- In a small saucepan, combine the orange juice, lemon juice, sugar and salt. Warm over medium heat to just below a simmer, stirring occasionally with a wooden spoon to help dissolve the sugar. Once the sugar is dissolved, remove the saucepan from the heat and stir in the liqueur. Set aside to cool completely.
- Pour into an 8-inch baking dish and freeze until completely frozen, at least 4 hours and up to overnight.
- Scrape the surface of the frozen mixture with a fork to form large shards of ice. Spoon about 1/2 cup into coupe glasses and top with prosecco.

CAMPARI ORANGE SPRITZER ( INA GARTEN BACK TO BASICS )
This drink is for a lighter Italian drink to serve at lunch, brunch or anytime you don't want a full cocktail but want some delicious flavors. It comes from Ina Garten's Back To Basics cookbook 2008. This was also on one of her love episodes. It is a lighter version of the evening cocktail she makes with the same liquor Campari. Campari is unique taste and bitter so have some ginger ale in reserve if you have guests with sweet teeth. See my note below. A great brunch would be Recipe #412494 and this. Enjoy! ChefDLH

Steps:
- Juice limes and 6 oranges into a large pitcher. (You should have about ¾ cup lime juice and 1¼ cups orange juice.) Discard lime rinds and half of the orange rinds. Cut remaining orange rinds into quarters and place in a large saucepan.
- Coarsely chop 1 jalapeño and add to orange rinds along with sugar and salt. Using a muddler or dowel-style rolling pin, muddle rinds until thoroughly smooshed and much of the sugar and salt is dissolved, about 3 minutes. Stir in 1 cup warm water and let sit at least 10 minutes and up to 1 hour.
- Strain orange mixture through a fine-mesh sieve into pitcher with juice, gently pressing with a spoon to extract as much liquid as possible; discard solids. Thinly slice remaining orange and add to pitcher. Remove seeds from remaining jalapeño; thinly slice into rounds and add to pitcher.
- To serve, pour 2 oz. juice mixture into an ice-filled glass. Top off with club soda; stir to combine.
- Do Ahead: Juice mixture can be made 2 days ahead. Cover and chill.

- To begin, fill glasses half full of lemon lime soda. Next, slowly add in orange juice until you reach about 2 inches from top of glass. The next step is to slowly add in 1-2 tablespoons of grenadine until liquid level reaches to top of glass. (If you prefer a stronger cherry taste, add in more grenadine).
- ** Tip: The measurements do not have to be exact! Feel free to freestyle pouring in the liquids depending on the taste you are going for. If you want a more orangey drink, use less lemon lime soda. And vice versa. Have fun with it!
