My best sorbet recipe. Sweet, smooth, and very refreshing. This was one of the things my mother frequently asked me to make for her when she was in assisted living. It is the first to go at ice cream socials. Everyone loves it. I serve it with my Recipe #83963. I found this in the newspaper years ago and adapted it to suit my style. For the best dessert ever, serve it in the Recipe #327004. The flavors are wonderful when combined!

Number Of Ingredients 5

1 cup sugar
1 cup water
1 teaspoon orange zest
4 oranges
1 sprig spearmint

Steps:

  • Combine sugar and water in saucepan.
  • Stir and cook over high heat until sugar is dissolved.
  • Boil without stirring for 1 minute.
  • Remove from heat and set aside.
  • Grate the zest and set aside.
  • Squeeze Oranges into 4 cup glass measure (strain, or remove seeds).
  • Stir in sugar syrup and zest.
  • Add water to make 3 1/2 cups total, stirring well.
  • Chill in refrigerator about one hour.
  • Transfer mixture to ice cream maker and proceed according to manufacturer's directions.
  • May serve at once, or place in covered container until desired consistency is reached.
  • Garnish with mint leaves.

3 medium thick skinned oranges
1 1/4 cups sugar
1 tablespoon sugar
2 cups orange juice
1 lemon, juice of
1 orange, zest of
1 paraffin wax, candle (possibly not needed)

Steps:

  • cooking time is freeze time.
  • with a sharp knife slice the top part of the oranges
  • with a spoon scoop out the inside of the orange.
  • if the bottom of the orange shell has a hole then seal it with some melted wax from a candle.
  • set orange shells aside.
  • now mix all ingredients in a saucepan and heat on medium hhigh heat until the mixture boils and sugar is dissolved.
  • put in a cup or bowl and let chill in refrigerator or freezer.
  • put in ice cream can and process as per manufacturer's directions.
  • put sorbet in orange shells mounding slightly and cover with orange caps.
  • place in freezer until firm about 2-3 hours.

2 oranges, peeled, halved
2 tablespoons (20 g) sugar or other sweetener, to taste
4 cups (960 ml) ice cubes

Steps:

  • 1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  • 2. Select Variable 1.
  • 3. Turn machine on and slowly increase speed to Variable 10, then to High.
  • 4. use the tamper to press ingredients into the blades.
  • 5. In about 30-60 seconds, the sound of the motor will change and four mounds should form.
  • 6. Stop machine. Do not over mix or melting will occur. Serve immediately.

HONEY-ORANGE SOUFFLE

Softened unsalted butter, for the dish
6 tablespoons sugar, plus more for the dish
6 ounces cream cheese, at room temperature
6 ounces goat cheese, at room temperature
1/2 teaspoon finely grated orange zest
1/2 teaspoon finely grated lemon zest
1/2 teaspoon vanilla extract
5 large eggs, separated, at room temperature
1/3 cup fresh orange juice
1/3 cup honey
Kosher salt
Segments from 1/2 orange, roughly chopped

Steps:

  • Prepare the souffle: Preheat the oven to 375 degrees F and generously butter a 4-cup souffle dish. Wrap the dish with a buttered parchment collar (see right). Sprinkle the inside with sugar and shake out the excess.
  • Combine the cream cheese, goat cheese, orange and lemon zests and the vanilla in a large bowl. Beat with a mixer on medium-high speed until smooth and fluffy, about 2 minutes. Beat in the egg yolks until incorporated. (At this point, the mixture can be covered and refrigerated up to 6 hours; bring to room temperature before continuing.)
  • When ready to bake, put the egg whites in a large bowl and beat with a mixer on medium speed until foamy. (Make sure the bowl and beaters are clean.) Increase the speed to medium high and gradually add 6 tablespoons sugar; beat until stiff and glossy.
  • Stir one-third of the egg whites into the cheese mixture to lighten it, then gently fold in the rest until just incorporated. (It's OK if a few streaks of egg white remain.) Transfer the mixture to the prepared dish and bake in the center of the oven until puffed and golden, about 35 minutes.
  • Meanwhile, make the compote: Combine the orange juice, honey and a pinch of salt in a small saucepan over medium heat and simmer until slightly thickened, about 4 minutes. Let cool slightly, then add the orange segments. Remove the souffle from the oven and remove the parchment collar. Serve immediately with the compote-the souffle will start sinking after a couple of minutes.

Honey-Orange Syrup Recipe - (4/5) image

1 cup organic honey
Zest of one orange
Juice of one orange
(optional: 1 Tablespoon Grand Marnier)

Steps:

  • Wash an orange and zest completely. Juice the orange. In a small pot, whisk together honey and the freshly squeezed orange juice over medium heat. Continue stirring until mixture comes to a boil and the orange juice is completely incorporated. Remove from heat and stir in orange zest. Allow to cool slightly before serving. Sauce will thicken as it cools. Transfer to a jug for serving or a glass jar for storing.

I made these for a recent "kid's dinner party" that my friends and I do every week and I can't even tell you how hard I laughed when I pulled these sweet potatoes out of the oven and three of the kids simultaneously yelled "cupcakes"! No matter what we said they decided the orange and white "cupcakes" were a holiday treat and scarfed them down. These heavenly treats only take minutes to prepare, and they made quite a visual and edible impact on the kids and adults alike.

2 pounds yams or sweet potatoes (you want to use potatoes that are really orange, also known as yams)
2 tablespoons unsalted butter
1 tablespoon brown sugar or maple syrup
1/2 cup evaporated milk
1/2 teaspoon kosher or sea salt
3 navel oranges
Mini marshmallows, for topping

Steps:

  • Preheat the oven to 400 degrees F. Poke the yams several times with a fork or knife to pierce the skin. Place on foil or a baking sheet in the oven and bake for 1 hour.
  • Let the yams cool for several minutes, then cut in half and scoop out the fluffy insides into a large bowl (I love eating the high fiber skin as a snack). Mash the yams with the butter, brown sugar or maple syrup, evaporated milk and salt until creamy and fluffy.
  • Cut the oranges in half and slice a very thin disk from the bottom so they rest flat; the skins are going to be the "bowls." With a paring knife cut around the inside rim of the orange removing the orange sections and pulp. Place any of the orange juice and pulp in a bowl and discard the white membranes and seeds. Save the juice and pulp for a cranberry sauce recipe or just enjoy as a snack.
  • Fill each orange cup with 1/4 cup of puree and top with several mini marshmallows (you can cover and refrigerate these overnight).
  • Preheat the oven to 350 degrees F. Place the orange cups on a baking sheet and bake until the marshmallows are golden, 20 to 25 minutes (see Cook's Note). Serve.

1 1/4 teaspoons minced fresh orange zest
2 tablespoons Manto (Greek orange herb-flavored liqueur, made by Metaxa)

Steps:

  • In a heavy saucepan combine the honey, the orange juice, the water, and the zest and simmer the mixture, stirring occasionally, for 20 minutes, or until it is reduced to 1 1/3 cups. (If the syrup is reduced too much, it becomes too thick and too sweet.) Stir in the Manto and let the syrup cool. The syrup may be made 1 week in advance and kept, covered, at room temperature.
  • Makes about 1 1/3 cups

Steps:

  • Put the orange juice, star anise and sugar into a pan. Bring to the boil, stirring, until the sugar has dissolved, then remove the star anise. Cool, then pour into an ice-cream machine and churn until smooth and frozen. (If you don't have an ice-cream machine, cool the mixture, then tip into a freezerproof container and freeze until firm, whisking every hour with a fork to break up the ice crystals.)

1 cup sugar
1/2 cup clover honey
2 tablespoons orange peel, finely grated
1 tablespoon fresh ginger, finely chopped
1 star anise, whole
1 cardamom pod
2 cloves
1 bay leaf, small, preferably fresh
2 cups orange juice, fresh squeezed, chilled
3 tablespoons lemon juice, fresh squeezed

Steps:

  • Combine all except the orange and lemon juices in a heavy saucepan and bring to a boil over medium high heat, stirring until the sugar dissolves.
  • Boil until the syrup is thick and reduced to 2 cups, about 12 minutes.
  • Discard bay leaf and cool the syrup.
  • Strain the cool syrup and the orange and lemon juices into your ice cream maker bowl and process according to machine directions.
  • Transfer to a container, cover and freeze until solid, at least six hours.
