My son loves the orange rolls that come in a can. But he wanted them homemade. After trying a couple recipes and none of them meeting his approval, I came up with my own. After getting thumbs up AND a high five from my son, I finally had a recipe! These are made overnight and baked in the morning.

1 tablespoon white sugar
1 tablespoon active dry yeast
1 cup warm milk
½ cup warm water
1 egg, beaten
½ cup orange juice
½ cup butter, melted
¼ cup instant vanilla pudding mix
1 tablespoon orange extract
5 cups bread flour, or more if needed
1 teaspoon salt
½ cup butter, softened
2 tablespoons grated orange zest
1 teaspoon orange extract
¾ cup white sugar
1 (8 ounce) package cream cheese, softened
½ cup butter, softened
2 cups confectioners' sugar
2 teaspoons orange extract
2 tablespoons milk, or more as needed

Steps:

  • Sprinkle 1 tablespoon white sugar and the yeast over the warm milk and warm water in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 5 minutes. Mix in the egg, 1/2 cup orange juice, melted butter, vanilla pudding mix, and 1 tablespoon orange extract. Stir in 5 cups bread flour and salt. Add more bread flour if the dough is too sticky. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, 8 to 10 minutes.
  • Place the dough in an oiled bowl and cover with a clean cloth. Allow the dough to rise in a warm place until doubled in size, about 1 1/2 hours.
  • Combine 1/2 cup softened butter with the orange zest and 1 teaspoon orange extract in a small bowl until smooth. Set aside. Grease a baking sheet, or cover with parchment paper.
  • Turn the dough out on a floured surface and roll out into a 24x12-inch rectangle. Spread the butter mixture evenly over the dough, then sprinkle with 3/4 cup white sugar. Roll up the dough, beginning with the long side. Cut the dough into 18 1 1/2-inch rolls. Arrange the rolls cut-side up on prepared baking sheet. Cover with plastic wrap and refrigerate overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove the plastic wrap from the rolls and allow them to rise in a warm place for 30 minutes.
  • Bake in the preheated oven until golden brown, 25 to 30 minutes. Allow rolls to cool slightly before frosting.
  • While the rolls are baking, cream together the cream cheese and 1/2 cup softened butter until smooth. Stir in the confectioners' sugar and 2 teaspoons orange extract. Stir in milk, a little at a time, until frosting is smooth and spreadable. Spread the frosting over the slightly cooled rolls.

2 tablespoons instant nonfat dry milk
1 1/2 tablespoons butter or margarine, softened
1 1/4 teaspoons salt
2 teaspoons bread machine or quick active dry yeast
3/4 cup powdered sugar
1 tablespoon orange juice

Steps:

  • Measure carefully, placing all bread ingredients in bread machine pan in the order recommended by the manufacturer.
  • Select Sweet or Basic/White cycle. Use Medium or Light crust color. Do not use delay cycle. Remove baked bread from pan; cool on cooling rack.
  • In small bowl, mix glaze ingredients until smooth and spreadable. Spoon glaze over cooled loaf.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
1/4 cup shortening
1/4 cup sugar

1 large egg, lightly beaten
3-1/2 to 3-3/4 cups all-purpose flour
FILLING:
1 cup sugar
1/2 cup butter, softened
2 tablespoons grated orange zest
GLAZE:
1 cup confectioners' sugar
4 teaspoons butter, softened
1/2 teaspoon lemon extract
4 to 5 teaspoons 2% milk

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, shortening, sugar, salt, egg and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Knead on a lightly floured surface until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Meanwhile, in a small bowl, combine filling ingredients; set aside., Punch dough down; divide in half. Roll each half into a 15x10-in. rectangle. Spread half the filling on each rectangle. Roll up, jelly-roll style, starting with a long end. Cut each into 15 rolls. , Place, cut side down, in two greased 11x7-in. baking pans. Cover and let rise until doubled, about 45 minutes. , Bake at 375° for 20-25 minutes or until lightly browned. In a small bowl, combine the confectioners' sugar, butter, extract and enough milk to achieve desired consistency; spread over warm rolls. Freeze option: Cover and freeze unrisen rolls. ⅔ cup warm water (110 degrees F/45 degrees C)
1 cup butter, diced
½ cup white sugar
2 teaspoons salt
2 cups scalded milk
2 egg, lightly beaten

1 cup white sugar
3 tablespoons grated orange zest

Steps:

  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. Combine the diced butter, 1/2 cup sugar, and salt in a large bowl. Stir in the hot milk, and mix to dissolve the butter. Let stand until lukewarm.
  • Mix the yeast, eggs, and flour into the milk mixture to form a sticky dough. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth, and let rise in the refrigerator for 8 hours or overnight.
  • Remove dough from the refrigerator 2 to 2 1/2 hours before baking. Divide the dough into halves. Roll each half out on a lightly floured surface to 1/4 inch thick rectangle.
  • Mix the softened butter, one cup sugar, and orange peel in a bowl. Spread over the dough. Roll up the dough along the long edge. Cut the rolls into one inch slices with dental floss. Place in greased muffin cups. Let rise until doubled in bulk.
  • Bake in a preheated 400 degree F (205 degree C) oven for 10 to 15 minutes, or until golden brown.

1 package active dry yeast (2 1/4 teaspoons)
1/4 cup hot water
1/4 cup plus 1 teaspoon granulated sugar
1/2 cup whole milk
1/4 cup olive oil
1 tablespoon grated orange zest plus 1/4 cup freshly squeezed orange juice
3 1/2 cups all-purpose flour, plus more if needed and for flouring
1 teaspoon kosher salt
Vegetable oil, for the bowl
Nonstick cooking spray, for the baking dish
3 tablespoons salted butter, softened
1 cup firmly packed light brown sugar
1 1/2 tablespoons ground cinnamon
2 cups confectioners' sugar
3 tablespoons freshly squeezed orange juice

Steps:

  • For the dough: In a small bowl, combine the yeast, hot water and 1 teaspoon of the sugar, whisking to mix. Set aside for 10 minutes, allowing the yeast to dissolve and fully activate. It should bubble around the edges and almost double in size. Meanwhile, in a medium bowl, whisk together the milk, oil, orange zest and juice and remaining 1/4 cup sugar and set aside.
  • Using an electric mixer fitted with the paddle attachment, combine the flour and salt. Add the yeast mixture and orange juice mixture and beat until the dough forms a ball, 2 to 3 minutes. Switch out the paddle for the dough hook and knead the dough until fairly smooth, 4 to 5 minutes. If the dough is too sticky, add more flour 1 tablespoon at a time.
  • Lightly coat a large bowl with vegetable oil and add the dough. Cover the bowl with plastic wrap and allow the dough to rise until it doubles in size, about 1 hour at room temperature.
  • Spray a 9-by-13-inch baking dish with cooking spray.
  • For the filling: On a lightly floured surface, roll the dough into a large rectangle about 1/4 inch thick and slightly bigger than the baking dish. Spread the butter over the dough, leaving a 1/4-inch border on all sides. Sprinkle the dough with the brown sugar, then the cinnamon. Starting with one longer edge, roll the dough into a cylinder and pinch the ends together to seal completely. Cut into 12 rolls and place in the prepared baking dish. Cover the dish with plastic wrap and allow the rolls to rise until they double in size, about 30 minutes at room temperature.
  • Preheat the oven to 350 degrees F.
  • Remove the plastic wrap from the rolls and bake, uncovered, until light brown, 25 to 30 minutes.
  • For the glaze: Meanwhile, in a medium bowl, whisk together the confectioners' sugar and orange juice until smooth. While the rolls are still warm, drizzle them with the glaze and serve.

My mother made Caramel Rolls every week because dad liked them with his breakfast. She also would make Orange Rolls , but never as often as Caramel Rolls, and I always loved Orange Rolls. I modified her original recipe and made them with more of an orange taste and make them often for the coffee houses that buy my baked goods.

1 pkg yeast
1 c warm milk
1/4 c butter
1/4 c sugar
1 tsp himalyan salt or table salt
1 egg
1 c whole wheat flour
3 c natural white flour
1/2-1 c sugar
1/4 c soft butter
2 Tbsp grated orange peel
1 c powdered sugar
4 -5 tsp cream or milk
1/2-1 tsp lemon juice, fresh

Steps:

  • 1. I use a bread machine to mix ingredients: Put egg in container. Warm up milk, sugar, salt & butter. Pour into container with egg. Then add flours and yeast add last. Push button for dough. When cycle is done, take dough out and roll out 15"x10" rectangle. Mix sugar, butter and lemon peel and spread on dough. Roll up jelly roll fashion starting with long side. Cut into 12 rolls and place on greased baking pans. Cover and let rise until doubled. Bake: 350 for 20-25 minutes. Turn out on wax paper and cool. Mix glaze of powdered sugar, cream and lemon juice and spread on rolls.
  • 2. If putting together by hand: Mix yeast in about 1/4 warm water and let it dissolve. In large bowl mix milk, butter, sugar, salt and egg. Add yeast mixture and blend. Stir in enough flour to form a soft dough and knead until smooth and elastic for about 10 minutes. Place in greased bowl and let rise in warm place until doubled. Then follow directions from above for rolling out and making rolls. Enjoy!!

For the rolls:
1 (1/4-ounce) envelope active dry yeast (about 2 1/4 teaspoons)
2 tablespoons sugar, divided
1 egg yolk, lightly beaten, room temperature
1/3 cup fresh orange juice
2 tablespoons melted coconut oil, cooled, or vegetable shortening
1/2 teaspoon kosher salt
1 2/3 cup cups all-purpose flour, plus more for surface

Steps:

  • Make the filling:
  • Using an electric mixer on medium-high speed, beat butter, sugar, orange zest, salt, and cardamom, if using, in a large bowl until fluffy.
  • Make and assemble the rolls:
  • Pour 3 Tbsp. warm water (105°F-115°F) into a small bowl. Add yeast and 1 Tbsp. sugar and whisk to combine. Let sit until foamy, about 10 minutes.
  • Using electric mixer on medium-high speed, beat egg yolk, orange juice, oil, salt, and remaining 1 Tbsp. sugar in a large bowl. Add 1 2/3 cups flour and yeast mixture. Beat until dough just comes together. Turn out dough onto a lightly floured surface. Knead several times with floured hands until smooth, about 5 minutes (dough will be sticky).
  • Spray a clean large bowl with nonstick spray. Place dough in bowl and turn to coat. Cover with a towel and let sit in a warm place until doubled in size, about 45 minutes.
  • Spray muffin tin with nonstick spray. Roll dough on a well floured surface to an 1/8"-thick rectangle about 17x14". Spread filling over dough, leaving a 1/2" border on all sides. Starting on 1 long side, roll dough into a tight cylinder. Cut into 12 equal pieces (if it's difficult to cut, chill 15 minutes). Transfer cut side up to prepared muffin tin. Cover with a towel and let sit in a warm, draft-free place until risen, 30 minutes, or chill overnight. If chilling, let sit at room temperature 2 hours to rise before baking.
  • Preheat oven to 350°F. Bake rolls, rotating pans halfway through, until lightly browned on top, 15-18 minutes. Let cool in pan 5 minutes, then invert onto a platter to serve.

¼ cup (½ stick) unsalted butter
½ cup cold milk
½ cup fresh orange juice
1 pound (3 ½ cups) all-purpose flour
2 teaspoons instant or active dry yeast
⅓ cup white granulated sugar
½ teaspoon salt
zest of 1 large orange
1 large egg
½ cup white granulated sugar
zest of 1 large orange
2 tablespoons unsalted butter, melted
1 ¼ cups powdered sugar
6-8 teaspoons orange juice

Steps:

  • In a small saucepan over low heat, melt together the butter and milk. Stir or swirl to melt without overheating. Add the orange juice and set aside.
  • In the bowl of a stand mixer (or see notes), add the flour, yeast, sugar, salt and orange zest then give it a good mix around.
  • Pour in the warm milk mixture and egg, then give it a quick stir.
  • Attach the dough hook to the stand mixer and mix the dough for 6-7 minutes until smooth and elastic looking.
  • Brush a clean bowl with a little oil then place the dough into it. flip it over so that has a coating of oil all over. Cover with plastic wrap and let it sit in a warm place for 1 hour or until doubled in size.
  • Set aside 1 teaspoon of zest for the topping, then add the rest to the sugar. Press together with your fingers to release the oils until fully incorporated.
  • Add the melted butter and stir together.
  • Preheat the oven to 180C / 350F / 160C fan forced and grease a 9x13 inch baking tray with butter.
  • Roll the dough out on a lightly floured surface to a large rectangle, about 12x14 inches.
  • Evenly spread the filling over the dough leaving 1 inch on the longest side uncovered.
  • Roll up from the longest side nearest you towards the other, as tightly as you can into a long log, then cut into 12 even pieces with a sharp knife.
  • Place the rolls evenly spaced onto the baking tray cut side up. Let them rest and rise for another 30 minutes.
  • Bake for 22-24 minutes, turning the tray at the halfway mark, until golden.
  • Mix together the icing sugar, set aside zest and half the orange juice. Slowly add more juice until it gets to the desired consistency, then pour it over the rolls

3 tablespoons sugar
3 tablespoons nonfat dry milk powder
1-1/2 teaspoons salt
ADDITIONAL INGREDIENTS:
1 cup water (70° to 80°)
2 tablespoons butter, softened
1-1/2 teaspoons active dry yeast
Beaten egg white and sesame seeds, optional

Steps:

  • Combine the first four ingredients. Store in a resealable plastic bag. Yield: 1 batch (3-1/3 cups total)., To prepare rolls: Place water in bread machine pan. Add roll mix. Top with butter and yeast. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let stand for 10 minutes. Divide into 12 portions; shape each into a ball. Place on lightly greased baking sheets. Cover and let rise in a warm place for 1 hour. If desired, brush tops with egg white and sprinkle with sesame seeds. Bake at 350° for 12-15 minutes or until lightly browned.

Start with 2 1/2 cups of flour, then add more until the dough cleans the sides of the mixing bowl. (I use a mixer for this part as it makes it just so much easier!) Continue mixing for an additional 3-4 minutes, then cover with plastic wrap and let sit in a warm place for 15 minutes. In cold weather, I like to turn my oven on for about 3 or 4 minutes, then turn it off and let my dough rest in the oven.
