BEAUTIFUL ORANGE PRALINE SWEET POTATOES
These beautiful orange praline sweet potatoes are the perfect Thanksgiving side dish.

Steps:
- Boil a pot of water.
- Add potatoes and cook until tender, 20-30 minutes. You should be able to pierce it with a fork.
- In a mixer or with a hand mixer, beat potatoes until smooth.
- Add orange juice, grated orange zest, Brandy, salt, pepper, 1/4 cup melted butter, 1/3 cup brown sugar and egg yolks. Beat until fluffy.
- Pour into a 12" porcelain quiche dish or shallow pan.
- Combine remaining ingredients (1/4 cup melted butter, 2/3 cup brown sugar, pecans and cinnamon).
- Spread over the potatoes.
- Cover and refrigerate overnight.
- Bake on 350 for 45-50 minutes until brown and bubbly. Let stand for 10-12 minutes.

- Preheat oven to 350 F. Bring a large pot of water to a boil. Add sweet potatoes and cook for 15 minutes until tender.
- Drain and pour potatoes back into pot. Add 1 stick unsalted butter, sugar, eggs, and vanilla extract. Using a potato masher, mash to combine.
- Spray a 9x13-inch baking dish with non-stick cooking spray. Pour sweet potato mixture into baking dish and spread evenly.
- In a medium bowl, add remaining butter, pecans, brown sugar, and flour. Stir to combine.
- Sprinkle mixture on top of sweet potatoes.
- Bake for 50 minutes.
- Let cool, serve, and enjoy.

SWEET POTATO PRALINE SOUFFLE
Steps:
- Bake sweet potatoes in a preheated 350 degree oven for 1 hour until fork tender. Remove peels. In the bowl of an electric mixer, combine potatoes, cane syrup, condensed milk, butter and brown sugar. Add the orange juice, lemon zest and juice. Blend thoroughly with the paddle attachment until smooth. Sprinkle in the cinnamon sugar, nutmeg, raisins and pecans. Finally, remove the bowl from the mixer and add the pralines; fold gently through the mixture.
- Transfer mixture to a 2 1/2 quart flameproof baking dish. Bake in a preheated 350 degree oven for 20 minutes. Top with meringue. Return to oven and broil 7 minutes until the meringue is golden brown.

- Preheat oven to 375°F.
- In a large bowl mash sweet potatoes, add orange juice, orange zest, brandy, salt, ginger, pepper, tbsp of butter and egg.
- Beat with mixer, then spoon potatoes into pie plate, or 10-inch quiche pan.
- In a small sauce pan add 3 tbsp butter, brown sugar, cinnamon. Cook stirring frequently. Spread on potatoes and sprinkle with pecans.
- Can be refrigerated overnight. Do not put pecans on if you do this.
- Bake covered for 15 minutes and uncovered for 15 minutes.

- 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. - 1. Boil sweet potatoes till tender. When cooled enough to handle peel if not already. Then add to a large bowl.
- 2. Add melted butter, & blend into potatoes. Or cut butter into pieces and add while potatoes are still hot.
- 3. Mash potatoes to combine with butter.
- 4. Add eggs and beat or mix till blended.
- 5. Add milk, cinnamon, nutmeg & orange juice, & blend together.
- 6. Combine vanilla bean paste, orange extract together in small cup along with orange zest, then stir to mix, and pour into sweet potato mixture & blend together.
- 7. Beat potatoes with mixer, and remove any strings that wrap around the beaters from the potatoes. See picture. Repeat if needed.
- 8. Add the flour, and beat to blend.
- 9. Spray a 9X13X2 inch casserole dish with non stick cooking spray, and pour in potato mixture, Smooth out top.
- 10. Prepare the topping by combining all of the topping ingredients in a medium size bowl. Then blend together till mixture is combined & crumbly.
- 11. Sprinkle topping over top of potatoes, & bake in a preheated 350 degrees F. oven for about 45 minutes or until potatoes are hot & bubbly. Allow to cool at least about 15 minutes to come together before serving or a bit longer if needed.

- Preheat oven to 350 degrees F.
- Pierce potatoes several times with a fork or icepick and place on a baking pan; bake in preheated oven 1 1/4-1 1/2 hours or until potatoes are tender; set aside until cool.
- In a small pan, heat milk and butter until hot but not boiling; keep warm.
- Cut the potatoes in half and scoop out the insides into a mixing bowl and discard the skins.

- Heat to a simmer and cook, stirring constantly, until mixture is thick, 5-7 minutes (if mixture starts to boil, reduce heat slightly to maintain a simmer).
- Remove from heat and stir in vanilla.
- Pour topping over potatoes in dish, spreading with spatula.
- Bake in preheated oven for 30 minutes, or until slightly crusty and set.
- Serve immediately.

- If using fresh yams, wash well, cut into thirds and place in a large pot of cold water. Bring to boil, reduce to simmer and cook until soft, about 35-40 minutes, fork should go right through. Allow to cool for 10 minutes until you can handle them, then slice through skins and peel back discarding skins. Or save skins for your doggy, they'll thank you!
- While yams are boiling, prepare the rest of your ingredients. Zest orange, set aside. Squeeze orange to yield ⅔ cup (might be necessary to use two oranges, or make up difference with fresh orange juice (not concentrate or the fake stuff, don't do it, don't even be tempted!)
- Add whisky or brandy, set aside. If you prefer not to use in the dish, increase your orange juice by 2.5 Tablespoons. Melt 4 tablespoons of butter, set aside. Measure spices (salt, pepper, ginger) into a small dish, set aside.
- Measure light brown sugar (dark ok), separate egg yolks (reserve) from the whites, throw away (or use in another dish) and set aside.
