My mother always made this apricot Jell-O salad for celebrations. When my husband and I were dating, he fell in love with this dish and, as soon as we were married, asked me to get the recipe. 1 can (8 ounces) unsweetened crushed pineapple
2 packages (3 ounces each) apricot or peach gelatin
1 package (8 ounces) reduced-fat cream cheese
3/4 cup grated carrots
1 carton (8 ounces) frozen fat-free whipped topping, thawed

Steps:

  • Drain pineapple, reserving juice in a 2-cup measuring cup; add enough water to measure 2 cups. Set pineapple aside. Pour juice mixture into a small saucepan. Bring to a boil; remove from heat. Dissolve gelatin in juice mixture. Cool for 10 minutes. , In a large bowl, beat cream cheese until creamy. Gradually add gelatin mixture, beating until smooth. Refrigerate until slightly thickened, 30-40 minutes., Fold in pineapple and carrots, then whipped topping. Transfer to an 8-cup ring mold coated with cooking spray. Refrigerate until set. Unmold onto a serving platter.

Steps:

  • Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in cold water. Refrigerate 45 minutes or until slightly thickened. Remove 1-1/2 cups gelatin; let stand at room temperature.
  • Stir drained fruit into remaining gelatin. Spoon into 6-cup mold sprayed with nonstick cooking spray. Refrigerate 15 minutes or until set not firm.
  • Whisk whipped topping into reserved gelatin until blended. Spoon over gelatin layer in mold. Refrigerate 4 hours or until firm. Unmold.

1 pkg. (8 oz.) PHILADELPHIA Neufchatel Cheese, softened

Steps:

  • Drain pineapple, reserving juice. Add enough cold water to reserved juice to measure 1-1/2 cups. Stir boiling water into dry gelatin in large bowl at least 2 min. until completely dissolved. Stir in measured pineapple juice and water. Remove 1 cup of the gelatin; let stand at room temperature.
  • Stir 1/2 of the crushed pineapple into remaining gelatin. Pour into 6-cup mold sprayed with cooking spray. Refrigerate 2 hours or until set but not firm (gelatin should stick to finger when touched and should mound). 3 medium navel oranges, peeled and cut into segments

  • Drain pineapple, reserving juice; set pineapple aside. Place reserved juice in a small saucepan. Sprinkle with gelatin; let stand for 1 minute or until softened. I was just tickled with this recipe. Many years ago I had a similar recipe that used fresh strawberries and strawberry jello; it was very pretty and very tasty and I was sad when I lost my copy. But I like orange-pineapple even more than strawberries, so this recipe, found in a Jell-O cookbook, is a newfound treasure! Serve as a sweet salad, or a dessert. Perfect for a potluck or bbq.

1 (20 ounce) can crushed pineapple, undrained
cold orange juice, as needed
1 1/2 cups boiling water
1 (6 ounce) package orange gelatin (or 2 3oz pkgs)
1 (8 ounce) package cream cheese, softened

Steps:

  • Drain pineapple well, reserving juice.
  • Place pineapple juice in a 2-cup measuring cup and add enough cold orange juice to make 1 1/2 cups liquid.
  • Place orange jello in a large bowl and add boiling water; stir at least 2 minutes or until jello is completely dissolved.
  • Stir pineapple/orange juice into jello.
  • Reserve one cup of the jello mixture; leave this at room temperature.
  • Stir half of the crushed pineapple into jello mixture in bowl; pour into a 6 cup mold that you've sprayed with nonstick cooking spray (like Pam).
  • Refrigerate mold about two hours, or until set but not firm-- mixture should stick to your finger when touched, and should mound.
  • Place cream cheese into mixing bowl and stir in reserved gelatin (what you've been keeping at room temp); whisk well until smooth.
  • Stir in remaining crushed pineapple; spoon this mixture over gelatin layer in mold.
  • Refrigerate for 4 hours or until firm; unmold and serve.

2 (3 ounce) boxes Jello gelatin, lime (or lemon or equivalent even sugar free)
8 ounces cream cheese
20 ounces crushed pineapple, drain liquid and set aside

Steps:

  • Start jello according to the box.
  • Reduce the 2nd half of the water by the amount of pineapple juice was in the can.
  • Blend all in the food processor.
  • Set in mold.
  • Unmold and plate before serving.
  • Be ready for there to be settling of the ingredients, that's part of the fun.

1 small can of mandarin oranges, drained
1/3 c sugar
1 c boiling water
1 6 oz. box orange gelatin
1 pt sour cream

Steps:

  • 1. Combine sugar and gelatin with hot water, dissolve.
  • 2. Slowly add the sour cream. Stir with spoon then mix on low with mixer.
  • 3. Add 1/2 of the oranges and pineapple. Mix well
  • 4. Pour mixture into mold or bowl.
  • 5. Add the remainig fruit and stir.
  • 6. Refrigerate at least six hours or overnite.
  • 7. Note: I use an imersion blender after stirring in the sour cream and fruit. It makes the mixture lighter and a lighter finished product.
