Xec, a Jicama and Citrus Salad, It is a healthy, quick, and easy to prepare the dish, and is a classic side dish during the Day of the Dead. This citrus salad is also sold by street vendors and in local markets, when the fruit is in season.

1 medium-size jicama (About 1 pound)
4 small oranges or (3 medium)
3 mandarins
1 lime
¼ cup orange juice
¼ cup grapefruit juice
1 teaspoon ground Piquin pepper*
1/3 cup cilantro leaves (chopped)
Salt (to season)

Steps:

  • Peel the jicama using a paring knife or by pulling the skins off and placing the knife on the top part of the jicama and pulling down the skins. Remove any excess skin with a potato peeler. Dice the jicama into small bite sizes, place in a large bowl, and squeeze half of the lime juice over it to prevent browning and add flavor. Set aside.
  • Peel the oranges, slice them, and then cut the slices in four. Add them to the jicama.
  • Peel mandarins with your hands, separate into segments. To remove the seeds, cut along the edge of the side column of the segment, as shown in the picture. Once you cut it, the seeds will come out easily. Place all your deseeded mandarin segments in the bowl with the rest of the fruit.
  • Now, in a smaller bowl, mix orange juice, grapefruit juice, the rest of the lime juice, ground pepper, cilantro, and salt. Mix well and pour over fruit. Gently stir everything. You can refrigerate this salad for a couple of hours to allow the flavors to blend, or you can eat it immediately.

2 heads romaine lettuce or 2 heads butter lettuce, tear into long shreds
1/4 large jicama, julienned
4 navel oranges, peeled and sectioned
1 medium red onion, chopped
8 radishes, sliced or cut into flowers
6 tablespoons vegetable oil
2 tablespoons fresh orange juice
1/2 teaspoon chili powder
1 teaspoon white vinegar
1/4 teaspoon salt
fresh ground pepper

Steps:

  • On 8 individual salad plates, arrange a bed of shredded lettuce.
  • Sprinkle the jicama on top.
  • Arrange about 5 orange sections in a flower pattern on top of each.
  • Sprinkle with the chopped red onion.
  • Put a radish in the center of each salad.
  • In a small, tightly lidded jar, combine the oil, orange juice, chili powder, vinegar, salt and pepper.
  • Shake to blend well.
  • Sprinkle about 1 tablespoon over each salad just before serving.

1 jicama (1 1/2 pounds)
2 navel oranges
4 lemon cucumbers
1 snake melon or English (hothouse) cucumber
1 cup nasturtium flowers and leaves
Coarse salt and freshly ground pepper
1/2 cup Creamy Orange Vinaigrette

Steps:

  • Peel jicama; cut into 4-inch batons ( 1/2 inch thick). Let soak in an ice-water bath.
  • Cut peel and pith from oranges; cut flesh into 1/4-inch-thick rounds; quarter rounds. Quarter lemon cucumbers lengthwise. Cut melon into 1/4-inch-thick rounds.
  • Drain jicama; pat dry. Arrange all ingredients on a platter. Season with salt and pepper. Drizzle with vinaigrette.

1 medium jicama, medium
1 medium zucchini, medium
1 medium carrot, medium
1/4 cup red onion
6 tablespoons olive oil
1 1/2 teaspoons raspberry vinegar
1 1/2 teaspoons rice wine vinegar
2 teaspoons honey
1 teaspoon kosher salt
1/8 teaspoon cayenne pepper
1 teaspoon fresh cilantro, fresh, chopped

Steps:

  • Peel, then slice the jicama in half length-wise and cut it into julienne "sticks" 2-inch by 1/8-inch.
  • Split the zucchini in half and cut it into 2-inch by 1/8-inch julienne "sticks".
  • Peel, halve and slice the carrot into 2-inch by 1/8-inch julienne "sticks".
  • Cut the red onion into 1/8-inch half moons.
  • Combine the vegetables into a salad bowl.
  • In a small bowl combine the oil, vinegars, honey, salt , cayenne and cilantro.
  • Add the dressing to the vegetables and toss to mix well.

The marriage of radish and orange punches way above its weight as a salad. This version is based on one James Beard collected. Alice Waters, the founder of Chez Panisse, has a recipe, too. So does Paula Wolfert, who dedicated her nine cookbooks to Mediterranean cuisine. Their inspiration came from countless Moroccans who have this salad in regular rotation, often with orange flower water. This recipe leaves it out, opting for a simpler but still refreshing salad that requires careful, precise preparation of the oranges and the radishes to make it shine. If you like, add a pinch of cinnamon to the dressing or sprinkle a bit on top.

1/3 cup fresh lemon juice (from 2 lemons)
2 tablespoons granulated sugar
Flaky sea salt
4 large oranges (preferably a mix of Cara Cara and navel oranges), peeled, pith completely removed, citrus sliced into rounds, deseeded and chilled, plus fresh orange zest for garnish if desired
1 bunch red radishes, cut into thin matchsticks and chilled

Steps:

  • Combine lemon juice, sugar and ¼ teaspoon salt in a jar. Twist on the lid and shake until the sugar and salt dissolve; chill dressing thoroughly.
  • When ready to serve, simply arrange the orange rounds on a serving dish or individual plates, top with a pretty pile of radish matchsticks and drizzle with the dressing. 1 lime
1/4 cup sour orange juice
1 small cucumber, peeled, seeded and coarsely diced
5 mandarin oranges, peeled, sectioned and seeds removed

3 tablespoons cilantro, chopped

Steps:

  • Peel jicama. The skin of this root vegetable will peel right off after you insert a knife between the skin and the flesh. Remove any traces of brown or remaining skin with a vegetable peeler. To keep the vegetable from discoloring as you work, rub liberally with lime juice. Cut jicama into julienne strips.
  • Toss in a large bowl with the orange juice.
  • Peel cucumber, seed and dice.
  • Meanwhile, peel oranges and separate into sections, removing any seeds.
  • Toss oranges and cucumber with jícama. Add chile and cilantro.
  • Toss and check for seasonings. Refrigerate until ready to serve.

A pinch of paprika or spicy chile powder (ancho or guajillo)
Juice of 1 lime
Salt
2 tablespoons extra-virgin olive oil
1 to 2 tablespoons chopped cilantro

Steps:

  • Peel and cut in half lengthwise: 1 small jicama (about 1/2 pound).
  • Cut into 1/4-inch-thick slices. Cut the slices into 1/4 -inch-wide sticks.
  • Peel with a sharp knife down to the flesh, removing all the rind and membrane: 2 oranges.
  • Slice into 1/4 -inch-thick rounds and remove the seeds. Arrange the jicama and orange slices on a plate. Sprinkle with: A pinch of paprika or spicy chile powder (ancho or guajillo).
  • Make a dressing by whisking together: Juice of 1 lime, Salt, 2 tablespoons extra-virgin olive oil.

1 teaspoon Dijon mustard

4 1/2 lb navel oranges or tangelos (6 medium)
1 medium jicama (1 lb)
1 cup sliced red onion (1/8 inch thick; 1 small)
6 radishes, very thinly sliced (1 cup)
1/3 cup distilled white vinegar

1 cup crumbled pork rinds
1/2 cup chopped salted roasted peanuts

Steps:
