectangle 15x9".
  • Spread w/ 1 T butter and sprinkle w/ combined 2 T sugar and 1 t cinnamon.
  • Roll up, beginning at one of the long sides; pinch edge of dough into roll to seal well; stretch to make roll even.
  • Cut roll into 15 slices about 1" wide.
  • Place slices slightly apart in a greased oblong baking pan, 13x9x2", or in greased muffin cups.
  • Cover and let rise until double, about 30 minutes.
  • Bake in a 375 degree preheated oven until rolls are golden brown, about 25 to 30 minutes.
  • If desired, mix together confectioner's sugar, orange juice, orange peel, and vanilla; frost while warm.
  • Recipe is easily doubled.

1/2 teaspoon salt

Steps:

  • Combine flour, yeast, salt and sugar in container of food processor fitted with steel blade and process 5 seconds.
  • Add 2 tablespoons butter and egg, and pulse a few times, until well combined.
  • With machine running, drizzle most of milk through feed tube.
  • Process just until a dough ball forms.
  • If necessary, add more milk, 1 teaspoon at a time.
  • Knead by hand on a lightly floured surface a minute or two longer, adding more flour or milk as necessary, until dough is smooth and elastic.

Steps:

  • Stir together warm water, yeast, and 1 teaspoon sugar in bowl of mixer fitted with paddle attachment and let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
  • While yeast is foaming, whisk 4 cups flour with zest, salt, and cinnamon in a bowl.
  • Add milk, vanilla, butter, and remaining 1/2 cup sugar to yeast, then mix at medium speed until combined. Beat in 3 eggs, 1 at a time, then add orange cinnamon flour and mix until combined well.

1/2 cup whole milk
1/3 cup shortening or 1/3 cup lard
1/4 cup dark brown sugar (firmly packed)
1 teaspoon salt
1 (1/4 ounce) package dry yeast
1/2 cup warm water (110 degrees F)
2 eggs
3 -3 1/2 cups bread flour, divided
3/4 cup quick-cooking oats (uncooked)
3 tablespoons butter
1 cup dark brown sugar (firmly packed)
1/3 cup butter, softened
1 cup pecans, coarsely chopped
1/2 cup golden raisin
1/4 cup water
2 teaspoons ground cinnamon
2 cups powdered sugar, sifted
3 -4 tablespoons water

Steps:

  • Combine milk, shortening, 1/4 cup dark brown sugar and salt in medium suacepan; heat until shortening melts, stirring occasionally.
  • Cool mixture to 110º.
  • Dissolve yeast in 1/2 cup warm water in large mixing bowl; let stand 5 minutes.
  • Stir in milk mixture, eggs, 1 cup flour, and oats mixing well.
  • Gradually stir in enough remaining flour to make a soft dough.
  • Turn dough out on floured surface and kneed until smooth and elastic (8-10 minutes).
  • Place in well greased bowl, turning to coat.
  • Cover w/plastic wrap and let rise in a warm place (free from drafts) 1 hour or until doubled in bulk.
  • Punch dough down; cover and let rest 10 minutes.
  • Place golden raisins in 1/4 cup water and simmer on stove for 5 minutes.
  • Remove from heat, leaving raisins in liquid.
  • Divide dough in half and roll each half to a 12 inch square.
  • Spread each square with 1 tablespoon butter.
  • Drain raisins.
  • Combine 1 cup dark brown sugar, 1/3 cup butter, raisins, pecans and cinnamon; spread evenly over dough.
  • Roll up each square of dough (jellyroll fashion) pinching seams to seal (do NOT seal ends).
  • Cut into 1 inch slices, place slices in two greased 8 inch square baking pans.
  • Cover and let rise in warm place free from drafts approximately 45 minutes or until doubled in bulk.
  • Bake at 375º for 15-20 minutes or until golden brown.
  • Combine powdered sugar and water, drizzle glaze over warm rolls.

1/4 cup warm water
3/4 cup milk
1 egg
1 teaspoon salt
4 tablespoons butter, melted
1/3 cup sugar

1 (3/4 ounce) package active dry yeast (2 1/4 tsp yeast or one package)
1/2 cup sugar
1 1/2 tablespoons ground cinnamon
4 tablespoons butter, melted
chopped pecans, toasted
2 cups powdered sugar
2 tablespoons butter
2 tablespoons milk
1/2 teaspoon vanilla

Steps:

  • PROOF THE YEAST: Warm the milk and water to 110° to 115°. Mix in the sugar and yeast. Let sit for 10 minutes, it should be frothy after 10 minutes.
  • BREAD MAKER: In a bread maker, add the proofed yeast first, then egg, then butter, then salt. Add the flour last. Set the bread maker the dough setting.
  • DOUGH BY HAND: In a large bowl mix proofed yeast, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
  • Once the dough is ready (from either bread maker or by hand), punch down dough. Roll out on a floured surface into an approximated 15 by 9-inch rectangle (1/2 inch in thickness).
  • Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough.
  • Sprinkle with toasted pecans, if using.
  • Beginning at the 15-inch side, role up dough and pinch edge together to seal.
  • Cut into 12 to 15 slices using a piece of string or floss and place in greased pan. (See picture posted with recipe) You can also use a really sharp knife, but in my experience the knife squishes the rolls.
  • Cover rolls and let rise until nearly doubled, about 1 hour or so.
  • Bake in a preheated 350°F oven for 25 to 30 minutes.
  • For the icing: mix all the ingredients together and serve over warm rolls.
  • REFRIGERATION METHOD: Once the rolls are cut and placed into a greased pan, you can cover and place in refrigerator overnight and just pop them into a pre-heated oven in the morning. ENJOY!

This is my version of Orange Danish. These are as easy to make as Cinnamon Rolls. They may sound more difficult, but really are not. I always use store bought vanilla frosting mixed WITH HOMEMADE for these because it makes the texture better (creamier) IMHO. The yield is approximate and depends on how thin you roll and how thick you cut. Sorry I don't have a more accurate yield.

1/4 cup margarine or 1/4 cup butter
1/4 cup shortening
2 tablespoons sugar
1 egg
1 teaspoon salt

1 cup brown sugar
1 teaspoon ginger (only time I use powder ginger) (optional)

1/2 of the orange zest
1 dash salt
1/2 of the orange zest
2 tablespoons frozen orange juice concentrate (undiluted)

1 tablespoon butter or 1 tablespoon margarine (see note) (optional)
1 tablespoon of fresh squeezed orange juice
enough powdered sugar, to make spreading consistancy

Steps:

  • Mix yeast and warm water together to proof yeast.
  • Cream shortening and margarine with sugar.
  • Add yeast and water mixture.
  • Add three cups flour and mix.
  • Continue adding flour until soft dough forms.
  • Turn out on a lightly floured surface and knead until dough becomes smooth and elastic.
  • Place in an oiled bowl, cover with plastic wrap and let rise until double (about an hour).
  • Punch down.
  • Roll out into a rectangle on a lightly floured surface.
  • Mix all of the filling ingredients cutting the butter or margarine in until it is well blended.
  • Spread evenly over the dough and roll, jelly roll style from the long side.
  • Cut into 1 inch slices, place on lightly greased baking pan.
  • Let rise 20-30 minutes.
  • Bake at 350° for approximately 30 minutes.
  • Mix frosting until smooth.
  • Pour over rolls while they are still slightly warm.
  • Note: I usually mix the frosting and then add a store bought tub of vanilla frosting.
  • It gives a better texture to the frosting.
  • If you choose to do this, I recommend having the"homemade" part slightly thicker than the desired end product.
  • If you are adding the store bought frosting, the margarine/butter is not necessary.
